3 (15 ounce) cans chickpeas, drained
6 tablespoons olive oil
1 tablespoon salt, divided, or to taste
2 teaspoons hot sauce
2 teaspoons ground paprika
1 teaspoon garlic powder
1 teaspoon chili powder
½ teaspoon ground black pepper
¼ teaspoon ground cumin

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine drained chickpeas, olive oil, 2 teaspoons salt, hot sauce, paprika, garlic powder, chili powder, black pepper, and cumin in a large bowl. Spread evenly over 2 baking sheets.
  • Bake in the center of the preheated oven, stirring every 10 to 15 minutes, until chickpeas are golden and look dry on the outside, about 45 minutes. Remove from oven and sprinkle with remaining 1 teaspoon salt. Let cool before serving, 5 to 10 minutes.

Perfectly roasted chickpeas using a super easy, foolproof method.

2 cans chickpeas (low-sodium or no-salt-added)
oil for misting
spices (i use paprika and cayenne pepper)

Steps:

  • Drain and rinse the chickpeas.
  • Line a baking sheet with paper towels. Pour the chickpeas on top and use more paper towels to dry them off as well as possible.
  • Remove the paper towels.
  • Mist the chickpeas with oil, sprinkle with spices and shake pan gently until all the chickpeas are well coated.
  • Place pan in a cold oven.
  • Set oven to 425 degrees F and let roast for 25-30 minutes, shaking the pan halfway thru. The timer starts as soon as you put them in a cold oven and turn it on.
  • When the timer goes off, stir once more, turn the oven off and leave pan in the oven for 3-4 hours.
  • Remove and let cool completely before transferring to a storage container.

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray a baking sheet with vegetable oil cooking spray.
  • Put the chickpeas on a clean kitchen towel or several paper towels and dry thoroughly. In a medium bowl, toss the chickpeas with olive oil to coat. Sprinkle with the smoked salt and toss again. Transfer in an even layer to the prepared baking sheet.
  • Bake, shaking the pan halfway through the baking time, until the chickpeas are crunchy, 50 minutes to 1 hour. Let cool at least 1 hour; the chickpeas will become crunchier as they cool. These are best eaten within 1 day.

1 pound dried chickpeas
1/4 cup plus 1 teaspoon red wine vinegar
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 1/2 teaspoons kosher salt, divided

Steps:

  • Place the chickpeas in a medium bowl and cover with 2 inches of water. Soak overnight.
  • Heat the oven to 400 degrees F.
  • Drain the chickpeas, return to the mixing bowl, and set aside. Place 1/4 cup vinegar, mustard, and 1 teaspoon salt into a small lidded container and shake vigorously to combine. Add the olive oil and shake to combine. Pour the dressing over the chickpeas and toss to combine.   • For the chickpeas: Preheat the oven to 400 degrees F.
  • Put a few layers of paper towels on your work surface. Strain and rinse the chickpeas in a colander, then shake off as much water as possible. paprika

black pepper (freshly ground is best)

Steps:

  • Preaheat the oven to 400 degrees.
  • Drain and rinse chic peas.
  • Place chic peas in a large bowl and add the olive oil.
  • Stir well ensuring that all the chic peas are evenly coated.

2 (15 ounce) cans chickpeas, drained and rinsed

Steps:

  • Preheat oven to 400°. Line a large, rimmed baking sheet with parchment paper or foil.
  • In a small bowl, crush rosemary and salt together between your fingers so that the rosemary needles are broken up. Use a mortar and pestle if you have one. Put chickpeas in a medium bowl and add olive oil, salt and rosemary mixture. Toss until chickpeas are well coated.
