PICKLED ITALIAN PEPPERS
Italian pickled peppers, know by its original name: peperoni sotto aceto, is such a great way to preserve your summer produce.

Steps:
- Place half of the vinegar in a medium pot, add the water, salt, garlic cloves, and bay leaves. Mix to dissolve the salt and bring to a boil.
- Add the peppers, turn off the heat and cover the pot.
- Allow to rest for 10 minutes.
- Place a clean kitchen towel on a working surface. Remove the peppers from the water and place them on a single layer on the towel.
- Pat dry the peppers as much as possible with kitchen paper towels.
- Fill your jars with the peppers, adding in between some peppercorns, bay leaves and garlic.
- Fill the jars with the remaining vinegar and press the peppers with a clean spoon so they will submerge very well in the vinegar.
- Use a toothpick to burst the bubbles in the liquid and prevent the peppers from spoiling.
- Close the lids and place the jars in a dry, cool and dark place for 30 days before consuming.

HOT ITALIAN GIARDINIERA
This is Italian giardiniera. It is wonderful on Chicago style Italian beef sandwiches, sausage sandwiches, French dips, pastas or even as a pizza topping. You can even snack on it as is if you choose. Once you taste it you will figure out what you prefer to use it on.

- Place into a bowl the green and red peppers, jalapenos, celery, carrots, onion, and cauliflower. Stir in salt, and fill with enough cold water to cover. Place plastic wrap or aluminum foil over the bowl, and refrigerate overnight.
- The next day, drain salty water, and rinse vegetables. In a bowl, mix together garlic, oregano, red pepper flakes, black pepper, and olives. Pour in vinegar and olive oil, and mix well. Combine with vegetable mixture, cover, and refrigerate for 2 days before using.

GRANDMA GRUMNEY'S CANNED ITALIAN HOT PEPPER RINGS
This is a very lovely recipe that my husband's grandmother gave to me to add to my canning list. My husband grew up on Grandma Grumney's canned olive oil and garlic peppers and just loves them. I grew up canning my grandma's peppers in tomato sauce. Which my husband also loves. So every year.... I do lots of canning with peppers...

Steps:
- 1. Prepare peppers: Wash peppers, drain. Then, wearing rubber gloves to protect your hands, cut into rings about 1/2" thick. Discard stem ends. Place cut pepper rings into a large stainless steel bowl or pan, or glass bowl. Make brine using one gallon of water and 2 cups of salt, stir together until salt is dissolved. Pour brine over peppers. Cover and allow to soak overnight. (10-12 hrs)
- 2. Next day: Prepare quart sized jars for canning peppers. Clean, & sterilize jars, lids & rings. Place 2-3 cloves of garlic, Italian seasoning, EVOO, & alum (optional) in each quart sized jar.
- 3. In a large stock pot, make canning solution of 1 gallon water, one cup pickling salt, & 1 cup cider vinegar. Bring to a boil. Remove from heat.
- 4. Drain peppers. **** Rinse lightly with cold water. Pack peppers into quart size jars with garlic, olive oil, and Italian seasoning, leaving 1/2 inch head space. Fill with canning solution. (make sure to release any air bubbles. Clean rim of jar. Tightly place lids and rims on jars. Process in a hot water bath for 10 minutes. (Do not process in pressure cooker. Peppers will get mushy & not stay crisp.)
- 5. **** You may add small green tomatoes, small pickles, small pieces of cauliflower, &/ or carrot slices to make a hot pepper vegetable mix. Just soak vegetables in brine overnight with peppers
- 6. Store away in a cool place to allow seasonings to work. Can be used after 4 weeks, but they get better and hotter as more time goes by. For hot peppers and oil, pour peppers into a glass bowl and add 1/2 cup olive oil. Serve with fresh Italian bread and butter.
ITALIAN CANNED PICKLED HOT PEPPERS
Traditional Canned Mild and Hot Peppers in Olive Oil

- Put all the peppers through the slicing mode of your food processor, and put the sliced peppers in a colander to drain. In a large pot or plastic container put all the peppers in to soak. Add enough white vinegar until all the peppers are covered with vinegar add a good amount of salt and mix.
- Cover the pot or container and let sit out on the counter for 24 hours at a minimum.
- The next day, have sterilized canning jars, lids and rims ready. Drain the peppers that soaked overnight and rinse with cold water.
- In each jar, stuff full of the sliced peppers.
- Mix 2 cups of canola oil and 2 cups of virgin olive oil together in a container with a spout.

