Date Balls image

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

1 (8 ounce) package chopped pitted dates
1 cup white sugar
½ cup margarine
3 cups crispy rice cereal
1 cup chopped pecans
1 teaspoon vanilla extract
½ cup confectioners' sugar, or as needed

Steps:

  • Cook and stir dates, sugar, and margarine in a large saucepan over low heat until sugar dissolves; remove from heat. Fold crispy rice cereal, pecans, and vanilla extract into the date mixture until evenly mixed.
  • Grease your hands with margarine. Roll date mixture into 1-inch balls.
  • Spread confectioners' sugar into a shallow dish; roll date balls in confectioners' sugar to coat.

1/2 cup nuts, chopped

Steps:

  • Melt margarine in large pot (4 quart or larger).
  • Add sugar, egg, and dates.
  • Stir constantly over low to medium heat.
  • Cook approximately 5 minutes until mixture thickens.
  • Remove from heat. Add chopped nuts and rice cereal.
  • Roll into walnut-sized balls; then roll in coconut.

Healthy Date Balls image

This is very similar to already-posted recipes, but with healthier ingredients. I experimented with my favorite no-bake cookie recipe and was delighted to find that there's almost no difference in taste!! I can't keep my hands off these! By the way, the dates I use are whole pitted dates, that I "dice" with a scissors. I'm not sure if the pre-chopped, flour coated version would work.

1/2 cup brown rice syrup
1/2 cup butter
1 pinch salt
8 ounces dates, chopped
3 cups brown Rice Krispies
1 cup unsweetened dried shredded coconut

Steps:

  • In a medium saucepan, combine syrup, butter, salt, and dates.
  • Heat to boiling; boil and stir constantly for five minutes.
  • Remove from heat; gently stir in cereal.
  • Immediately (you need to work it while warm) begin to roll into 1 1/2 inch balls; butter your hands to prevent sticking.
  • Roll each ball in coconut and cool on wax paper.

1 cup dates, pitted and chopped
1 teaspoon water
1 cup chopped walnuts
2 egg white
1 cup packed brown sugar
1 tablespoon butter
1 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a small saucepan over low heat, combine butter, water, and dates. Bring to a boil, then remove from heat, and let stand for 10 minutes.
  • Pour date mixture into a medium bowl. Mix in the brown sugar and chopped nuts.
  • Whip egg whites in a small bowl until stiff. Fold egg whites into date mixture. Roll dough into 2 inch balls and roll in shredded coconut. Place on cookie sheets about 2 inches apart
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.
