This dish is half Indian and half Pakistani. This excellent vegetable dish goes well with most Asian foods and it is simple and quick-cooking. Serve hot with roti breads, if wished.

¼ cup vegetable oil
2 large onions, coarsely chopped
1 head cauliflower, cut into florets
2 cloves garlic, crushed
1 (1 inch) piece fresh ginger, peeled and chopped
2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 ¼ teaspoons cayenne pepper
1 (14.5 ounce) can diced tomatoes
1 ¼ cups vegetable broth
salt and ground black pepper to taste
1 pound fresh spinach, chopped and stems removed

Steps:

  • Heat vegetable oil in a large saucepan over medium heat; cook and stir onions and cauliflower until slightly softened, about 3 minutes. Add garlic, ginger, coriander, cumin, turmeric, and cayenne pepper; stir to coat.
  • Stir tomatoes and vegetable broth into cauliflower mixture; season with salt and black pepper. Bring mixture to a boil, cover, and reduce heat. Simmer until flavors have blended, about 8 minutes. Stir spinach into mixture until it begins to wilt. Cover and simmer until spinach is completely wilted and cauliflower is tender, 8 to 10 minutes.

Salt and pepper
2 cloves garlic, minced
1 tablespoon curry powder
1 tablespoon ground cinnamon
1 teaspoon ground coriander

1 cup whole milk plain yogurt
3/4 cup half-and-half
2 (10-ounce) packages frozen chopped spinach, thawed

Steps:

  • Heat oil in a medium skillet over medium heat. Add onion and saute until translucent. Season with salt and pepper, to taste. Add garlic and cook for another minute. 1 tablespoon vegetable oil
1 large onion, peeled and thinly sliced
4 teaspoons garam masala
2 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 (10 ounce) bag Baby Spinach
1 medium cauliflower, core removed, cut into florets
1/4 cup raisins
1 (15 1/2 ounce) can garbanzo beans, drained
cooked brown rice (optional)

Steps:

  • Heat oil in a large, lidded non-stick pot.
  • Add onions and cook, stirring occasionally, for 6 minutes, until nicely browned.
  • Stir in garam masala and cook for 30 seconds.
  • Add tomatoes with their juice and heat until boiling.
  • Add spinach and continue stirring until it is wilted down. Put on lid and simmer 20 minutes. Spinach should be very well done.
  • Remove lid, stir in cauliflower and cook until cauliflower is tender.
  • Stir in raisin and garbanzo beans until heated through.

I prepared this wonderfully fragrant dish as a meal (vs. side dish) and served it with some Naan bread. My husband rated this dish a "9" on a scale of 1 to 10.

1 tablespoon fresh ginger, finely grated
3 tablespoons lemon juice, freshly squeezed
2 tablespoons vegetable oil
2 cups onions, diced
1 jalapeno pepper, seeded and minced
1 (14 1/2 ounce) can tomatoes, diced and drained
1 tablespoon cumin
1 tablespoon coriander
1/2 teaspoon turmeric
1/4 teaspoon cardamom
1/4 teaspoon clove, ground
1 teaspoon salt
2 (15 ounce) cans chickpeas, rinsed and drained
1 lb cauliflower floret (1 medium head, cored and trimmed)
1/4 cup cilantro, chopped
3/4 cup water, divided

Steps:

  • Combine lemon juice and grated ginger in a small cup and set aside.
  • Heat a large saucepan over medium-high heat and add oil. Saute onion and cook until onion begins to brown (approx. 4 minutes). Add jalapeno and continue cooking until onion is brown all over (4-5 minutes). Add tomatoes, cumin, coriander, tumeric, cardamon, cloves and salt. Stir and cook one minute. Add drained chickpeas and 1/2 cup water. Cover and cook over medium heat for approximately 10 minutes, stirring occasionally and adding additional water if mixture becomes dry.
  • In a separate pan, combine cauliflower and 1/4 cup water. Cover and cook over medium-high heat, stirring carefully every minute or so until cauliflower is tender (approx. 7 min.). Uncover cauliflower and boil off any excess liquid. Remove from heat and stir in lemon juice mixture. Combine cauliflower with chickpea mixture and add in chopped cilantro.
  • Serve with a green salad and naan bread or as a side dish.

This is good and very pretty. The cauliflower turns a lovely yellow color. Be generous with the spices and use lots of garlic! Don't use frozen spinach for this one. This recipe is meant to be served as a side dish or as one of many dishes in the typical Indian style.

