1/2 tablespoon instant espresso powder
1/3 cup water
1 1/2 tablespoons light corn syrup
1/4 teaspoon vanilla extract
4 ounces bittersweet (60% cacao) chocolate, finely chopped

Steps:

  • Combine espresso powder, 1/3 cup water, and corn syrup in a small heavy saucepan, and bring it to a boil, stirring.
  • Remove from heat and stir in vanilla and chocolate, stirring until chocolate is melted and sauce is smooth.

6 extra-large egg yolks
2/3 cup sugar
Pinch salt
2 1/2 tablespoons ground espresso coffee beans, decaffeinated or regular
1 tablespoon coffee liqueur (recommended: Kahlua)
1 teaspoon pure vanilla extract
4 ounces (1/2 cup) chocolate-covered espresso beans, chopped

Steps:

  • Heat the half-and-half until it forms bubbles around the edge of the pan and steam starts to rise. Meanwhile, in the bowl of an electric mixer fitted with the paddle attachment, beat the egg yolks, sugar, and salt until mixed. Slowly add the hot half-and-half until combined. Wipe out the pan and pour the mixture back into the clean pan. Cook over medium-low heat, stirring constantly with a wooden spoon, for 5 to 10 minutes, until it's thickened and the cream coats the back of the spoon.
  • Pour the cream through a fine-meshed sieve into a bowl. Add the ground espresso beans, coffee liqueur, and vanilla and refrigerate until completely chilled.
  • Pour the espresso cream into an ice-cream freezer and freeze according to the manufacturer's directions. Mix in the chopped espresso beans, spoon into a container, and allow to freeze for a few hours. Soften slightly before serving.

4 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
2 tablespoons (1/4 stick) unsalted butter
1 1/2 pints pistachio gelato or ice cream
1 pint vanilla gelato or ice cream
Unsweetened whipped cream
Chopped pistachios

Steps:

  • Bring amaretto and preserves to boil in saucepan. Reduce heat to medium; boil gently until mixture is reduced to 3 tablespoons, stirring often, 3 to 4 minutes. Remove from heat. Add cherries; let soak at room temperature at least 3 hours. DO AHEAD: Can be made 1 day ahead. Cover; chill.
  • Bring 2/3 cup cream, honey, and espresso powder to simmer in another small saucepan over medium heat. Remove from heat. Add chocolate and butter; whisk until smooth. DO AHEAD: Fudge sauce can be made 1 day ahead. Cover and chill. Rewarm just until pourable before using.
  • Spoon 1 tablespoon fudge sauce into each of 6 dessert glasses. Add 1 scoop pistachio gelato and 1 scoop vanilla gelato to each glass. Drizzle 1 tablespoon fudge sauce over gelato on each. Top with whipped cream, cherry mixture, and pistachios.

Steps:

  • Mix sugar, butter, cornstarch, and espresso powder together in a saucepan until blended. Stir in milk. Bring to a boil over medium heat; cook and stir until thickened, about 2 minutes. 50g unsalted butter , softened, plus extra for the tin
2 tsp espresso powder , dissolved in 2 tsp hot water, plus extra for the tin
100g chocolate (70% cocoa solids), broken into squares
45g Bournville bar , broken into squares
50g golden caster sugar , plus 1 tbsp
1 large egg , separated
seeds from ½ a vanilla pod , or 1/2 tsp vanilla extract
4 tbsp plain flour , sifted
4 tbsp golden syrup
coffee or vanilla ice cream, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter four wells of a muffin tin, and sprinkle some espresso powder into each.
  • In a pan, gently melt half of each of the chocolates with the butter until smooth. Stir in 50g sugar, then take off the heat and cool for a few mins. Stir in the coffee, egg yolk, vanilla and flour until even.
  • Beat the egg whites with electric beaters or a balloon whisk until foamy and thickened. Add 1 tbsp sugar and whisk until it forms shiny soft peaks. Take care not to overwhisk - softer is better if you're not sure.
  • Stir about 1/3 of the egg whites into the chocolate batter to loosen, then carefully fold in the rest of the whites using a large metal spoon or a spatula.
  • Spoon into the prepared tin, then bake for 10-12 mins or until the cakes are just starting to dome in the middle. Cool the cakes in the tin for 15 mins. In a small pan, melt the remaining chocolates and golden syrup together with 3 tbsp hot water, and whisk until silky smooth. Turn out the cakes and serve warm in a puddle of the syrup and topped with ice cream.