Love to have these on hand to add to a sandwich or to top cream cheese and crackers with hot pepper jelly!

- Wearing rubber gloves,cut pepper rings into 1/4 inch slices and rinse out seeds.
- Place peppers in a bowl and cover with cold salted water Let set 1 hours then drain.
- Bring brine mixture to a boil.
- Place 1/2 tsp pickling salt and 1 clove garlic in each clean hot pint jar.
- Pack peppers tightly into clean hot pint jars.
- Cover peppers with brine and lLeave 1/2 inch head space.
- Seal with hot sterilized lids and process for 10 minutes in a boiling water bath.
- Leave for at least 4 weeks to"cure" before using.
PICKLED CHERRY PEPPERS - CANNING
I love those cherry peppers from the grocer. Growing just one bush can give you enough supply for a year. Great for use in Italian dishes, stuffed with cheese or on sandwiches, but especially good in recipe #475541. Update: I find the red and yellow peppers are sweeter. The green ones have too much of a 'bite'.

Steps:
- Sterilize 5 pint-sized canning jars, rings and lids by boiling them in a large pot for at least 10 minutes, making sure they are completely submerged.
- Rinse the cherry peppers thoroughly under cool running water, removing any visible dirt or debris. Trim the stem from each pepper with a small, sharp knife. You do not need to actually remove the stem; simply cut it down to a manageable size.
- Place the peppers into your sterilized jars. They should fill the jars most of the way, but don't forcibly stuff them inside. Add spices and garlic cloves to each jar.
- Put the vinegar, water, sugar, salt and sugar into a saucepan. Bring these ingredients to a gentle simmer and allow them to cook until the sugar and salt completely dissolve, about 5 minutes.
- Pour the vinegar mixture over the ingredients in each jar. Leave approximately 1/4 inch of air at the top of each jar. Wipe the rim of each jar with a paper towel, then put the lids and rings on the jars.
- Process the jars in boiling water for at least 10 minutes. You should do this with a water bath canner if possible. If not, fill a large pot with hot water, add the jars (which should be standing upright and fully submerged with 1 inch of water over the top of the lids), cover and bring the water to a boil for at least 10 minutes.
- Remove the jars from the hot water, allow them to cool, then check the seal by pressing on the top of each jar with a finger. If the top is slightly inverted and does not give when you press on it, the jar is properly sealed. Store properly sealed jars for several weeks before eating the peppers.

ITALIAN PICKLED BANANA PEPPERS
I use hot hungarian peppers and modify the amount of sugar or splenda as well as the amount of seeds/membrane in the pepper to control the heat. We slice these length wise and they are great on burgers, pizza, salads, or even plain.

- WEARING GLOVES, Wash, core, and cut peppers into approximately 1" strips. Peel garlic cloves. Pack peppers into jars.
- Place appproximately 5 jars on the counter and pour boiling water into the jars to the rim. Cover with a cookie tin and weight down to hold in the heat of the boiling water. Let stand 5 minutes.
- Pour off boiling water and place 2 cloves of garlic, 1/2 tsp of canning salt, and 1 tsp of oil into jar. Pour boiling brine into jar to approximately 1/2 inch from the top. Place lid on jar and seal with a ring. (Be sure to have lids in a bath of hot water for 5 minutes prior to placing on jar).

PICKLED PEPPERONCINI
Mildly hot, addictive, medium peppers for Greek salads. It has been very difficult for me to resist eating these as fast as I put them up. They are the star of the year from my 2013 garden. I will pickle as many as I can, give very few away, and grow Pepperoncinis again next year!

- Put pint jars (plus 1/2 pint, in case you have too many peppers) and lids in pan with water to boil, along with tongs and canning funnel. Bring to boil while continuing other steps. Reduce heat, or turn off after boiling for 10 minutes.
- Wash peppers in cold water, set aside to drain.
- Bring vinegar, water, and salt to a boil and maintain.
- Drain jars.
- Blanch garlic cloves and place in jars.
- Slit each pepper vertically and pack into jars. (I slit from the base of the stem down the pepper to within 1/4" of the bottom; this way there is no trapped air at the top causing peppers to float upside down, and enough juice to drizzle on the salad in the end of the pepper).
- Pour hot liquid over peppers allowing slightly more than 1/2" head space.
- Carefully pour 1 tablespoon olive oil into jar being very careful not to get any on lid.
- Process, as you wish (10 minutes in boiling water bath), or not. I do not process my pickles.
- Store in cool dark place. Ready in 3 weeks (but I have been known to open a jar the next day), refrigerate after opening.
