1/4 cup parsley leaves, packed
2 tablespoons rosemary leaves
2 tablespoons thyme leaves
2 cloves garlic, peeled
1/2 lemon, ends trimmed, cut into wedges and seeded
1 1/4 teaspoons coarse salt, plus more for sprinkling
1/4 teaspoon freshly ground black pepper, plus more for sprinkling
1 tablespoon extra-virgin olive oil
6 1/2 pound Cornish game hens
4 tablespoons butter, softened

Steps:

  • Place parsley, rosemary, thyme, garlic, lemon, salt, and pepper in a food processor. Blend until finely chopped. With machine running, add olive oil.
  • Loosen skin from the hens. Put 1 tablespoon of herb mixture under skin of each hen, smoothing to cover breasts. Place the birds on a large rimmed baking sheet, cover with plastic wrap, and refrigerate overnight.
  • Remove hens from refrigerator and bring to room temperature (about 1 hour). Preheat oven to 400 degrees.
  • Place hens on a clean rimmed baking sheet (it's okay if they touch). Brush butter over surface of hens and sprinkle generously with salt and pepper. Roast in oven, rotating pan once until golden brown and cooked through (meat thermometer should read 165 degrees when placed in the thigh), about 50 minutes.
  • Remove from oven and let stand at least 15 minutes before placing on individual plates. No carving necessary!

I love the idea of using Cornish hens because of the combo of dark and white meat. The hens are baked, but I want to try them on the grill when it gets warm.

4 (1 1/2 lb) rock cornish game hens, 6 lbs total
2 tablespoons oil
2 tablespoons lemon juice
2 tablespoons honey
2 teaspoons fresh thyme, chopped
2 teaspoons fresh oregano, chopped
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Rinse and pat dry hens. Cut out the backbone and split through the breastbone. Trim any excess skin or fat.
  • Place oil in a shallow pan and heat oven to 400 degrees.
  • In a small bowl, whisk together lemon juice, honey, thyme, and oregano. Season hens with salt and pepper.
  • Once pan is heated, place hens skin side down and brush with half of the honey mixture.
  • Bake for 30 minutes. Flip hens and brush with remaining honey mixture. Bake 20-30 minutes longer, or until internal temperature reaches 180 degrees. Place on a platter.
  • Drain drippings into a fat separator or skim as much fat as possible. Serve with hens.

1 large onion, quartered - divided
1 lemon, quartered - divided
4 sprigs fresh rosemary, divided

1 tablespoon chopped fresh basil

1 head garlic, peeled

½ cup white wine
½ cup chicken broth
3 tablespoons olive oil

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Arrange celery stalks next to each other in the bottom of a heavy roasting pan.
  • Place 1 onion quarter, 1 lemon quarter, and 1 sprig rosemary in the cavity of each hen. Rub outside of hens with 1 tablespoon olive oil; sprinkle with salt and lemon pepper. Arrange hens atop celery; sprinkle with tarragon, basil, thyme, and chopped rosemary. Scatter garlic cloves and 1 chopped onion around hens.
  • Bake in the preheated oven for 25 minutes. Reduce heat to 350 degrees F (175 degrees C).
  • Whisk wine, broth, and 3 tablespoons olive oil together in a bowl; pour over hens.
  • Cook hens until no longer pink at the bone and the juices run clear, about 50 more minutes, basting every 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Turn off oven and let hens rest in the oven for 10 more minutes.

2 Cornish game hens
3 cloves garlic
1/2 teaspoon ginger
1/2 cup soy sauce
1/2 cup honey
2 tablespoons olive oil
2 tablespoons orange juice

Steps:

  • Mix all the ingredients, except the hens, in a blender. Mix until the garlic is completely pureed into it.
  • Place the game hens into a seal-able container. Pour the mixture over the game hens and marinade in the fridge for a few hours, or even overnight.
  • When you are ready to cook, place them onto a foil lined baking sheet. Pour the remainder of the marinade over the hens.

