CHICKEN FRIED RICE

3 large eggs
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
4 boneless, skinless chicken breast halves, cut into thin strips
1 teaspoon sesame oil
1 large onion, finely chopped
2 garlic cloves, finely minced
4 cups cold, cooked rice
6 green (spring) onions, thinly sliced, plus more for garnish, optional
2 tablespoons soy sauce

Steps:

  • Beat eggs with a whisk in a small bowl and season with salt and pepper, to taste. Heat very little oil in a medium frying pan over medium heat and make an omelette using half the beaten eggs. Turn out onto a plate to cool (do not fold omelette). Repeat process with remaining beaten eggs. Place 1 omelette on top of the other, fold and coarsely chop. Set aside.
  • In a medium bowl, toss chicken strips with the sesame oil and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. Add 2 tablespoons more vegetable oil and when hot, stir in the cooked rice and green onions, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped cooked egg. If desired, garnish with additional sliced green onions.

4 boneless, skinless chicken breasts, pounded thin
Salt and freshly ground black pepper
2 cups all-purpose flour, seasoned with salt and pepper
4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
2 cups panko bread crumbs
1 cup vegetable oil or pure olive oil
Tomato Sauce, recipe follows
1 pound fresh mozzarella, thinly sliced
1/4 cup freshly grated Parmesan
Fresh basil or parsley leaves, for garnish
2 tablespoons olive oil
1 large Spanish onion, finely chopped
4 cloves garlic, smashed with some kosher salt to make a paste
Two 28-ounce cans plum tomatoes and their juices, pureed in a blender
One 16-ounce can crushed tomatoes
1 small can tomato paste
1 bay leaf
1 small bunch Italian parsley
1 Cubano chile pepper, chopped
Salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs.
  • Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some Tomato Sauce, a few slices of the mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes. Remove from the oven and garnish with basil or parsley leaves.
  • Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Cubano pepper, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.

I have three techniques for cooking the juiciest, most perfect chicken breast at home. You will learn techniques and tips for making the ultimate baked chicken breast, pan seared, and poached chicken.

1-2 chicken breasts
Kosher salt & pepper
Olive or avocado oil
1-2 chicken breasts
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
Kosher salt & pepper
Olive or avocado oil
1-2 chicken breasts
Water
1 bay leaf
1 teaspoon black peppercorns
Few sprigs of fresh rosemary (thyme, & sage)
2 garlic cloves (smashed)
4 thin slices of lemon
1.5 teaspoons kosher salt
¼ cup red onions (sliced)

Steps:

  • To cook the chicken breast in the pan, allow the breast to sit at room temperature for 20 minutes. Next, season the chicken breasts with a generous pinch of salt and few cracks of pepper. Pre-heat a cast iron pan over medium-high heat for 2 minutes, add 2 teaspoons of oil, wait 30 seconds so the oil can heat up and add the chicken breast attractive side down. Allow to cook undisturbed for 4 minutes, flip and cook another 3-4 minutes. Remove from pan, allow to rest 3-5 minutes, and enjoy.
  • To bake the chicken breast in the oven, pre-heat oven to 450 F. Drizzle a shot of oil on both side of the chicken breast and season with a generous pinch of salt, smoked paprika, and cumin on both sides along. Allow the chicken breast to sit at room temperature for 20 minutes. Place the chicken breast on a baking sheet and bake in the oven for 10 minutes, insert a probe thermometer and cook another 4-7 minutes, or until the internal temperature is 155F. Total baking time for the chicken breast will be about 15 minutes. Remove from oven, allow to rest 3-5 minutes with the thermometer still inside, and then enjoy.
  • To poach the chicken breast, place all of the ingredients in a shallow pan and cover with enough water so the chicken breast is submerge. Bring the pan to a bare simmer and then lower the heat to low and cook for 10 minutes. Use a probe thermometer and remove the chicken from the poaching liquid when it reaches 155 F. Allow chicken to rest 3-5 minutes and enjoy.

Natives of Barbados (who call themselves Bajans) love this fried chicken with fiery spices. It is a version of "seasoning up" as it's called on many islands. 4 lbs whole chickens
seasoning, mix (see below)
vegetable oil, for deep-frying
1 cup all-purpose flour
salt & freshly ground black pepper
2 eggs, lightly beaten
3 1/2 cups unseasoned breadcrumbs
2 medium onions
2 parsley sprigs, chopped
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh marjoram
1 tablespoon chopped fresh chives
1/2 teaspoon ground cloves
2 garlic cloves, chopped
2 scotch bonnet peppers or 2 jalapeno chiles, chopped
1 teaspoon paprika
1 lime, juice of
salt

Steps:

  • Bring a large pot of salted water to a boil.
  • Add chicken, then reduce heat, cover and simmer until chicken is tender, 30 to 40 minutes.
  • Prepare Seasoning Mix.
  • Drain chicken and pat it dry.
  • Cool completely, then cut into 8 serving pieces.
  • Cut a long, deep pocket in meaty part of each piece, filling each pocket with about 2 tablespoons of Seasoning Mix.
  • Heat oil in a deep-fryer or large skillet to 375F (190C) or until a 1-inch bread cube turns golden brown in 50 seconds.
  • On a large plate, combine flour, salt and pepper; coat chicken pieces, shaking off any excess flour.
  • Dip pieces into beaten eggs, then roll them in bread crumbs to coat thoroughly.
  • Fry in batches (without crowding) until golden brown, 2 to 3 minutes on each side.
  • Drain on paper towels.
  • Seasoning Mix:.
  • Peel and coarsely chop onions.
  • Place them with remaining ingredients in a blender or food processor fitted with the steel blade.
  • Process 1 to 2 minutes, until fairly smooth. (This mixture can be spooned into a jar and refrigerated several weeks for use as needed.).
