It was delicious and left me wanting more. Traditional tamagoyaki is not as flat and uses several eggs, but this is great when you just want a little snack or for breakfast. Kids with a sweet tooth will love it.

1 tablespoon water
1 teaspoon soy sauce, or to taste
½ teaspoon white sugar
1 egg

Steps:

  • Mix water, soy sauce, and sugar together in a small bowl until sugar is dissolved. Add egg and beat until egg mixture is combined.
  • Heat skillet over medium heat until a drop of water evaporates almost immediately. Pour egg mixture into pan. Cook until the bottom of the omelet has solidified, 3 to 5 minutes. Flip and fold omelet into a square and transfer to a plate.

Japanese-Style Omelet with Ham and Cheese image

Inspired by tamagoyaki, a sweet yet savory Japanese rolled omelet, this version omits the hint of sugar but is rolled in the typical fashion. Tamagoyaki doesn't usually feature add-ins, but as with any omelet, this style can be filled with a wide range of ingredients, including the ham and cheese used here.

3 large eggs
1 tablespoon milk
Kosher salt
1 thin slice ham, finely chopped
1/4 cup shredded Gruyere or Cheddar
About 1 tablespoon vegetable oil
2 teaspoons finely chopped fresh chives

Steps:

  • Beat the eggs with the milk and 1/4 teaspoon salt in a small bowl. Stir the ham and cheese together in another small bowl.
  • Heat a Japanese rectangular omelet pan over medium heat until hot. Brush with little bit of oil. Add just enough of the egg mixture to coat the bottom of the pan when tilted. Let the egg cook until just set on the bottom, then use chopsticks or a rubber spatula to roll the sheet of egg into a log shape and push it to the far end of the pan. Brush the pan with more oil and again add just enough egg to coat the bottom when tilted, this time lifting up the rolled egg so that the raw egg flows underneath it. (If the egg is browning or setting too quickly, control the heat by lifting the pan off the burner for a moment.) When the underside is just set, roll the log towards the handle of the pan, then push the log back to the far end. Repeat; when you have made 3 layers, make another layer in the same manner and add half the ham and cheese. Make another layer, using the rest of the ham and cheese. Finish making the omelet in the same manner with the remaining egg.
  • Turn the omelet out onto a plate, sprinkle with chives and serve.

1/4 teaspoon baking powder
Large pinch kosher salt
1 tablespoon unsalted butter
For serving: breakfast meat platter (cooked breakfast sausage and strips of bacon), fried rice, spaghetti carbonara or cooked tater tots

Steps:

  • Whisk the eggs, baking powder and salt in a medium bowl until the yolks and whites are completely combined and the beaten eggs are frothy, about 2 minutes.
  • Melt the butter in a small nonstick skillet over medium-low heat. Once the butter begins to foam, add the beaten eggs and immediately begin stirring with long chopsticks. Move the skillet on and off the heat in 5-second intervals to control the setting of the eggs. If your omelet is setting too quickly, reduce the heat to low. Push the edges of the omelet toward the center of the skillet as they begin to set, about 2 minutes. Large curds will form in the middle of the skillet. At this point, stop stirring with the chopsticks and swirl the skillet until the liquid is nearly completely set, about 3 minutes more. Remove the skillet from the heat. Use the chopsticks to gently loosen the edges of the omelet. Fold the omelet into a half-moon shape using both chopsticks. Return the skillet to low heat, tilting it at a 45-degree angle to allow any loose egg mixture to run to the edges and soft set, about 1 minute. Remove the skillet from the heat.
  • Quickly roll the omelet away from you in the skillet until a log forms. Tilt the skillet and push the omelet out of it, landing it seam-side down over your cooked dish of choice. Make a lengthwise slice in the top of the omelet to reveal the soft-set curds.

Tamago is Japanese for "egg". Tamago yaki is sushi using an egg, like a sushi omelette. I really love it for it's sweet taste and light texture. You need a tamago pan to make this recipe. Any type of stock can be used in place of the dashi for a less fishy taste. Sounds complicated, but after a bit of practice, it gets much easier.

4 large eggs
4 tablespoons dashi stock
1 tablespoon sugar
1 teaspoon mirin
1/2 teaspoon soy sauce
salt

Steps:

  • Beat the eggs VERY well, being sure to get them as smooth as possible.
  • Pour about 1/4 of the mixture into a well-oiled tamago pan and spread as if you are making a crepe.
  • As the mixture cooks, bubbles and sets, roll it and move it to the back of the pan.
  • Add more oil to the pan and some more of the mixture, making sure to get some under the roll.
  • As it cooks, roll the old roll back to the front of the pan, then again to the back.
  • Repeat until you are out of mixture.
  • Remove roll from the pan and roll as you would a sushi roll, squeezinng out excess liquid.
  • You can roll it into either a round or rectangular shape and slice it when it has cooled.
  • Can be served as is, or as nigiri, atop a mound of rice wrapped in a thin sheet of nori.

⅛ teaspoon salt
¼ teaspoon soy sauce
½ tablespoon sugar
¼ cup water
2 eggs
oil, for brushing

Steps:

  • In a small bowl, combine the dashi, salt, soy sauce, sugar, and water. Mix until everything is dissolved.
  • In a medium bowl, beat the eggs and add the seasoning mixture. Mix until well-combined.
  • Heat a tamagoyaki pan over medium-high heat. Brush a thin layer of oil on the pan.
  • Pour a third of the egg mixture into pan and quickly swirl to cover the entire pan. When the egg is half-set, gently roll the egg.
  • With the rolled egg still in the pan, pour in another third of the egg mixture. Lift up the rolled egg and let the mixture to flow under it. When the egg is half-set, roll the omelette toward you. Repeat with the rest of the egg mixture.
  • Slice into bite-sized pieces.
  • Enjoy!

  • Pour some of the egg mixture in the pan, just as you would for a crepe. Cook it over low heat. When it is almost entirely set but still a little moist on top, roll it up. Make the first fold about an inch from the edge, so that you end up with an oblong (as opposed to round) roll. Move the first omelet roll to the side of the pan or remove to a plate, and pour more of the egg mixture into the pan. Cook as with the first, then roll the second omelet, making sure that it is still slightly moist, and position it next to the first. The moisture helps each added roll stick to the previous one; the heat from all of the rolls cooks the omelets all the way through.
  • Continue with the remaining egg mixture. Cool the omelets to room temperature and slice into ½-inch to 1-inch pieces.