1 teaspoon cumin

1 tablespoon fresh cilantro, chopped
salt and pepper

Steps:

  • Heat the oil in a large pan. Add the mustard seeds and cook until the begin to pop.
  • Stir in the remaining spices, garlic, onion and chili and cook for 2-3 minutes, stirring.
  • Add the cauliflower, spinach, vegetable stock, cilantro and cook over gentle heat for 15 minutes or until the cauliflower is tender. Serve at once.

1 large head cauliflower
4 tablespoons vegetable oil
½ teaspoon ground turmeric
1 small onion, minced
2 tomatoes, pureed
1 teaspoon garlic powder
3 teaspoons garam masala
salt to taste
½ head lettuce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cut off most of the cauliflower's stem and place the whole head in a baking dish.
  • Heat two tablespoons of oil and turmeric together in a small frying pan. Brush the cauliflower head with the oil and turmeric mixture.
  • Bake the cauliflower for 30 minutes.
  • While the cauliflower is cooking heat two tablespoons of oil in a frying pan, mix in the minced onions and saute until the are a medium brown color. Add the pureed tomatoes, garlic powder, garam masala and salt. Let this mixture simmer for 10 minutes.
  • Arrange lettuce leaves on a serving plate. Place the cauliflower on top of the lettuce. Pour the tomato curry over the cauliflower. Serve hot.

1 large head cauliflower , broken into florets (about 1kg in total)
2 garlic cloves , crushed
2 tsp each caraway and cumin seed
3 tbsp olive oil
400g can chickpea , drained and rinsed
100g pine nut
small bunch each parsley and dill , leaves torn

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the cauliflower, garlic, spices, 2 tbsp oil and some seasoning in a roasting tin, then roast for 30 mins.
  • Add the chickpeas, pine nuts and remaining oil to the tin, then cook for 10 mins more. To serve, stir in the herbs with your chosen dressing.

250 g cauliflower (amount depends on how many people you are cooking for. If for two, use about 200-250 grams or two me)
1 shallot
1 small onion
50 g turmeric (or 1 small finger)
4 garlic cloves
1 pinch coriander seed
1 tablespoon ghee
2 stalks celery
1 dash cayenne pepper (substitute with dried chilli flakes for more heat if desired)

Steps:

  • Peel and chop Onion finely.
  • Peel and chop Shallot finely.
  • Dice Celery stalks.
  • Place Shallot and onion and celery aside.
  • Crush Garlic with large flat knife to remove skin.
  • Finely dice Garlic.
  • Peel the small finger of Tumeric with a veggie peeler. Be careful, as if you get Tumeric on your hands it will stain your hands yellow or orange and is hard to remove.
  • Finely dice Tumeric.
  • Place Tumeric, Garlic and Coriander seeds in mortar and pestle and pound until ingredients reach a paste-like state.
  • Steam cauliflower florets in microwave safe container for 3 minutes or until soft.
  • In the meantime, heat Ghee in frying pan.
  • When Ghee has melted, add the Tumeric, Garlic and Coriander seed paste to the Ghee and lightly fry. This releases the fragrant smell of the ingredients, and mellows the flavour.
  • When Ghee is lightly coloured yellow by the Tumeric, and the garlic is softened but not discoloured, add the Shallot, Onion and Celery that was set aside earlier.
  • Fry gently, and add the dash of Cayenne pepper to taste (or dried chilli flakes if desired).
  • When Onion and Celery is soft, clearish and lightly coloured yellow, add the steamed Cauliflower. Cauliflower should be soft enough to break up into tinier portions.
  • Cook for about 3 minutes stirring constantly, or until the Cauliflower is yellow like the rest of the ingredients.
  • Serve hot.

Steps:

  • Put oven rack in upper third of oven and place a shallow baking pan on rack. Preheat oven to 475°F.
  • Toss cauliflower and potatoes together in a bowl with 3 tablespoons oil, cumin seeds, and1/4 teaspoon salt. Spread in hot baking pan and roast, stirring occasionally, until cauliflower is tender and browned in spots and potatoes are just tender, about 20 minutes.
  • While vegetables are roasting, cook onion, garlic, jalapeño, and ginger in remaining 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring frequently, until very soft and beginning to turn golden, 8 to 10 minutes. Add ground cumin, coriander, turmeric, cayenne, and remaining 1/2 teaspoon salt and cook, stirring constantly, 2 minutes. Stir in water, scraping up any brown bits from bottom of skillet, then stir in roasted vegetables. Cook, covered, stirring occasionally, 5 minutes.
