CHEESY SAUSAGE AND SAGE STUFFING
This holiday-worthy recipe was inspired by bread pudding and ended up somewhere between a strata, a gratin, and a traditional Thanksgiving stuffing.

Steps:
- Preheat oven to 300°F. Butter a shallow 13x9" baking dish and a large piece of foil. Place 9 cups bread in a large bowl.
- Heat oil in a large skillet over medium-high. Cook sausage, stirring occasionally and breaking into small pieces with a wooden spoon, until browned and cooked through, 7-10 minutes. Transfer to bowl with bread.
- Place onions, celery, sage, and 2 Tbsp. butter in same skillet; season with salt and pepper. Cook, stirring often, until onions are golden brown and soft, 10-12 minutes. Add wine and cook, stirring occasionally, until almost completely evaporated, about 5 minutes; scrape into bowl with bread and sausage.
- Whisk eggs and broth in a medium bowl until smooth, then pour over bread mixture. Pour in half-and-half and add 3 cups cheese; toss to combine. Season with salt and pepper. Transfer to prepared baking dish and cover with foil, buttered side down. Bake until a paring knife inserted into the center comes out hot, 40-50 minutes .
- Heat broiler. Uncover stuffing and top with remaining cheese. Broil until top is golden and bubbling, about 4 minutes. Let sit at least 10 minutes and up to 30 before serving.
- Do Ahead
- Stuffing can be assembled 1 day ahead; cover with foil and chill. Stuffing can be baked (but not broiled) 3 hours ahead. Store tightly wrapped at room temperature until ready to broil.
SAGE SAUSAGE STUFFING
Delicious is the word for this stuffing. I made this for Thanksgiving and everyone loved it. Also good with pork! I use 1/2 each of the stuffing bags and mix the two. Double the recipe and use both bags. You'll need a larger pan to mix the ingredients.

- Preheat oven to 375 degrees.
- Saute pork in a large non stick skillet. (no oil needed). Remove pork with a slotted spoon, set aside. Drain oil but do not wipe out pan.
- Add 1/4 cup butter to hot pan, add sage, onions and celery. Saute on medium heat for a couple of minutes. Add cranberries and apples, cover and steam saute for a couple of minutes.
- Add remaining butter, sausage, pecans and stuffing mix. Lower heat and stir to incorporate all ingredients then add chicken broth - 2 cups at first and if not moist enough add more, but not mushy. Let this sit for a couple of minutes on the burner to heat everything.
- This can be made ahead, refrigerated and brought to room temperature before baking.
- Bake for 20-30 minutes in a greased casserole, uncovered, middle rack.
- Cooking time includes cooking on stove and in oven.

MOM'S SAUSAGE AND CORNBREAD DRESSING
My mom passed this recipe down to me before she passed away. I have had this dressing since I was a child, and to me it is the best I have ever tasted. This recipe is not a quick side dish, it needs time and work for prep and cooking, but is very worth it.

Steps:
- Bring water to a boil in a saucepan. Add giblets and boil for 10 to 15 minutes. Remove and discard giblets, reserving water.
- Preheat the oven to 400 degrees F (200 degrees C). Grease an 8-inch square baking pan.
- Mix corn muffin mix, milk, egg, and shortening together in a bowl. Pour into the prepared baking pan.
- Bake in the preheated oven until golden brown, 15 to 20 minutes. Set aside to cool.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Add celery, onion, and hot peppers and continue cooking 3 to 5 minutes more. Drain and discard grease. Transfer sausage mixture to a large mixing bowl.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole pan.
- Add giblet water, turkey broth, bread crumbs, cornbread, remaining eggs, sage, salt, and black pepper to the sausage mixture in the mixing bowl. Mix together well and transfer to the prepared casserole pan.
- Bake in the preheated oven until slightly brown on top with darker brown edges, about 45 minutes, checking often. Let cool 10 to 15 minutes before serving.

- Preheat the oven to 275 degrees F (135 degrees C).
- Dice bread into 3/4-inch cubes; spread into an even layer on a rimmed baking sheet.
- Bake in the preheated oven, stirring several times, until toasted, about 45 minutes. Keep oven on.
- Meanwhile, melt butter in a large Dutch oven over medium-high heat until foaming, about 2 minutes; do not allow butter to burn. Add Italian and andouille sausages. Cook, breaking sausages up into fine pieces, until just a few bits of pink remain, about 8 minutes.

- Preheat oven to 275° F. Spread the Italian loaf of bread evenly on a rimmed baking sheet. Bake for 45 minutes, stirring the bread cubes several times during baking.
- In a large Dutch oven, melt the butter over medium high heat until foaming, but do not allow the butter to brown, about 2 minutes. Add the sausages and cook until just a few bits of pink remain, about 8 minutes, breaking it up into fine pieces while cooking. Add the onion, celery, garlic, sage, rosemary, thyme, poultry seasoning, salt and pepper. Stir frequently until vegetables are softened, about 7 minutes. Remove from heat and add 2 cups of chicken stock, orange zest and orange juice.
- Whisk remaining chicken stock, eggs and parsley in medium bowl until combined. Stirring constantly, slowly add the sausage mixture into the egg mixture. Gently fold in the Italian bread cubes, Stuffing mix, and dried cranberries until evenly mixed.

