These golden cloverleaf dinner rolls were one of my mother's specialties. We always looked forward to them on holidays and special occasions. -Patricia Baxter, Great Bend, Kansas

Number Of Ingredients 8

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1-1/2 cups warm 2% milk (110° to 115°)
1/3 cup sugar
1/3 cup shortening
1 large egg, room temperature
2 teaspoons salt
7 to 8 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, egg, salt and 3 cups flour. Beat on medium speed until mixture has a spongy texture. Let stand for 10 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into 3 portions. Let rest for 5 minutes. Divide each portion into 36 pieces. Shape each piece into a ball; place 3 balls in each greased muffin cup., Cover and let rise until almost doubled, about 30 minutes. Bake at 375° until golden brown, 12-15 minutes. Remove from pans to wire racks. Serve warm.

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1 cup boiling water
1 cup shortening
3/4 cup sugar
1 teaspoon salt
2 large eggs, lightly beaten
7-1/2 to 8 cups all-purpose flour

Steps:

  • In a small bowl, dissolve yeast in warm water. Meanwhile, in a large bowl, combine the boiling water, shortening, sugar and salt. Allow to stand 3 to 4 minutes or until shortening is melted and sugar is dissolved. Add the yeast mixture and eggs and mix well. Add 2 cups of flour; beat until smooth. Add enough remaining flour to form a soft dough (do not knead). , Place in a greased bowl, turning once to grease top. Cover and refrigerate overnight. Turn dough onto a floured surface. Form a 2-1/2-in. ball. Roll into a 5-in. rope; shape into a knot. Repeat with remaining dough. , Place on a greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. 1 cup whole milk
½ cup warm water
¼ cup unsalted butter, melted
¼ cup sugar
2 ¼ teaspoons active dry yeast, 1 packet
4 cups all-purpose flour, plus more for dusting
1 ½ teaspoons kosher salt
2 large eggs, room temperature
neutral oil, for greasing
sea salt, for sprinkling

Steps:

  • In a liquid measuring cup or small bowl, combine the warm milk, warm water, melted butter, and sugar.
  • Sprinkle the yeast evenly over the wet ingredients, stir to combine, and let stand for 5 minutes, until foamy
  • In a large bowl, combine the flour and salt, and stir to combine. Beat 1 egg, then add to the bloomed yeast mixture. Pour the wet ingredients into the flour and use a knife to stir until the mixture just comes together and forms a dough. Turn the dough out onto a lightly floured surface and knead for 5-10 minutes, or until the dough becomes smooth. Add more flour as needed to keep the dough from sticking. To test if it's done, tear off a small piece of dough and stretch into a thin layer. If the dough doesn't rip, it's ready. Or, press a finger into the dough to see if it bounces back.
  • Lightly grease a large glass bowl with oil. Add the dough, cover with plastic wrap, and let rest for 1 hour, or until doubled in size.
  • Punch down the dough, then turn out onto a floured surface. Knead for a few more minutes, just until the dough is smooth, about 2 minutes.
  • Divide the dough into 16 equal balls, roughly the size of tangerines.
  • Knead the balls, gathering the edges of the dough toward the center to make a taut, round ball with a smooth top.
  • Place the rolls on a parchment paper-lined baking sheet. Cover with plastic wrap and let rise for 30 minutes.
  • Preheat the oven to 375˚F (190˚C).
  • Beat the remaining egg in a small bowl. Uncover the rolls and brush with the egg wash. Lightly sprinkle the rolls with sea salt.

2 1/4 teaspoons salt
3 large eggs
6 to 6 1/2 cups all-purpose flour (spooned and leveled), plus more for work surface

Steps:

  • Place water in a small bowl; sprinkle with yeast, and let stand until foamy, about 5 minutes. In a large bowl, whisk together milk, butter, sugar, salt, and 2 eggs. Whisk in yeast mixture.
  • Using a wooden spoon, stir in 6 cups flour, 1 cup at a time, until you have a soft, shaggy dough (if necessary, add up to 1/2 cup more flour). 1/4 cup finely chopped onion
4 garlic cloves, minced
1/4 cup butter, cubed
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon each dried marjoram, parsley flakes and tarragon
1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1 teaspoon sugar
1 teaspoon salt
2 cups all-purpose flour
1 egg, lightly beaten

Steps:

  • In a small skillet, saute onion and garlic in butter until tender. Stir in herbs; cool. In a food processor, dissolve yeast in warm water. Add the sugar, salt and onion mixture. Add flour; cover and process until dough forms a smooth ball. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; divide into 24 pieces. Shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , Brush with egg. Bake at 350° for 20-25 minutes or until golden brown. My mom made these rolls for every occasion I can remember. They are originally in a little cookbook by Beverly Nye from Cleveland, Ohio. They are practically no fail, since there is no kneading involved. They are always light, tender, and delicious, and so popular that I usually plan on at least two per person rather than the one indicated here. They are also really convenient since you make the dough the night before and refrigerate it for the first rise. The times indicated do not include refrigerating overnight or the 2 hours they take to raise before baking. (P.S. Thanks for the photo Danielle)

1 (1/4 ounce) package yeast
1/2 cup warm water
1 tablespoon sugar
1 teaspoon baking powder
1 cup milk
1/3 cup margarine
1/3 cup sugar
1 dash salt
2 eggs, beaten
4 1/2 cups flour

Steps:

  • Dissolve yeast in warm water and add 1 tablespoon sugar and baking powder. Allow to stand for 20 minutes.
  • Meanwhile scald milk. Add margarine, 1/3 cup sugar and salt. Cool a little and then add eggs. (I do this step in my 4 c glass measure in the microwave.).
  • Combine all with flour. Cover and refrigerate overnight. (The dough will more than double in bulk, so make sure your container is big enough. If it looks like it might outgrow its bowl, you can always punch it down once or twice without any ill effects.).
  • Two hours before serving, divide dough into thirds and roll out into large circles about 9 inches in diameter on a floured surface. The dough will be sticky, but don't worry. It will quickly come together and handle really well with a few sprinklings of flour (not too much). Cut into 8 wedges and make crescent rolls by starting at the wide end and rolling up. Place on greased pans to rise, covered with clean towels.
  • Bake at 425 degrees for 8-10 minutes. Mom always rubbed the hot rolls with a stick of butter when they came out of the oven, and I do, too. It makes them so beautiful.

I found a delightful little box in my bottom turnaround, it was labeled recipes. I sifted through and separated all the hand written ones. This one is for ham rolls--looks easy enough to make. I'll report back when I've made it.

2 tablespoons soft butter
1 egg
3 1/4 cups bread flour
1/4 cup sugar
1 teaspoon salt

Steps:

  • Place all ingredients in bread machine in the order according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, remove dough from pan.
  • Cover and let rest for 10 minutes on lightly floured surface.
  • Grease a large cookie sheet.
  • Divide dough into four parts, then cut each part into 5 pieces.
  • Shape each piece into a ball and place 2" apart on cookie sheet.
  • Cover and let rise for 30 minutes or until double in size.
