CUBAN PICADILLO

2 tablespoons olive oil
1 large yellow onion, finely chopped (about 2 cups)
4 cloves garlic, minced
2 bay leaves
1 pound ground beef or combination of beef chorizo, and pork
1/3 cup dry white wine or dry sherry
10 cherry tomatoes, chopped or 1 (8-ounce) can diced tomatoes with juice
1/3 cup tomato paste
1/3 cup chopped pimento stuffed Spanish olives with 1 tablespoon brine from jar
1/3 cup raisins
2 teaspoons dried oregano
2 teaspoons ground cumin
1/4 teaspoon cayenne pepper, optional
Salt and freshly ground black pepper

Steps:

  • Heat oil in a large skillet over medium-high heat. Add onion, garlic, and bay leaves and saute until onion is soft, stirring frequently, about 4 minutes.
  • Add ground beef to skillet and cook until browned. Once the meat is browned, carefully away from the flame, tilt pan and remove excess fat with a large spoon.
  • Add the white wine and stir for another minute. Then add the chopped cherry tomatoes, tomato paste, pimento stuffed Spanish olives, raisins, dried oregano, cumin and cayenne pepper. Simmer over low heat for another 8 minutes, stirring occasionally. Season with salt and pepper.
  • Serve warm:
  • As a filling for empanadas or tacos
  • Over white rice with fried plantains or black beans
  • With a side salad and black beans
  • To make Picadillo soupier for serving over rice, add additional wine, chicken or beef stock.

1 tablespoon jamaican caribbean jerk seasoning
2 teaspoons ground cumin
2 teaspoons paprika
3 tablespoons olive oil, divided
6 boneless skinless chicken breast halves
1 medium onion, chopped
1/2 cup seeded and chopped green bell pepper
1 (12 ounce) jar red currant jelly
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 1/2 teaspoons Tabasco sauce
1 1/2 cups seeded and diced plum tomatoes
1/3 cup pimento stuffed olive, chopped
2 tablespoons currants
2 tablespoons capers, drained
2 tablespoons chopped fresh basil
2 sprigs basil
lemon wedge (to garnish)

Steps:

  • COMBINE jerk seasoning, cumin and paprika in small bowl.
  • Stir in 1 1/2 tablespoons oil to form a paste.
  • Rub paste over both sides of chicken.
  • Heat remaining oil in large nonstick skilled over medium heat until hot.
  • Add chicken; cook for 5 minutes.
  • Turn, continue to cook for 4 minutes.
  • Transfer to a plate; cover and keep warm.
  • ADD onion and bell pepper to skillet.
  • Cook, stirring frequently, over medium high heat for 3 minutes.
  • Add jelly, Worcestershire sauce, vinegar and Tabasco sauce.
  • Cook until jelly melts, about 1 minute.
  • Add tomatoes, olives, currants and capers; cook for 3 minutes.
  • Reduce heat to medium; return chicken to skillet and turn to coat.
  • Cover, and continue to cook until chicken is cooked through, about 10 minutes.
  • TRANSFER chicken to serving plates; top with Currant Picadillo mixture.
  • Sprinkle with chopped basil.
  • Garnish with basil and lemon wedges.

1/2 cup olive oil
8 cloves garlic, minced
2 large onions, chopped
1 large green pepper, diced
1 jalapeno pepper, minced
1 bunch cilantro, chopped (no stems)
3 tablespoons capers
1/2 cup stuffed green olive
4 fresh bay leaves
4 -5 tablespoons crushed cumin seeds
1 lb lean ground beef
1 (16 ounce) can diced tomatoes
1/2 cup red wine vinegar
1 pinch cayenne pepper
1/2 cup diced pimento (optional)
4 eggs, fried (optional)
steamed rice (optional)

Steps:

  • Heat olive oil in a large skillet and add the sofrito (garlic, onions, green pepper, jalapeno, cilantro, capers, olives, bay leaves and cumin seeds).
  • Cook the sofrito until it is fragrant and the onions are translucent; remove from pan and set aside.
  • Brown ground beef in pan and drain fat.
  • Add sofrito to the beef along with the tomatoes, vinegar, and cayenne pepper.
  • Simmer for 45 minutes on low heat.
  • Serve over rice, with a fried egg on top, garnished with pimiento, if desired.
  • Another option to serve is to spoon it into corn tortillas, with lettuce, tomato, green onions, jalapenos, cheese, and hot sauce, like a taco.

MEXICAN HASH (PICADILLO)

Picadillo is a dish that is eaten in Mexican homes at least once a week. It's easy to prepare and also quite versatile, since you can eat it as is, or for fillings for chiles rellenos, tacos, burritos, tamales, etc.

6 small tomatoes
3 cups peeled and diced potatoes
4 cloves peeled garlic, finely chopped
2 medium onions, chopped
1 clean poblano chiles or 1 green pimiento
1/4 cup olive oil
1 tablespoon dark brown sugar
1/4 cup vinegar
1 tablespoon capers
1/2 cup tomato juice or 1/2 cup chicken consomme
2 teaspoons salt
1 dash pepper, to taste

Steps:

  • First, stir fry potatoes in olive oil.
  • Take potatoes out from oil, set apart.
  • Into the remaining oil in the skillet, add the ground meat, tomatoes, salt, garlic, and pepper and mix well.
  • Once the meat is partially cooked, add potatoes and rest of ingredients.
  • Simmer on medium heat for about 30 minutes.

