Steps:
- Heat the oven to 400°F
- Coarsely grate the cheddar cheese and finely slice the jalapeno chilies.
- Lay out the unbroken corn chips on a baking tray, and top each one with a little grated cheese and two slices of jalapeno chili.
- Bake for 5-10 minutes or until the cheese melts and the corn chips are hot and crisp.
- Add a dab of chili salsa and a cilantro leaf, and serve hot.

ABSOLUTELY THE BEST NACHO DIP EVER
This attractive layered dip for tortilla chips is filled with fresh ingredients. The addition of cocktail sauce is a nice, spicy twist.

Steps:
- In a blender or food processor, thoroughly mix cream cheese, sour cream and mayonnaise. Spread the mixture evenly in the bottom of a medium serving dish.
- In individual layers, top the mixture with cocktail sauce, mild salsa, diced green onion, red bell pepper, green bell pepper, shredded Cheddar cheese and shredded lettuce.
- Arrange cucumber slices around the edge of the serving dish. Chill in the refrigerator at least 2 hours before serving.

OVEN NACHOS
This is my favorite way to make nachos--and my kids love it every time. I actually prefer to use recipe #2642 or recipe #76616 instead of the package taco seasoning.

Steps:
- In a large skillet cook the ground beef with onions; cook stirring until meat is no longer pink. Drain all fat well. Continue to cook until the meat is well browned, about 4-5 minutes longer. Pour contents of taco seasoning pack into meat and add water as directed on the package. Continue to cook according to package directions.
- Add in the refried beans and salsa. Cook, stirring occasionally, until heated through.
- Add in 3/4 cup grated cheddar cheese; stir until melted.
- Place the tortilla chips on a large serving platter.
- Top with ground beef mixture, then sprinkle the top of the HOT ground beef mixture with about 1-1/2 cups (or to taste) grated cheddar cheese.
- Top with sour cream, green onions, chopped tomatoes, shredded lettuce, and sliced black olives.
- Serve hot or warm.

Steps:
- Brown the beef in large skillet and drain (in colander rinsing with hot water if possible to reduce fat intake).
- Return to skillet with water, beans, taco seasoning, onion and green chilies.
- Cook until everything is mixed well under medium-low heat stirring often until a low boil is achieved.
- Reduce heat cover and simmer 10 minutes stirring every couple minutes.
- The construction.
- On a large plate cover with tortilla chips and dollop generous portions of the meat mixture on chips.
- Now pour over WARMED cheese sauce.
- Top with the lettuce next, then what ever order you want of the other veggies except the JP's.
- Then add the JP's AS MUCH AS YOU CAN MUSTER YEA!
- A couple dollops of sour cream and you are ready for a very filling, spicy treat that you will not forget--EVER.
- You should also consider topping with some of my guacamole.
