Cottage Cheese Pasta With Tomatoes, Scallions and Currants image

Satisfying the same creamy urge as mac and cheese, noodles with cottage cheese is a comforting Eastern European staple that's sometimes topped with golden fried onions and a dusting of black pepper and cinnamon. This version trades caramelized onions for slivers of sharp raw scallion to contrast with the richness of the cottage cheese, which melts into a sauce upon contact with the hot pasta. The currants lean into the cinnamon's sweetness, while halved cherry tomatoes and mint make the dish juicy and fresh. It's an unusual take on the original dish that's easy to riff on - feel free to add or leave out ingredients to make it your own.

1/4 cup dried currants (or chopped raisins)
1/4 teaspoon salt, plus more for boiling the pasta
1 pound short pasta, such as farfalle, cavatelli or fusilli
4 scallions, white and green parts, thinly sliced
1 cup halved cherry tomatoes
1 to 2 tablespoons fresh lemon juice, plus more to taste
2 tablespoons extra-virgin olive oil, plus more for serving
1 cup whole milk cottage cheese (or ricotta)
1 teaspoon freshly ground black pepper, plus more for serving
1/2 cup torn mint leaves, plus more for serving
1/2 cup coarsely chopped parsley, plus more for serving
Ground cinnamon, for serving (optional)
Flaky sea salt, for serving

Steps:

  • Bring a large pot of water to a boil. Put currants in a small bowl and ladle a little of the boiling water over them to cover. Let soak for 10 minutes, then drain.
  • Meanwhile, salt the remaining water in the pot. When it returns to a boil, add pasta. Cook according to package instructions until al dente, usually 1 minute less than the package directs. Drain pasta, reserving 1/2 cup pasta cooking water.
  • In a large serving bowl, combine scallions, tomatoes, lemon juice and 1/4 teaspoon salt.
  • When the currants are soaked, add them to the bowl with the tomatoes and toss to combine. Stir in 2 tablespoons olive oil.
  • Add pasta to the serving bowl, along with cottage cheese, pepper and a few splashes of reserved pasta water (about 1/4 cup), and toss until evenly coated. If pasta looks dry, add a little more pasta cooking water, a tablespoon at a time. Stir in herbs. Taste, and add more salt and lemon, if needed.
  • To serve, top with a dusting of ground cinnamon (if you like), flaky salt, a lot of black pepper, and more olive oil and herbs. Serve hot, warm or at room temperature.

1 stalk celery, sliced
3 tablespoons olive oil
1 onion, quartered
1 clove garlic, chopped
1 head cauliflower, cut into small florets
1 (28 ounce) can whole peeled tomatoes, drained and mashed
1 teaspoon dried sage
salt and ground black pepper to taste
2 tablespoons chicken broth, or as needed
1 (8 ounce) package linguine pasta
1 cup grated Parmesan cheese

Steps:

  • Put a celery slice in a deep skillet with a cover; add olive oil. Heat olive oil over medium-high heat until celery slice is sizzling, 3 to 5 minutes. Add remaining celery, onion, and garlic to olive oil; turn heat to medium. Cook and stir onion mixture until slightly tender, about 5 minutes.
  • Mix cauliflower, tomatoes, sage, salt, and pepper into onion mixture; cook and stir over medium-high heat until bubbling, about 5 minutes. Cover skillet with lid, reduce heat to low, and cook until a knife slides easily into cauliflower, about 15 minutes. Add chicken broth if tomato and cauliflower sauce begins to burn.
  • Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain and transfer to a serving bowl.
  • Pour tomato and cauliflower sauce over pasta; add Parmesan cheese. Toss to coat.

My Awesome Cottage Cheese Tomato Sandwich image

Very filling, a low calorie comfort food that you can eat at any time of day. Recipe is easily doubled, trippled, etc. I like to make this in my toaster oven but it can easily be made in a toaster and a broiler or on a grill.

1 slice light bread (40 calories per slice)
1 slice tomatoes
1 tablespoon fat-free cottage cheese
1 pinch chili powder

Steps:

  • Set toaster oven on "toast" and place a slice of bread and a slice of tomato inside. After the bread is browned as much as you like it (I like mine VERY dark as you can see in the picture) flip it over. Leave the tomato.
  • After the second side is done, take the tomato and bread out of the oven and set it to "broil.".
  • At this step i also like to remove the skin from the tomato slice but that it optional. Place tomato on bread and spread cottage cheese on top. Sprinkle with chili powder.
  • Place under the broiler and broil until cottage cheese starts to melt.

3 unpeeled garlic cloves
5 scallions
1 1/2 pounds medium to large tomatoes, halved
2 tablespoons extra-virgin olive oil, plus more, for brushing
Kosher salt
Freshly ground black pepper
4 ounces fresh mozzarella, cut into 1/2-inch cubes
10 ounces penne or other short pasta

Steps:

  • Light a grill and preheat for at least 10 minutes or preheat a grill pan. Oil the grates. Meanwhile, soak 1 bamboo skewer for 10 minutes. Thread the garlic on the skewer.
  • Brush the scallions and the cut sides of the tomatoes with olive oil and season with salt and pepper.
  • Grill the garlic and scallions over high heat, turning frequently, until blistered in spots and softened, about 2 minutes. Grill the tomatoes cut side down until nicely charred, about 2 minutes. Flip and grill until the skin starts to shrink, about 1 minute.
  • Peel the garlic and finely chop, then transfer to a large bowl. Thinly slice the scallions crosswise and transfer to the bowl. Pull off the tomato skins, dice the tomatoes and add them to the garlic and scallions.
  • Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Reserve 1/2 cup of the pasta water and drain. Add the hot pasta, the cheese and the 2 tablespoons of olive oil to the tomatoes and toss. Add the pasta water, little by little, if you need to loosen the sauce.
  • Season the pasta with salt and pepper and serve immediately.