1 cup milk
1/2 cup heavy cream
1 vanilla bean
4 egg yolks
1/3 cup sugar
1/4 cup strong espresso coffee

Steps:

  • Pour the milk and heavy cream into a heavy-bottomed pot. On a cutting board, split the vanilla bean down the middle and, using the top of your knife, scrape all the seeds into the milk. Add the bean pod to the milk and bring the milk gently to a boil over medium heat, being careful not to scorch the milk or allow it to boil over. Lower the heat and simmer for 10 minutes, uncovered. Remove from the heat and allow the vanilla bean to steep in the milk for another 5 minutes.
  • Meanwhile, in the bowl of an electric mixer, whip the egg yolks and sugar together at medium speed for 5 minutes. Remove the vanilla bean from the milk, then stir several tablespoons of the hot milk into the egg yolk-sugar mixture to temper the eggs.
  • Fill a large bowl halfway with ice water. Return the pot of milk to the stove and, over low heat, add the egg yolk-sugar mixture in a slow, steady stream, stirring it in with a wooden spoon. Stir the coffee into the sauce with a wooden spoon and continue to cook for 7 to 8 minutes, stirring constantly, until the custard has thickened and coats the back of the spoon. Remove from the heat and cool completely by setting the bottom of the pot in ice water and stirring to release heat. Once cool, the sauce can be covered and refrigerated for up to 24 hours.

2/3 cup finely ground amaretti (Italian almond macaroons; about 17; use a food processor)
1/4 cup sliced almonds with skin, toasted, cooled, and finely ground (in processor)
3 tablespoons unsalted butter, melted and cooled
For tortoni filling:
3 large egg whites, at room temperature 30 minutes
1/4 cup sugar
1/2 tsp cream of tartar
1 1/4 cups chilled heavy cream
2 tablespoons Disaronno Amaretto or other almond-flavored liqueur
3 1/2 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked), shaved with a vegetable peeler
1/4 cup sliced almonds with skin, toasted and cooled
For sauce:
1/3 cup heavy cream
3 tablespoons light corn syrup
3 tablespoons packed dark brown sugar
2 tablespoons instant-espresso powder
2 tablespoons unsweetened cocoa powder
3 1/2 ounces fine-quality bittersweet chocolate (no more than 60% cacao if marked), finely chopped
1/2 teaspoon pure vanilla extract
Equipment:
a small offset spatula

Steps:

  • Make crust:
  • Butter a 9- by 5-inch loaf pan and line bottom and short sides with a strip of parchment paper, leaving 4 inches of overhang on each end.
  • Stir together ground cookies, ground almonds, and butter, then firmly press over bottom of pan. Freeze until firm, about 30 minutes.
  • Make tortoni filling:
  • Beat egg whites with sugar, cream of tartar, and 1/8 tsp salt in a large metal bowl set over a large saucepan of simmering water using a handheld mixer at medium-high speed until whites hold soft peaks and an instant-read thermometer registers 170°F, about 7 minutes.
  • Remove bowl from pan and continue to beat meringue until it just holds stiff peaks, about 2 minutes.
  • Beat cream with Amaretto in another bowl at medium speed using cleaned beaters until it just holds stiff peaks. Fold in half of meringue gently but thoroughly. Fold in remaining meringue along with chocolate. Spoon over crust, smoothing top with offset spatula. Sprinkle with almonds. Freeze, uncovered, until firm, about 3 hours.
  • Make sauce:
  • Bring cream, corn syrup, brown sugar, espresso powder, cocoa, 1/8 tsp salt, and half of chopped chocolate to a boil in a small heavy saucepan over medium heat, stirring until chocolate is melted. Reduce heat and cook at a slow boil, stirring occasionally, 5 minutes. Remove from heat. Stir in vanilla and remaining chocolate until smooth. Cool to warm.
  • To serve:
  • Dip bottom of loaf pan in 1 inch warm water in a roasting pan 10 seconds, then lift tortoni out of pan using parchment paper. Transfer to a platter. Peel paper from tortoni.
  • Let stand 5 minutes to soften slightly. Cut into 6 triangular wedges. Thin sauce with additional cream if necessary and serve with tortoni.

