ITALIAN CLUB SANDWICHES

Italian Club Sandwiches image

Provided by Giada De Laurentiis

Time 26m

Yield 4 sandwiches

Number Of Ingredients 12

1 tablespoon olive oil
4 ounces thinly sliced pancetta, diced
6 large eggs, at room temperature
1/4 cup whipping cream
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup mayonnaise
1/4 cup chopped fresh chives
8 (1/2-inch-thick) slices rosemary-olive bread
2 cups arugula
4 slices provolone cheese
8 slices tomato, about 2 medium tomatoes

Steps:

  • Frittata: In a nonstick 10-inch skillet, heat the oil over medium heat. Add the pancetta and cook, stirring frequently, until golden brown and crispy, about 6 to 8 minutes.
  • While the pancetta is cooking, in a medium bowl, whisk together the eggs, whipping cream, salt and pepper. Pour the egg mixture over the cooked pancetta and stir once to incorporate. Cook the egg mixture, without stirring, until the eggs are almost set and the bottom is golden brown, about 5 to 6 minutes. Slide the frittata onto a dinner plate and invert back into the skillet until cooked through, about 3 to 4 minutes longer. Transfer the frittata to a cutting board and cut into 4 wedges.
  • Mayonnaise: In a small bowl, combine the mayonnaise and chives until smooth.
  • To assemble the sandwiches: Divide the mayonnaise mixture and spread it evenly over 1 side of each bread slice. Arrange the arugula, a slice of cheese and 2 tomato slices on 4 of the bread slices. Lay the frittata wedges on top of the tomatoes. Cover with the remaining bread slices and serve.

Giardiniera is an Italian relish of pickled vegetables; in the US, it is very popular in Chicago. Ree's recipe here is a quick version which she serves on sandwiches.

Provided by Ree Drummond Bio & Top Recipes

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 17

1/2 cup shredded carrots
1/2 cup sliced pepperoncini
1/4 cup sliced pickled jalapeños
1/4 cup sliced roasted red peppers
1 tablespoon olive oil
1 tablespoon pepperoncini liquid
1/2 teaspoon garlic powder
Freshly ground black pepper
2 pounds sirloin steak, trimmed of excess fat and frozen for 10 to 15 minutes
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 teaspoons Italian seasoning
2 garlic cloves, minced
1 1/2 cups low-sodium beef broth
1 1/2 tablespoons balsamic vinegar
4 hero rolls, split
12 slices provolone

Steps:

  • For the giardiniera: Combine the carrots, pepperoncini, jalapeños, roasted red peppers, olive oil, pepperoncini liquid, garlic powder and pepper in a bowl. Toss well, then set aside.
  • For the beef: Remove the sirloin from the freezer and, using a mandoline or a sharp knife, cut into very thin strips against the grain. Sprinkle the meat with salt and pepper.
  • Heat the olive oil over medium-high heat in a large saute pan. Add the beef and sauté until starting to brown, but still pink, about 2 minutes. Add the Italian seasoning and garlic, then cook for 30 seconds. Add the broth and vinegar, then bring to a simmer. Remove from the heat.
  • Place 3 slices of provolone on each roll. Top with the hot beef. Sprinkle with some of the giardiniera. Serve with extra broth on the side for dipping.

ITALIAN COUNTRY SANDWICH

Italian Country Sandwich image

This recipe is from Kathleen Cannata Hanna's cookbook, "The Good-to-Go Cookbook: Take-Along Food, Quick Suppers, and Satisfying Snacks for On-the-Go Families". The author's goal is to help parents walk the very fine line of nutritiom, economy and readily available ingredients when trying to feed the family. This recipe, published in the Chicago Tribune, is her family's favorite and is very flexible: you can wrap it in foil and put it in the oven, you can cook it on the stove, bring it camping, cook it on the grill, make it in the microwave.

Provided by duonyte

Categories     Lunch/Snacks

Time 35m

Yield 4-6 serving(s)

Number Of Ingredients 8

2 precooked prepared pizza crust, 8 inches across
4 ounces cream cheese
4 thin slices tomatoes
4 thin slices green bell peppers
4 thin slices pastrami
4 thin slices salami
2 thin slices red onions
4 slices provolone cheese

Steps:

  • Take one of the the pizza crusts and spread it with the cream cheese.
  • Layer with all the remaining ingredients.
  • Top with the other crust; wrap in foil, and set on a baking sheet.
  • Bake 25 minutes at 350 degrees. Cut into wedges.
  • Note: The recipe does not call for it, but for "older" palates, I would add some oregano, crushed red pepper, perhaps some other things.

COUNTY FAIR ITALIAN SAUSAGE SANDWICHES

County Fair Italian Sausage Sandwiches image

The only difference between mine and the ones you get at the county fair is that mine are much better -- more TLC! This has become my favorite sandwich over the years and when I serve them at cookouts along with other items (brats, burgers, dogs, etc.) these are ALWAYS the first to go. The recipe is primarily set up as an outdoor cooking technique but they are easy enough to do on the stovetop, except you don't get that great smoke flavor. I prefer to do mine over a campfire of hot coals in an all-steel wok but a charcoal or gas grill and pan will do just as well. If you're using a gas grill, toss a few wet wood chips on the lava rock to make some good smoke. Bon Appétit!

Provided by Bone Man

Categories     One Dish Meal

Time 35m

Yield 6 serving(s)

Number Of Ingredients 8

6 Italian sausages
6 buns, bratwurst-type
1 green bell pepper, trimmed and de-seeded, cut into chunks
1 red bell pepper, trimmed and de-seeded, cut into chunks (or yellow)
2 fresh jalapeno peppers, de-seeded and chopped
2 medium sweet onions, peeled and cut into chunks
4 tablespoons olive oil
32 ounces beer, divided (not "lite")

Steps:

  • Parboil the sausages in 24 ounces of the beer for 10 minutes, then drain and discard the beer. Place the sausages aside in tinfoil or in a covered bowl where they'll stay warm.
  • Place a wok or pan over high heat and after it has heated, pour in the olive oil. Before the olive oil smokes, dump in all the peppers and onions. Toss and stir them with some frequency and when you see the first indication of any browning, add in the sausages.
  • When the sausages have browned a bit, pour in the reserved 8 ounces of beer and stir.
  • When the beer has pretty much evaporated, serve the sausages, peppers and onions on pre-warmed (or steamed) buns. The buns are easily steamed at home by placing them in a gallon-sized zip-lock bag, flipping in about a tablespoon of water with your fingers and microwave the nearly-closed bag for about 15-20 seconds on the defrost mode -- don't do them on HIGH or they'll get rubbery!
