TEA SIMPLE SYRUP RECIPE
Because crystallized sugar is hard to stir in to cold drinks, many people use simple syrup as an easy liquid sweetener in their iced tea recipes.

Steps:
- Gather the ingredients.
- In a small saucepan, bring the water to the usual steeping temperature you'd use to steep the tea you're planning to flavor your syrup with. For example, a black tea would need boiling or nearly boiling water, but a green tea would only need simmering water.
- Steep for the usual amount of time. For example, four to five minutes for an Earl Grey simple syrup, or two to three minutes for a green tea simple syrup.
- Strain out and discard the tea leaves and bring the tea to a rolling boil over high heat.
- Stir in the sugar until it is dissolved completely.
- Reduce heat to medium and stir often, until the mixture has reduced to half its original volume, about 12 minutes.
- Remove from heat and allow to cool slightly.
- Pour into a very clean jar with a tight-fitting lid. Keep refrigerated. The simple syrup has a shelf life of about 6 months.

SIX RULES FOR THE BEST ICED TEA PLUS RECIPES - CANADIAN LIVING
From canadianliving.com
Published 2012-07-12
- Use enough tea bags. When foods are served cold, the flavours become dull. A stronger tea - such as Darjeeling, Jasmine or green teas - is necessary to have a well-flavoured tea served cold.
- Don't oversteep. If you prefer your tea stronger, use more tea bags rather than lengthening the steeping time. Allowing tea to overstep brings out the tannins in the tea and can make it bitter.
- Add sugar to hot water. If you sweeten your tea, add the sugar to the hot tea in order to dissolve the grains. If you prefer to sweeten your tea afterwards as per each persons taste, use a simple syrup rather than granulated sugar which will leave sugar grains in your glass.
- Cool before refrigerating. Putting hot tea into a cold fridge will make your tea cloudy. Allow your tea to cool before you refrigerate. If you do end up with cloudy tea, try adding a bit of boiling water to it – it will sometimes do the trick!
- Keep it real. Don't use artificial lemon juice. Only use real fresh squeezed lemon juice from fresh lemons for the very best flavour.
- Fresh is best. Iced tea taste best when it is freshly made. Make only what you will drink in two or three days. It's easy to make, so don't worry about having to mix up another batch!

- For the tea: Combine 8 cups of water, the orange peel and cinnamon sticks in a large saucepan. Place over low heat and bring to a boil. Add the tea bags and shut off the heat. Let the tea steep for about 5 minutes (no more or else it will be bitter), then remove the tea bags and chill the tea (don't remove the cinnamon sticks or the orange peel yet).
- For the syrup: Add 1 cup of water, the sugar and the ginger to a small saucepan, and bring to a boil without stirring, over low heat. Once the contents of the pot come to a boil, shut the heat off. Tear the mint leaves and stalks into small pieces and drop into the syrup. Allow the syrup to come to room temperature, about 20 minutes. Strain and discard the solids.
- Strain the tea into a pitcher. Add the ginger-mint syrup according to your taste buds, stir and serve in a tall glass over ice, garnishing with some fresh mint if you like. Sip languorously.