Picadillo is a ground meat hash with vegetables. It usually has capers and green olives in it as well. This recipe may be served over rice or used as a filling for sweet peppers, tortillas, taco shells or pita breads, even spooned over toasted buns. Source of recipe: Anne Lindsay's New Light Cooking. When I made this I found the flavour of 2 tbsp of Worcestershire sauce to be too strong for my taste. I would try 1 tbsp and then taste it. I would also add the same quantity of vinegar so if you only added 1 tbsp Worcestershire sauce then only use 1 tbsp vinegar. Note: May substitute 14 oz can tomato sauce for tomato paste and water but salt content will be higher.

1 lb lean ground beef
2 onions, chopped

2 small sweet green peppers, chopped
1 (5 1/2 ounce) can tomato paste
1 cup water
1/2 cup raisins
1/4 cup green olives, pitted and chopped
2 tablespoons capers, drained
1 -2 tablespoon Worcestershire sauce (or to taste)
1 -2 tablespoon red wine vinegar (or to taste)
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Using a large nonstick skillet, cook beef over medium heat, breaking up with spoon, until browned and drain off any fat.
  • Add onions and cook, stirring often, for 5 minutes or until nearly tender.
  • Add garlic and peppers, and cook, stirring often, for 2 to 3 minutes or until onions are softened.
  • Mix tomato paste with water and stir into beef mixture along with raisins, olives, capers and Worcestershire sauce (original recipe called for 2 tbsp Worcestershire sauce but I found that to be too much).
  • Simmer for 5 minutes to blend flavors then stir in vinegar (I would add the same amount of vinegar as Worcestershire sauce), salt and pepper.

Steps:

  • Heat oil in large pot over medium-high heat. Add onion, garlic, and bay leaves; sauté until onion is soft, about 5 minutes. Add beef; sauté until cooked, breaking up with back of fork, about 7 minutes. Add all remaining ingredients. Simmer until picadillo thickens, stirring occasionally, about 8 minutes. Season to taste with salt and pepper. Discard bay leaves. Serve picadillo warm.

Picadillo is one of the Cuban dishes I discovered while living in Miami. This version is always a hit with my family and friends. I serve picadillo over white or yellow rice. Black beans and garlic bread make a nice accompaniment.

2 lbs lean ground beef
2 tablespoons olive oil
1 medium onion, chopped
1 medium green bell pepper, chopped
4 garlic cloves, minced
2 (8 ounce) cans tomato sauce
1/4 cup raisins

2 tablespoons capers
1/4 cup diced pimento
1 cup frozen green pea
1 small bay leaf
1/4 cup white wine
1/2 teaspoon salt

Steps:

  • Cook ground beef in a large pan over medium heat until done. Remove from pan, drain, and set aside.

2 large onions, chopped
2 tablespoons olive oil
3/4 cup white wine or beef broth
2 pounds lean ground beef (90% lean)
1-1/4 cups crushed tomatoes
1 can (8 ounces) tomato sauce
1/3 cup tomato paste
4 garlic cloves, minced
2 teaspoons dried oregano
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon pepper
1 cup raisins
1 medium green pepper, chopped
3/4 cup pimiento-stuffed olives, coarsely chopped
2 tablespoons chopped seeded jalapeno pepper
Hot cooked brown rice

Steps:

  • In a large skillet, cook onions in oil over low heat for 15-20 minutes or brown, stirring occasionally. Add wine; cook and stir 2 minutes longer. Transfer to a 3- or 4-qt. slow cooker., In the same skillet, cook beef over medium heat until no longer pink. Add to slow cooker. Combine the tomatoes, tomato sauce, tomato paste, garlic and seasonings; pour over top. Cover and cook on low for 4-6 hours or until heated through., Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes. Drain. Stir the green pepper, olives, jalapeno and raisins into the slow cooker. Cover and cook 30 minutes longer. Serve with rice.

2 large russet potatoes, peeled and diced into 1/2 inch cubes
4 ounces yellow onions, finely diced
4 ounces green bell peppers, finely diced
1 tablespoon fresh garlic, finely minced
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon coarse black pepper
1 teaspoon cumin
2 large tomatoes, cored, peeled, and cut into 1/2 inch pieces

Steps:

  • Heat a large skillet and, when hot, add the olive oil.
  • Add the ground beef, crumbling as you put it in the skillet.
  • When lightly browned, add the onions, bell pepper, garlic, and all the spices.
  • Cook for 10 minutes, stirring often, and then add the diced potatoes.
  • Cover, reduce the heat to medium low and cook for 40 minutes or until the potatoes are tender.
  • Add the tomatoes, cover, and simmer for 5 minutes.
  • Remove from the heat, put into a bowl and serve over white rice or with hot flour tortillas.
