Enjoy these meatballs in a wonderfully tangy sauce! Use your favorite flavor of barbecue sauce. When the meatballs are done, you can place them in a slow cooker/server to keep them warm.

2 pounds ground beef
1 ½ cups fresh bread crumbs
¼ cup chopped onion
½ cup milk
1 ½ teaspoons salt
2 eggs
1 (18 ounce) bottle barbecue sauce

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the beef, bread, onion, milk, salt and eggs. Shape into little meatballs, about 1 inch in size. Place the meatballs into a 9x13 inch baking dish.
  • Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes. Pour barbecue sauce over the meatballs and bake for 35 more minutes.

1/2 cup milk
1 cup crushed saltine
1 chopped onion
1 tablespoon Worcestershire sauce
3 tablespoons sugar

  • Mix first 4 ingredients and form into balls.
  • Brown in pan on top of stove.
  • Turn to brown.
  • Combine sauce ingredients and pour over browned meat balls.
  • Simmer 45 minutes on top of stove.

This is from the November/December issue of Quick Cooking and my husband, who is not usually a meatball fan, absolutely loves these. I've made them more times than I can count for our family and for guests.

1 egg, lightly beaten
1 (5 ounce) can evaporated milk
1 cup quick-cooking oats
1/2 cup finely chopped onion
1 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 1/2 lbs ground beef
1 cup ketchup
3/4 cup packed brown sugar
1/4 cup chopped onion
1/2 teaspoon liquid smoke (optional)
1/4 teaspoon garlic powder

Steps:

  • In a bowl, combine the first eight ingredients.
  • Crumble beef over mixture and mix well.
  • Shape into 1" balls.
  • Place in a greased 13" X 9" X 2" baking dish.
  • Bake, uncovered, at 350 for 18 - 20 minutes or until meat is no longer pink.
  • Meanwhile, combine the sauce ingredients in a saucepan. Bring to a boil.
  • Reduce heat and simmer for 2 minutes, stirring frequently.
  • Pour over meatballs.
  • Bake 10 - 12 minutes longer.

My husband overwhelmingly prefers my cooking to his Mother's, but this is one recipe I got from her that is still a big favorite for both him and our son. I adjusted the amounts a bit to make a bit more sauce, but it's basically her original recipe. It's on the sweet side, but you can adjust flavorings to suit your family's tastes. I sometimes add a bit of crushed red pepper to add some kick. Don't let the amount of ketchup scare you! It does not taste ketchupy - just rich and flavorful. The meatballs still taste good even if you want to stretch them by adding a bit more oats or bread. Note: In response to reviews, I have posted an alternative method of browning the meatballs in the oven.

2 tablespoons onions, chopped
1 egg
2 slices bread, cubed
1/3 cup oatmeal
2/3 cup milk
salt and pepper

2 teaspoons mustard (I prefer spicy brown or dijon)
3/4 cup water

Steps:

  • Meatballs:.
  • Mix ground beef, onion, egg, bread, oatmeal, milk, salt and pepper in a large bowl.
  • Roll into balls.
  • Brown meatballs in a skillet; these are very moist meatballs, making them a bit tricky to brown in a skillet. I usually just push them around a bit and don't brown completely.
  • Alternatively, meatballs could be browned briefly in the oven in a nonstick pan at 400 degrees Fahrenheit for about 10 minutes. Tthey don't need to be cooked through since they will be cooked in the sauce. I've never done it this way, so just watch them so they just brown rather than cook all the way and get dried out.
  • Place browned meatballs in baking dish.
  • Sauce:.
  • Mix ketchup, brown sugar, soy sauce, mustard, water together.
  • Pour sauce over meatballs.
  • Bake uncovered at 350 degrees Fahrenheit until meatballs are cooked through, about 30 minutes.
  • Serve over rice.

I make this using Recipe #196018. This is one of my family's favorites...even my husband's family (mother-in-law and her friends, sister-in-law, brother-in-laws, etc.) All seem to like these. I like to serve them with my Crab Wontons as an appetizer when serving to guests. ;) They go great in a crockpot for parties, bbq's, potlucks, etc. and I am usually requested to bring them!! Amounts can vary depending on number of meatballs you make. ;) ****You can add green pepper, red pepper and additional pineapple if you want more veggies - I usually don't unless I need to stretch it!

2 -3 lbs meatballs (I use Chelle's Famous Turkey Meatballs)
3 (16 ounce) cans sweet and sour sauce, Contadina brand
2 (8 ounce) cans sliced water chestnuts (SunLuck is good)
1/2 cup white wine (optional)
1 (15 ounce) can baby corn, approx. size
1 green pepper, chopped in big chunks (optional)
1 red pepper, chopped in big chunks (optional)
1 (5 ounce) can chunk pineapple (optional)

Steps:

  • Combine red and green pepper, if desired, in pan and cook for 3-4 minutes or until tender.
  • Add meatballs (precooked, see recipe #196018), sauce, and all canned veggies to a large pot or in crockpot.
  • Cook on medium high heat for 30 minutes stirring often, (high crockpot) or until meatballs have warmed through.
  • Serve over steamed brown rice.
  • Enjoy!

1 1/2 lbs ground beef or 1 1/2 lbs ground deer meat
1/2 lb ground sausage
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon chili powder
1 small chopped onion
6 saltine crackers, crushed
1 egg, beaten
2 teaspoons cornstarch (or more if needed)
4 cups tomato juice

Steps:

  • Mix the ground beef, sasuage, salt, pepper, chili powder, onion, crackers, 1 beaten egg and 1 cup tomato juice.
  • Shape into balls about the size of walnuts and bake at 350 about 30 minutes, turn and bake about 20 more minutes.
  • You can drain the drippings off or leave them, sometimes I leave them if there is not too much grease.
  • Mix remaining juice, cornstarch, a little chile powder and some of the dripping from the pan, I warm the sauce up in the microwave just a little before putting in the hot pan.
  • Put back in the oven till juice thickens or is good and bubbly.

Baked Chicken Meatballs with Tangy BBQ Sauce
1 pound ground chicken, 98% fat-free
3/4 cup Italian-seasoned breadcrumbs
1 large egg, beaten
1/4 medium red onion
1/4 cup shredded carrot
1/2 medium red pepper, seeded
1/4 cup Italian flat-leaf parsley
2 cloves garlic
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
2 cups ketchup
1 cup beef broth
1/4 cup reduced-sodium soy sauce
2 Tbsp Worcestershire sauce
2 Tbsp brown sugar
1 Tbsp liquid smoke

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or Silpat mat.
  • Combine ground chicken, breadcrumbs and egg in a medium bowl. Set aside.
  • Combine red onion, carrot, red pepper, parsley and garlic in container of food processor fitted with a metal blade. Cover and pulse until finely chopped. Add to ground chicken along with salt and pepper. Lightly mix together with your hands. Do not over-mix as this will produce tough meatballs.
  • Use your hands to roll out 12-14 golf ball sized meatballs and spread them out on the prepared baking sheet. Bake for 15 minutes, or until meatballs are cooked through.
  • For the Tangy BBQ Sauce: Combine all ingredients in a large skillet, stirring to combine. Heat over medium-high heat until hot and bubbly.
  • When meatballs are baked, remove from baking sheet and add to the BBQ sauce, rolling each ball to coat evenly. Serve immediately or store in an airtight container for up to a week. Also can freeze for up to 2 to 3 months.
