Here's what you need: garbanzo beans, salt, ground cumin, garlic, lemon juice, extra virgin olive oil, sesame oil, water

15 oz garbanzo beans, 1 can, drained and rinsed
½ teaspoon salt
½ teaspoon ground cumin
1 clove garlic, minced
1 tablespoon lemon juice
1 tablespoon extra virgin olive oil
¼ teaspoon sesame oil
¼ cup water

Steps:

  • Pour the rinsed chickpeas onto half the area of a kitchen towel. Fold the other half of the towel on top of the beans, and rub them so that the skins start to come off.
  • Place all of the peeled beans in the bowl of a food processor, along with the salt, cumin, and garlic. Turn the processor on to break up the mixture.
  • With the food processor running, pour in the lemon juice, olive oil, sesame oil, and water, and let the processor run until the mixture is smooth.
  • Serve with your choice of dipping chips or veggies.
  • Enjoy!

That's right-we turned the dip of the decade into a soup that's savory, silky, and garlicky good. A portion of the chickpeas are reserved and toasted in a skillet to offer some chew-a nice textural contrast to the creaminess of the pureed soup. If the soup feels a little too thick, adjust by blending in more water, 1⁄/4 cup at a time. You can make the soup a day or two ahead, but you'll definitely need to adjust the texture, as it will overthicken upon standing. Make the toasted chickpea topping up to a day ahead; store in an airtight container at room temperature. For the sake of your sanity, purchase tahini in a jar with a wide mouth; narrow tops make it difficult to stir and spoon out what you need.

Yield Serves 6 (serving size: about 3/4 cup soup, 1 tbsp. cheese, 2 tbsp. toasted chickpeas, and 1 tsp. oil)

1/4 cup extra-virgin olive oil, divided
1 cup chopped yellow onion (about 1 medium onion)
5 garlic cloves, minced
2 cups unsalted vegetable stock
1 3/4 cups water
1 1/8 teaspoons kosher salt, divided
2 (15-oz.) cans unsalted chickpeas, drained, rinsed, and divided
1/8 teaspoon ground cumin
1/4 cup tahini (sesame paste)
1 1/2 tablespoons fresh lemon juice
6 tablespoons crumbled feta cheese

Steps:

  • Heat 1 tablespoon olive oil in a large saucepan over medium. Add onion and garlic; cook, stirring often, until tender, about 4 minutes. Add vegetable stock, 1 3/4 cups water, and 1 teaspoon salt; bring to a simmer. Set aside 1 cup chickpeas; add remaining chickpeas to stock mixture. Cover and reduce heat to medium-low; simmer 10 minutes.
  • Meanwhile, heat 1 tablespoon oil in a small skillet over medium-high. Add reserved 1 cup chickpeas; cook, stirring occa­sionally, until toasted and browned, 8 to 10 minutes. Stir in cumin and remaining 1/8 teaspoon salt.
  • Pour stock mixture into a blender. Remove center piece of blender lid (to allow steam to escape); secure lid on blender, and place a clean towel over opening in lid. Process until smooth. Add tahini and lemon juice; process until smooth. Ladle soup into 6 bowls; drizzle with remaining 2 tablespoons oil, and sprinkle with cheese and toasted chickpeas.

2 cloves garlic
¼ cup tahini sauce
2 tablespoons lemon juice
1 teaspoon cumin
½ teaspoon red pepper flakes

2 tablespoons extra virgin olive oil
2 tablespoons water
fresh parsley, chopped, to serve

Steps:

  • Add chickpeas, garlic, tahini, lemon juice, and seasonings to the bowl of a 2-quart food processor. Blend until smooth.
  • While blending, slowly add in the olive oil and water until hummus is creamy and smooth.
  • Garnish with additional red pepper flakes, chopped parsley, and a drizzle of olive oil.

2 tablespoons extra-virgin olive oil
2 shallots, minced
1 1/4 pounds cremini mushrooms, sliced
Kosher salt and freshly ground pepper
2 cloves garlic, minced
2 tablespoons madeira wine or brandy
6 cups low-sodium chicken broth
2 sprigs thyme
3/4 cup hummus
Grated zest and juice of 1 lemon
2 tablespoons roughly chopped fresh parsley
2 scallions, roughly chopped
Greek yogurt, for topping

Steps:

  • Heat the olive oil in a medium saucepan over medium-high heat. Add the shallots and cook until soft, about 3 minutes. Add the mushrooms, season with salt and pepper, and cook until the liquid from the mushrooms evaporates, about 15 minutes. Add the garlic and cook 1 minute. Add the madeira wine and cook 2 minutes, scraping up any browned bits. Add the broth and thyme; simmer gently, stirring occasionally, about 30 minutes.
  • Discard the thyme sprigs. Stir the hummus into the soup. Transfer half of the soup to a blender and puree (remove the filler cap to let steam escape), then return to the saucepan and simmer 15 more minutes. Remove from the heat, stir in the lemon juice and season with salt and pepper. Mix the lemon zest, parsley and scallions in a small bowl. Ladle the soup into bowls and top with the yogurt and lemon-parsley mixture.

