  • Heat oil in a large skillet over medium heat; whisk in the flour, salt and pepper until smooth.
  • Cook and stir over medium heat until browned (about 10 minutes, the mixture MUST be browned!).
  • Gradually whisk in milk or cream; cook/whisk until smooth and thickened (no lumps must remain).
  • If the gravy becomes too thick add in a litle more milk and whisk until smooth and heated.

  • Mix all ingredients well and store in a tightly sealed container.

1/3 cup all-purpose flour

Steps:

  • With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
  • Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.

2 Tbsp (30 mL) butter, margarine, or vegetable oil
2 Tbsp (30 mL) all-purpose flour
1 to 2 cups (250 to 500 mL) milk
1/4 tsp (1.25 mL) salt
1/4 tsp (1.25 mL) ground black pepper
1/4 tsp (1.25 mL) paprika (optional)
1/4 tsp (1.25 mL) garlic salt (optional)

Steps:

  • Heat the butter in a small saucepan. Melt 2 Tbsp (30 mL) of butter in a small to medium saucepan over medium heat. Let the butter melt completely before moving on to the next step, but try to avoid letting it boil or steam. You could also use a large skillet to make country gravy instead of a saucepan. If you were cooking meat in your skillet before you started cooking the gravy, you can use the leftover pan drippings from the cooked meat instead of or alongside the butter. Reduce the amount of butter so that the butter and pan drippings combined equal no more than about 2 Tbsp (30 mL) of fat. Vegetable oil can also be used instead of butter, but it is a little less traditional.
  • Whisk in the flour and seasonings. Add the flour, salt, pepper, paprika, and garlic salt to the butter in the pan, quickly whisking the ingredients together into the butter until the mixture forms a smooth paste. The flour, salt, and pepper are necessary. The flour and butter combine to form a thickening agent known as a "roux," which is a vital component of the gravy. The salt and pepper are basic seasonings needed in order to provide the gravy with country-style flavor. The paprika and garlic salt are optional, however, and many basic country gravy recipes do not include them. The spices add a hint of extra flavor to the gravy without being too overpowering.
  • Cook until lightly browned. Cook the roux over medium heat for about 10 minutes, stirring frequently to prevent burning. If you want the gravy to remain whiter, do not let the roux brown. Only brown the roux if you want something slightly deeper in color and flavor. Do not cover the pan.
  • Slowly whisk in the milk. Add the milk a little at a time, whisking thoroughly the entire time so that lumps do not form. Adding too much milk at once will make it almost impossible to break down the lumps and create a smooth gravy. Only add about 1/4 cup (60 mL) at a time. Start with roughly 1 cup (250 mL) of milk. If you do not like how thick the gravy is, add up to an additional 1 cup (250 mL) to thin it out.
  • Cook until thickened. Continue cooking the gravy, stirring frequently, until it bubbles and thickens. This should take another minute or two. Again, note that more milk can be added if you prefer a thinner gravy.
  • Serve warm. Remove the thickened gravy from the heat and serve immediately.

2 teaspoons seasoned salt
Freshly ground black pepper

3 pounds cube steak (tenderized round steak that's been extra tenderized)
Kosher salt
1/2 cup canola or vegetable oil
1 tablespoon butter
1/3 cup all-purpose flour
3 to 4 cups whole milk
1/2 teaspoon seasoned salt
Freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • For the steak: Begin with setting up an assembly line of dishes. Mix the milk with the eggs in one; the flour mixed with the seasoned salt, 1 1/2 teaspoons black pepper, paprika and cayenne in another; and the meat in a third. Then have one clean plate at the end to receive the breaded meat.
  • Work with one piece of meat at a time. Sprinkle both sides with kosher salt and black pepper, then place it in the flour mixture. Turn to coat. Place the meat into the milk/egg mixture, turning to coat. Finally, place it back in the flour and turn to coat (dry mixture/wet mixture/dry mixture). Place the breaded meat on the clean plate, then repeat with the remaining meat.
  • Heat the oil in a large skillet over medium heat. Add the butter. Drop in a few sprinkles of flour to make sure it's sufficiently hot. When the butter sizzles immediately, you know it's ready. (It should not brown right away, if it does, the fire is too hot.) Cook the meat, 3 pieces at a time, until the edges start to look golden brown, about 2 minutes each side. Remove the meat to a paper towel-lined plate and keep them warm by covering lightly with another plate or a sheet of foil. Repeat until all the meat is cooked.
  • After all the meat is fried, pour off the grease into a heatproof bowl. Without cleaning the skillet, return it to the stove over medium-low heat. Add 1/4 cup of the grease back to the skillet and allow it to heat up.
  • For the gravy: When the grease is hot, sprinkle the flour evenly over the grease. Using a whisk, mix the flour with the grease, creating a golden-brown paste. Add more flour if it looks overly greasy; add a little more grease if it becomes too pasty/clumpy. Keep cooking until the roux reaches a deep golden brown color.
  • Pour in the milk, whisking constantly. Add the seasoned salt and black pepper to taste and cook, whisking, until the gravy is smooth and thick, 5 to 10 minutes. Be prepared to add more milk if it becomes overly thick. Be sure to taste to make sure gravy is sufficiently seasoned.
  • Serve the meat next to a big side of mashed potatoes. Pour gravy over the whole shebang!

8 ounces breakfast sausage links, casings removed and meat broken up
4 strips bacon, sliced crosswise
½ cup chopped green onions (light parts only)
⅓ cup packed all-purpose flour

salt and freshly ground black pepper to taste
2 ½ cups cold milk
1 tablespoon chopped green onion
1 pinch cayenne pepper for garnish

Steps:

  • Melt butter in a large skillet or saucepan over medium heat; cook sausage and bacon in the hot butter, stirring to break the sausage up into small pieces, until sausage is browned and bacon is almost crisp, about 10 minutes.   • cooks out. Continue whisking and letting the butter and flour cook. It'll start smelling buttery and good. You'll see the roux paste get a bit darker in color as it cooks.... That's good! Let it develop to a blond color. This is a simple roux and is the base for country gravy (and other gravies, soups and sauces).
  • After the flour and butter roux are done, whisk in milk until smooth. It will start thickening, but continue whisking!
  • Once it thickens to a nice thick gravy, it's time to add salt and pepper to season it.

  • Heat the Lard. To make country gravy, you can use any non-stick skillet you’d like. My preference is to use a large cast iron skillet. This skillet will make enough for my family of five to enjoy a decent sized breakfast with enough gravy leftover for those who want to have seconds.
  • Fry the Sausage. This step is optional, but I’m a fan of sausage gravy. If you’re using store-bought sausage, you may not need to add lard to your skillet.
  • Make Your Gravy Mix. If you skipped the previous step, you could pick up here to make basic and delicious milk gravy. While the lard and pan are heating up, it’s time to make the gravy mix.
  • Throw It in the Pan. After all the flour and milk have been whisked together, it’s time to toss it all in the skillet. Mix the gravy around in the skillet and stir continuously to avoid lumps.
  • Making Corrections to your Country Gravy. This way of making gravy is simple, but there may be a time when you notice your gravy is too thick or too thin.
