A perfect dessert for an Oriental meal. Sometimes i just drink it as a snack. Very fragrant due to the coconut milk. I've even poured it into a popsicle mold and ended up with a sweet bean popsicle! Refreshing and low in fat (without the coconut, anyway *grin*)!

1 cup dried mung beans
1 tablespoon dried coconut milk powder or 1/4 cup coconut milk
4 -5 cups water (about)
1/4 cup white sugar (about)
3 -4 pandan leaves (optional)

Steps:

  • Wash the beans, drain.
  • Put beans in saucepan with lid, cover with water.
  • Cover with lid, simmer for about 15 minutes over low heat.
  • Add pandan leaves (tie them into a knot for easy removal later), continue to simmer for another 15 minutes.
  • After the beans are very soft and some are split, turn off heat and remove leaves Add sugar (do taste before adding too much).
  • Just before serving, add the coconut milk.
  • Serve hot.

A traditional Chinese medicinal soup( more like a porridge to Westerners).This excellent recipe is from one of my favorite cookbooks,The Wisdom Of The Chinese Kitchen,by Grace Young.In it she states that this sweet soup is considered cooling ,and therefore is thought to be beneficial in hot weather and to treat itchy skin conditions,rashes,and acne-but not too eat more than 1 1/2 cup at a time or it may cool the body too much and make people with weak constitutions faint!(I eat much more than the serving and have always been fine lol)For this recipe you need green mung beans,not hulled yellow beans,and Chinese brown sugar also called brown candy.The sugar can be found in almost any Asian market and is sold in slabs that are about the color and cosistency of piloncillo or soft jaggery and come 4-6 slabs in a package.They should be soft enough to cut easily if the package has been stored properly.For the medicinal benefits the sugar should not be substituted,as the brown candy is believed to be superior to other sugars and remove toxins from the body.

1 cup dried green mung beans
6 cups water
1/4 cup dried lotus seeds, with skins
3 ounces chinese brown sugar (brown candy,1 1/2 slabs)

Steps:

  • Wash the mung beans in cold water several times discarding any debris.Place the mung beans and the water in a medium large saucepan and bring to a boil.
  • Reduce the heat to low and simmer,covered ,for 1 hour.Stir occasionally to keep the beans from sticking.
  • Let the beans cool slightly,then puree until smooth.
  • Return the puree to the pan with the lotus seeds and bring to a boil again.Reduce heat and let simmer,uncovered for 1 hour.If it seems to be too thick add more water-it should be the consistency of a lentil or split pea soup.
  • Chop the brown sugar and stir into the soup.Let simmer,stirring u ntil the sugar has dissolved.
  • Serve hot.

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

Hearty Whole Mung Bean Soup image

After coming across mung beans in my local market one day, I was curious as to just what to do with them. After much searching I found this recipe on the internet which I've altered to suit our tastes. The result is a spicy and satisfying soup-a meal in a bowl. I found in my research these Asian beans don't need pre-soaking and are very nourishing, while being relatively easy to digest--they do not generally create abdominal gas or bloating (sorry, but for some people, that is important). According to modern nutrition, mung beans offer 14 gms of protein per cooked cup. Mung beans are also a good source of dietary fiber. They also contain thiamin, iron, magnesium, phosphorus, potassium and copper, and are a good source of folate. The ham in this recipe can be omitted and vegetable stock substituted for chicken stock if you are vegetarian. I serve with crusty bread on the side, but you may also serve over rice if desired.

2 cups whole mung beans, picked over, washed, and drained
4 cups water
4 garlic cloves, finely minced
2 chilies, finely chopped (seeds removed, if desired)
1/2 onion, finely chopped
2 tablespoons olive oil
3 cups chicken stock
2 cups cooked ham, diced
10 ounces frozen spinach (thawing is not necessary)
salt and pepper, to taste (I don't find it needs any)
Tabasco sauce, passed at table (optional)

Steps:

  • Place beans in a large pot and add 4 cups water; bring to a boil.
  • Reduce heat to a simmer and cook for approximately 30 to 40 minutes, or as long as needed until the marjority of the beans pop their skins and the water is absorbed (if your water cooks out and the beans are not cooked, simply add more water as needed and continue cooking until beans burst; it is better to overcook than undercook, but in any event, continue cooking until the water is all absorbed).
  • Meanwhile, saute garlic, chilis and onion in olive oil until the onion softens, about 5 minutes; set aside.
  • When the beans have burst and the water has cooked off, add the chicken stock to the beans and bring to a boil.
  • Add the onion mixture, ham, and spinach to the pot; reduce heat and simmer for 15 minutes.
  • Season with salt and pepper, if desired, and serve.

  • In a high pressure cooker, add sugar, mung beans, pumpkin for winter version and water and cook with a rice or soup pressure. Then set aside for 20 minutes. Transfer out and add a tiny pinch of salt. Wait until cool down naturally.
  • If you are using a regular stewing pot, place 3000ml water, mung bean and sugar and turn the fire to high fire. Bring to a boil and turn off the fire. Rest for around 20 minutes and then turn the fire to medium high and then cook for another 20 to 30 minutes until the mung beans are almost blossomed. Add a tiny pinch of salt and wait to cool down naturally.