6 Cornish game hens (20 to 24 ounces each)
1 cup lemon juice
3/4 cup butter, melted
1/2 teaspoon paprika
1-1/2 teaspoons dried thyme, divided

Steps:

  • Place the hens on a wire rack in a large roasting pan. In a bowl, combine lemon juice, butter, paprika and 1 teaspoon each of thyme, seasoned salt and garlic powder. 1/2 cup red wine vinegrette dressing
1 teaspoon chopped fresh rosemary leaves, plus 4 sprigs

1 teaspoon chopped fresh parsley leaves, plus 4 sprigs
4 Cornish game hens, rinsed
1 lemon, cut in quarters
1 (16-ounce) bag baby carrots
1 (16-ounce) bag frozen pearl onions, thawed
1/2 pound red potatoes, cut into small chunks
Salt and fresh ground black pepper

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with foil and put a baking rack on top.
  • Mix together the grill seasoning, dressing, and chopped herbs in a small bowl. Reserve 2 tablespoons. Generously rub the hens inside and out with the herb and dressing mixture. Stuff each hen with a sprig of each herb and a piece of lemon.
  • In a large bowl, combine the carrots, onions and potatoes with the reserved 2 tablespoons of dressing mixture, a generous pinch of salt and pepper. Put the vegetables in a large roasting pan and arrange the hens on top. Roast them until the juices run clear and an instant-read thermometer registers 180 degrees F when inserted into the thickest part of the thigh, about 50 to 55 minutes. Remove the pan from the oven, cover with foil and let the hens rest for 5 minutes before serving. Transfer the hens to a large serving tray with the roasted vegetables.

1/3 cup grainy mustard
2 cloves garlic, chopped
5 tablespoons vegetable oil
1 teaspoon dried thyme or 1 tablespoon chopped fresh thyme

2 Cornish game hens
Salt and freshly ground black pepper
1 lemon

Steps:

  • Mix the honey, mustard, garlic, 3 tablespoons oil, thyme and cinnamon together in a bowl and set aside. Remove the wing tips from the hens. Roll the hens in the marinade and marinate overnight.
  • Preheat the oven to 450 degrees F.
  • Season the birds inside and out with salt and pepper. Cut the lemon in half and squeeze over each bird. Put a used lemon half in the cavity of each bird. Truss the birds.
  • Set a rack in a roasting pan and brush the rack with several tablespoons vegetable oil. Place the birds, breast side down on the oiled rack. Roast for 30 minutes. Turn the birds breast side up, reduce the heat to 350 degrees and roast an additional 15 to 20 minutes or until the hens are cooked through and the skin is brown. Allow the hens to rest 10 minutes before serving.

Cornish Game Hens are a DELICIOUS recipe that you will come back to time and time again

1/4 cup + 2 T. Kosher salt
1/3 cup sugar or honey
3-5 garlic cloves
1/2 T. black peppercorns, crushed
1 tsp. ground mustard
1 tsp. onion powder
2 1/2 quarts of warm water
2 Cornish games hens (mine were 24 oz. each)

Steps:

