Steps:
- Heat oven to 400 degrees.
- In small bowl combine flour, salt and pepper.
- In another bowl beat together milk and egg.
- Combine breadcrumbs and Parmesan cheese on a plate.
- Coat chicken strips in flour mixture then dip in egg and roll in breadcrumbs.
- Place chicken on baking sheet, drizzle with melted butter or margarine.
- Bake 12-15 minutes, until chicken is fully cooked and no longer pink in center.
- Let cool for 30 minutes.
- Place each serving in a small plastic food-storage bag and refrigerate up to 3 days.
- Serve with catsup, if desired.
- TO FREEZE: Place each serving in a heavy-duty plastic food storage bag and freezes up to 1 month.
- Frozen nuggets placed in a lunch box at room temperature will thaw in 3 hours.

- Preheat the oven to 400° F. Line 2 large baking sheets with parchment paper or foil and top with a wire rack. Spray wire racks with nonstick spray and set aside.
- Whisk eggs and water together in a medium bowl. Add the chicken pieces and toss to coat. Set aside. (Optional: Toss chicken in flour before adding to the egg mixture for an extra thick breading.)
- In a small bowl mix together the breadcrumbs, corn starch, garlic powder, salt, pepper, onion powder, oregano, and smoked paprika. Transfer to a large resealable plastic bag.
- Remove the chicken nuggets from the bowl using tongs or a fork, allowing any excess egg mixture to drip off. Place in bag with breadcrumb mixture. (Do this in batches.) Shake to coat well.

- Pulse 2 1/2 cups corn flakes in a food processor until fine crumbs form (or take a rolling pin to them in a large zip-loc bag). In a shallow bowl, stir together 3/4 cup crumbs and 1/4 cup finely grated parmesan.
- In the bowl of your clean food processor or high powered blender, combine 1 lb chicken pieces, 1 Tbsp potato flakes, 1/3 cup water, 1 tsp garlic salt, and 1/8 tsp black pepper. Pulse until chicken is finely chopped.
- With wet hands, roll and flatten chicken into small nugget patties, using about 1 Tbsp of the meat mixture for each nugget. Roll the nugget into bread crumbs, pressing gently for crumbs to adhere. (Freezing Tip: You can freeze them once they are breaded; freeze them flat for 1 hour, then transfer to ziploc bags and store up to 3 months. When ready to bake them, bake frozen nuggets as directed in step 4).