1/2 lb chickpeas, washed and picked over or 1/2 lb equivalent cannd chickpeas
6 cups water or 6 cups stock
1/2 teaspoon ground turmeric
1 teaspoon cumin
1/2 teaspoon ground coriander
1 pinch saffron or 3 -5 saffron threads
1 teaspoon salt, to taste
2 garlic cloves, peeled
2 lemons, juice of
2 tablespoons tahini
1 cup plain yogurt, plus additional
plain yogurt, for garnish
lemon wedge, for garnish
Italian parsley (to garnish)
sumaq (to garnish)

Steps:

  • Soak the chickpeas overnight and drain, or rinse and drain.
  • canned chickpeas.
  • Combine chickpeas with the water or stock, turmeric, cumin, and coriander in a large heavy-bottomed soup pot.
  • Bring to a boil and add the saffron.
  • Cover, reduce heat, and simmer 1 hour.
  • Add the salt and continue to simmer another hour or until the beans are tender.
  • (Less cooking time is required if using canned chickpeas.).
  • Blend the soup to a smooth puree in a blender, immersion blender or food processor along with the garlic, lemon juice, and tahini.
  • Pour back into the pot and whisk in the yogurt.
  • Thin out, if you wish, with water or additional yogurt.
  • Taste and adjust seasonings.
  • Heat through and serve, topping each bowl with a spoonful of yogurt and garnishing with a lemon wedge for squeezing over the soup.
  • I like to add a sprig of Italian parsley and a sprinkle of sumac on top of the soup.
  • Soup will keep for 3 to 4 days in the refrigerator and freezes well.

¼ cup olive oil
1 onion yellow onion, medium, diced
3 garlic cloves, minced or pressed
2 cups vegetable stock
1 cup water
15 oz can of chickpeas
1 lemon, juiced
½ cup tahini
¼ cup nutritional yeast
sea salt, to taste
2 pita breads
olive oil, to taste
za'atar, to taste
crumbled feta cheese, for topping (optional)
fresh parsley leaf, torn, for topping

Steps:

  • Preheat the oven to 375°F (190°C).
  • Heat the olive oil in a Dutch oven or large saucepan over medium heat. Add the onion and garlic and sauté until tender, about 5 minutes.
  • Add the vegetable stock, water, and chickpeas. Cover, bring to a simmer, and cook for 10-15 minutes. Remove the pot from the heat and stir in the lemon juice.
  • Meanwhile, make the pita croutons: Tear the pita into small pieces. Spread on a baking sheet, drizzle with the olive oil, and sprinkle with za'atar. Toss until well coated.
  • Transfer to the oven and toast until the pita croutons are golden brown, 7-10 minutes.
  • Use an immersion blender to purée the soup until smooth and creamy. Stir in tahini, nutritional yeast, and salt.
  • Ladle the soup into bowls and top with the pita croutons, feta, and parsley. Serve immediately.

3 large leeks, white portion chopped
5 potatoes, peeled & chopped
1 large cooking onion, chopped
250 ml white wine (fruity Chardonnay recommended)

1000 ml chicken broth or 1000 ml turkey broth

Steps:

  • Melt butter in soup pot.
  • Sauté in butter the leeks and onion until opaque.
  • Add broth and potatoes--bring to a boil then reduce heat and simmer until potatoes are cooked, stir to prevent burning.
  • Add hummus, stir.
  • Turn off heat and immediately add white wine, stir.
  • Add pepper to taste and serve.

Hasa Al Hummus is a wonderful Moroccan vegetarian soup for a comforting winter warmer. Morocco adores her soups though there are not a million varieties. Many recipes online may taste good though are faux or Moroccan "style" soups. I can guarantee that from me what you get is completely authentic Moroccan fare. I owe this to those interested in Moroccan food/cooking that is authentic. This is a very simple basic soup as most Moroccan foods are. Go to a touristy, especially a fancy one, spot and you will get French food with Moroccan influences; not how we eat every day. We eat Moroccan food perhaps with a French influence or two though never vice versa. My housemaid Nasiha who is approximately 60 taught me this recipe. I say approximately as many in Morocco do not know their birthday. Whip this up like we do and enjoy! In a pinch you can use canned chickpeas. They are acceptable, merely omit the first cooking hour. As an aside, here, hummus is the word for chickpea, not the dip/spread.

  • While the beans are cooking, heat the oil in a skillet and sauté the onions, garlic, and hot pepper (we use a small straight pickled hot pepper from a jar) until they barely take on color; very slightly browned.
  • Add the mixture and the remainder of the ingredients to the soup pot and simmer 1 hour or until the chickpeas are soft. You don't want a "bite" to the chickpeas but firm and creamy.
  • NB: The preparation time does not include soaking the chickpeas.