  • At least 12 hours or more before you intend to cook your Cornish hens, start the brine.
  • Get out a large food-grade container. You can use a large pot if you have one large enough. Try to avoid metal if at all possible, because from what I've read it can do strange things to your birds!
  • Add the salt, sugar, garlic, peppercorns, ground mustard, and onion powder to your pot. (Do not worry if you don't have garlic, peppercorns, ground mustard, or onion powder because these can be omitted. I would discourage this, but sometimes you just don't have an ingredient.) Pour the warm water over it all and stir it so the salt and sugar dissolves. Put the pot into your fridge until the water has cooled down.
  • Take the pot out of the fridge and get your Cornish hens ready. Remove the giblets and submerge the hens into the brine. Put the pot back in the fridge for about 6 hours. Remove the pot from the fridge, flip the birds over, and put the pot back into the fridge for another 6 hours.
  • Remove the pot from the fridge, take the Cornish hens out of the brine, and pat them down with paper towels. Place them on a roasting rack in a roasting pan. You do not have to add anything else, because they taste wonderful as they are, but I tried them with some olive oil, more salt, and a little pepper, and it does make a difference. Either way is sooo good!
  • Tuck the wings under the birds, and if you have some cooking twine, use it to tie the legs together. It will help the birds roast more evenly and makes for better presentation. I rarely do this since I don't have cooking twine lying around my house. :)
  • Preheat your oven to 425 F. Once the oven comes to temperature, put the birds into the oven for 25 minutes. Turn down the temperature to 400 F and roast for another 20 minutes. Finally, bring the temperature down to 375 F and roast for another 25-30 minutes. If you have a meat thermometer, make sure that the internal temperature of the birds is at least 165 F before removing from the oven. If you don't have one, make sure that the hens are completely cooked (no longer pink) before eating.
  • Take hens out and let them rest.

3 small onions, quartered
12 garlic cloves, crushed
1 bunch watercress

Steps:

  • Preheat oven to 400°F. Whisk first 6 ingredients in medium bowl. Pour 2 cups sauce into medium saucepan. Reserve remaining 1 cup sauce.
  • Rinse hens inside and out. Pat hens dry with paper towels. Cut and scrape off any visible fat from hens. Sprinkle inside and out with salt and pepper. Place 3 onion quarters and 3 garlic cloves in cavity of each hen. Arrange hens on rack on large rimmed baking sheet.
  • Roast hens 10 minutes. Baste with reserved 1 cup sauce. Continue roasting until hens are golden and juices run clear when thickest part of thigh is pierced, basting often with pan juices and reserved 1 cup sauce, about 45 minutes longer.
  • Transfer hens to cutting board; tent with foil to keep warm. Transfer pan juices to 4-cup glass measuring cup. Spoon fat off top of pan juices. Pour pan juices into 2 cups sauce in saucepan. Boil until sauce is reduced to 1 1/2 cups, about 12 minutes.
  • Discard onions and garlic from hen cavities. Using poultry shears, cut hens in half lengthwise. Remove backbones. Spoon some sauce onto plates. Place hens atop sauce. Garnish with watercress. Serve with remaining sauce.

LIGHT HONEY-GLAZED CORNISH HENS

2 Cornish game hens (about 1 1/2 lbs each)
1 teaspoon fresh orange peel (grated)
1/4 cup orange juice concentrate (thawed, undiluted)
3 tablespoons lemon juice
2 tablespoons soy sauce
2 cloves garlic (crushed and minced)
1 tablespoon honey
1/2 teaspoon onion powder
1/4 teaspoon dried thyme
2 tsp. oil or non-stick cooking spray
1/2 cup onion (chopped)
Optional Garnish: fresh orange wedges
1 teaspoon cornstarch mixed with 1 teaspoon water (cold)

Steps:

  • Gather the ingredients. Preheat oven to 350 F.
  • Place game hens breast-side down ​on a cutting board and cut in half along the backbone. Remove skin and trim excess fat.
  • In a small microwave-safe dish, combine orange peel, lemon juice, orange juice concentrate, soy sauce, honey, garlic, onion powder, and thyme. Bring to boiling point in a microwave oven; set aside.
  • Lightly grease a baking dish or spray with cooking spray.
  • Divide chopped onion into 4 portions in baking dish; place hens bone-side down on onions.
  • Pour orange juice mixture over hens.
  • Bake hens in preheated oven for 45 minutes, basting every 10 to 15 minutes with cooking juices. If they brown too quickly, cover them loosely with aluminum foil.
  • When hens are done, remove from baking dish, onions and all, to warm dinner plates.
  • If desired, garnish with orange slices. Skim fat off juices in baking dish. If desired, thicken pan juices with a teaspoon of cornstarch mixed with 1 teaspoon of cold water. Serve juices on the side.
  • Serve with hot cooked rice and a green vegetable. Enjoy!