SAGE & SAUSAGE STUFFING
Mother-in-law made this for our Thanksgiving weekend wedding rehearsal, back in 1978. It has been a part of our holiday menu every year since then---with a few additions, substitutions and tweaking over the years. Try some of the optional ingredients, too!

- Saute meats in large frying pan. While that is cooking, cube the bread (leave the crusts on).
- Dump bread cubes into a large bowl. When meat is cooked through, dump into a colander to rinse and drain; then add to the bread cubes, toss lightly.
- In same frying pan, add a dab of butter and saute the mushrooms. When they begin to get limp and juicy, dump into bowl with meat-bread mixture. Toss lightly.
- In frying pan, with another dab of butter, saute onion and celery. When onion is transparent either dump into bowl and toss OR dump into blender jar along with 1/4-1/2 cup melted butter and swirl into fine-ness. (This is for the kids who don't like to see chunks of "yukkies" as my son complains!), THEN pour over bread cube mixture and mix inches.
- Sprinkle herbs over the top, and toss again.
- Depending on how "juicy" you like your stuffing/dressing, melt another 1/2 cup of butter and drizzle over and stir.
- This is used for stuffing turkey, goose or chicken.
- Dressing can be baked in a greased, covered casserole dish at 325-350°F for 30-40 minutes.
- OPTIONAL ADD-INs: Try one or two of the following suggestions: 1-2 small cans sliced (minced) water chestnuts, 1/2 - 1 cup green olives, 1 cup chopped toasted nuts (walnuts are great!). Try a 1/4-1/2 cup cornmeal for an entirely different flavor.
- SUBSTITUTE: 1-2 small cans of drained mushroom stems and pieces instead of the fresh ones. Other herbs and LOTS of pepper are great too. Try a combination of wholewheat and white bread.
- LEFTOVERS: Reheat in the oven or microwave; keep pan covered unless you like it a bit drier. Use as a bread-like crust for Turkey Divan (with broccoli spears, turkey pieces, grated cheese and cream-of-mushroom soup over the top--baked).

MOM'S SAUSAGE STUFFING
To make the original recipe created by my mom, you will: 1. Dry the bread crumbs ahead of time. ( I do this 3-4 days prior to making the stuffing) You can also purchase unseasoned, pre-dried bread crumbs. Either way is good. 2. Make home made giblet water by simmering the giblets in water prior to making stuffing. If that doesn't sound appealing, use unsalted bone broth, or other unseasoned broth. Pay attention to the added salt in purchased broth. It can get salty very fast! 3. I am allergic to onions and have not used them in this recipe for over 20 years, so please use the amount that is good for your family. 4. Add salt and pepper to taste and 1/2 poultry seasoning to milk mixture. Recipe would not accept this information.

- If using giblets to create your own broth, simmer in a medium pan with at least 2 cups of water for 1 1/2 hours prior to making this stuffing. If using bone broth or other broth, prepare and set aside.
- Saute sausage in a medium skillet until brown. When the sausage is browned, add 3 tablespoons butter, diced celery and onion, (if you are using) and saute it all together on low until vegetables are soft. In a bowl, mix 2 eggs and at least one cup of the liquid (milk and giblet water), add salt, pepper and poultry seasoning, mix well and set aside. In a large roaster or large bowl, place the breadcrumbs and pour the sausage mixture over the top. Pour the egg/liquid ingredients over that and begin mixing. I usually put a plastic glove on and use my hands! Mix until moist. You will most likely need to add more giblet water/broth to make it moist. Prepare the turkey for baking, according to directions on the package. Place enough stuffing to fill the turkey cavity 2/3 full. Follow the directions on the package to roast the turkey according to weight and oven temperature with stuffing. The internal temperature of the stuffing should be 165* when done.
- The stuffing can be baked separately in a crockpot by using a liner, cooking on low, check temperature at 45 minutes.
- Oven baked: Line a 9x9 pan ( or similar) with parchment paper, foil or baking bag and grease it thoroughly before adding stuffing. It will stick and you will never get it out of the pan if you do not follow this step! Bake at 350* for 30 minutes and check for internal temperature of 165* adjust time accordingly until fully cooked. Watch it so that it does not burn.

- Heat oven to 375 degrees. Butter a 9-by-13-inch baking dish; set aside. In a large bowl, combine cornbread and rice, and set aside. In a large skillet, melt 5 tablespoons butter over medium-high heat. Add carrots, and saute until they begin to soften, about 2 minutes. Add onion and celery, and saute until onions are translucent, 8 to 10 minutes. Add green pepper, and saute 1 minute. Combine vegetables and cornbread mixture.
- In same skillet, saute sausage over medium heat, stirring frequently with a wooden spoon to break up large pieces, until browned and cooked through, about 8 minutes. Remove sausage with slotted spoon; mix with cornbread mixture, along with poultry seasoning, sage, salt, and pepper. Discard rendered fat from skillet. Add stock, 1 cup at a time; mix. (You may not need all stock.) Stuffing should be well moistened.
- Squeeze garlic from skins; mix gently into cornbread mixture; keep them whole. Season with salt and pepper. Transfer to prepared baking dish. Melt remaining 4 tablespoons butter; drizzle over top of stuffing. Bake until top is golden and stuffing is heated through, 45 to 50 minutes. To reheat, bring to room temperature, and cover; bake at 350 degrees for 20 minutes. Remove cover; bake until heated through, about 10 minutes more.