8 ripe bananas, peeled, sliced

8 ounces semisweet chocolate, chopped
1/2 cup unsalted butter, cut into pieces
3 (1 pint) baskets strawberries, hulled, halved

Steps:

  • Stir sugar and 6 T water in heavy large saucepan over medium-low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down the sides of pan with pastry brush dipped into water and swirling pan. Remove from heat.
  • Immediately add 1 1/2 cups water and cream (mixture will bubble vigorously). Return mixture to medium heat and stir until caramel bits melt and mixture is smooth. pour into large bowl. Refrigerated caramel mixture until cold, about 4 hours.
  • Puree bananas and lemon juice in batches in processor. Add puree to caramel mixture and whisk until smooth. Transfer mixture to ice cream maker and process according to manufacturer's instructions. Tranfer to container, cover and freeze until firm, about 2 hours. (can be made 3 days ahead. Keep frozen.).
  • Spoon ice cream into 8 bowls. Drizzle with Chocolate-Espresso Sauce. Top with strawberries and serve.
  • Chocolate Espresso Sauce:.
  • Bring water, cream, sugar and espresso powder to simmer in heavy medium saucepan, stirring occasionally. Reduce heat to low. Add chocolate and butter and whisk until melted and smooth. Steps:

  • In a small bowl whisk together the flour, sugar, espresso powder and salt.
  • In a blender combine the milk, water, melted butter, and eggs.
  • Pulse a few times to lightly blend.
  • Add the dry ingredients and blend until smooth.
  • Cover and chill-up to 1 hour.
  • Heat a non stick crepe pan or skillet over medium heat. (if using a skillet use a touch of butter to prevent sticking).
  • Pour 1/4 cup of the crepe batter into the pan.
  • Quickly tilt pan in all directions so batter covers pan with a thin coat.
  • cook for 30 to 35 seconds.
  • Carefully lift crepe with a spatula and turn.
  • Cook for an additional 30 seconds.
  • Place cooked crepe on a towel.
  • Repeat with remaining batter.
  • Makes 12 crepes.
  • In a small saucepan over medium heat combine half-and-half and honey.
  • Cook for 3 minutes, stirring often.
  • Remove from heat and add the chopped chocolate.
  • Stir until melted and smooth.
  • Fold each crepe in half, fold in half again.
  • Place each crepe on a plate.
  • Top each with 1/2 cup of ice cream-drizzle on 4 teaspoons of chocolate sauce on each.
  • Top with chocolate curls and dust with espresso powder.

Steps:

  • For sauce: Cook water, sugar and espresso in heavy medium saucepan over low heat, stirring until sugar dissolves. Add chocolate and butter. Stir until chocolate and butter are melted and sauce is smooth. Cool completely. (Sauce can be prepared 3 days ahead. Cover and refrigerate. Bring sauce to room temperature before using.)
  • For crust: Oil 9-inch springform pan. Mix 2 cups crumbs and butter in medium bowl. Press firmly into bottom of prepared pan. Freeze until firm.
  • For filling: Soften chocolate ice cream in refrigerator until spreadable but not melted. Spread in pan and smooth top. Freeze until firm.
  • Spoon 1/2 cup sauce over ice cream and sprinkle with remaining 1 cup cookie crumbs. Freeze until firm.
  • Soften coffee ice cream in refrigerator until spreadable but not melted. Spread in pan. Smooth surface and freeze until firm. Spread 1/2 cup sauce over coffee ice cream. Sprinkle with Almond Roca and freeze until firm. (Can be prepared 3 days ahead. Cover tightly.)
  • Soften cake slightly in refrigerator if necessary. Rewarm remaining sauce over low heat until lukewarm, stirring frequently. Remove pan sides. Cut cake into wedges. Serve, passing warm mocha sauce separately.
