EASY COLESLAW
I made this recipe to go with a Lobster Seafood home fest on new years day, I now have the detail of making this for our fish fry this summer to go with the fresh cod and haddock we will catch on the boat. They said it was the best they ever had and how easy it is.

DELICIOUS EASY COLESLAW
Make the dressing and set it aside. Then combine the cabbage and carrots. Combine the dressing and slaw mix about 20 minutes before serving. This will give a nice crunch to the salad. If you prepare it ahead of time, the slaw will release moisture and become softer. So you decide which texture you like best!

Steps:
- In large bowl combine dressing ingredients: mayo, mustard, vinegar, sugar, optional garlic powder & onion powder, onion, celery seeds, dried herbs, salt and pepper to taste. Stir until everything is combined well and taste for additional seasonings.
- Stir in cabbage and carrots.Cover and refrigerate for about 2 hours for the slaw to absorb the dressing and soften a bit. The longer the cabbage sits in the dressing, the softer and creamier it will become.

THE BEST VINEGAR COLESLAW
We love the zippiness that a vinegar-based dressing brings to this coleslaw, making it the perfect partner for rich, meaty dishes like pulled pork or ribs. Cabbage can take lots of seasoning and lots of vinegar, so don't be bashful. But the real secret to this colorful coleslaw is the marinating time - a long trip to the fridge softens up the veggies and gives them time to absorb the flavors of the vinaigrette. A drizzle of olive oil at the end balances the acidity.

Steps:
- Whisk together the vinegar, salt, sugar, celery salt, pepper and garlic in a large bowl until combined. Reserve 1/4 cup of the dressing for serving. Toss the green cabbage, red cabbage and carrots in the remaining dressing until the vegetables are completely coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour and up to 3.
- Strain the coleslaw through a colander and discard the liquid. Transfer the coleslaw to a serving bowl. Drizzle with the reserved dressing and the oil. Season with salt and pepper if necessary. Toss to coat.

SERIOUSLY GOOD HOMEMADE COLESLAW
With a generous amount of acidity from apple cider vinegar and Dijon mustard, our coleslaw recipe is anything but dull. Instead, it is packed with fresh, lively flavors that wake up anything you serve with it. Unlike some of the more traditional or popular recipes for coleslaw, we skip the addition of sugar to our coleslaw dressing. Try this as a topping to sandwiches, served next to ultra-savory meats, like braised beef or pork. Or, mound some on top of your next hot dog or hamburger. Sugar: We find that the cabbage and carrots are sweet enough. If you disagree, add a teaspoon or two of sugar (or honey) to the dressing before mixing with the cabbage and carrot.

Steps:
- Quarter the cabbage through the core, and then cut out the core. Cut each quarter crosswise in half and finely shred. Place the shredded cabbage in a very large bowl (you will have 6 to 8 cups).
- Add the shredded carrot and parsley to the cabbage and toss to mix.
- In a separate bowl, stir the mayonnaise, vinegar, mustard, celery seeds, salt, and pepper together. Taste for acidity and seasoning, then adjust as desired. If the dressing tastes too tart and you prefer a sweeter coleslaw, stir in the optional sugar.
- Pour two-thirds of the dressing over the cabbage and carrot then mix well. (Clean hands are the quickest tool).
- If the coleslaw seems dry, add a little more of the dressing. Eat right away or let it sit in the refrigerator for about an hour to let the flavors mingle and the cabbage to soften.

- It’s essential to put this slaw together at least one hour before eating to allow the cabbage to soften slightly and the meld flavors.
- Slice the green and red cabbage very thinly. Then cut the slices so that the pieces are about one to two inches long. Transfer to an extra-large mixing bowl.
- In a small bowl, whisk together the vinegar, honey, mayonnaise, mustard, olive oil, and caraway seeds—season with salt and freshly cracked black pepper to taste.
- Pour the coleslaw dressing over the cabbage, carrots, and chives. Use tongs to toss the mixture together. It’s important to toss the slaw with tongs to make sure the sauce coats the cabbage well.
