BUCATINI ARRABBIATA

Kosher salt
1 pound bucatini
3 tablespoons extra-virgin olive oil, plus more for drizzling
4 cloves garlic, sliced
3 tablespoons chopped jarred Calabrian chile peppers
2 14-ounce cans cherry tomatoes
1/4 cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a separate large pot over medium heat. Add the garlic and cook, stirring, until pale golden, about 3 minutes. Add 2 tablespoons chiles and cook, stirring, until the oil is red, about 1 minute. Stir in the cherry tomatoes and 1 cup water and simmer, stirring occasionally, until thickened, about 20 minutes.
  • Add the pasta, reserved cooking water, parsley and remaining 1 tablespoon chiles to the sauce. Cook, tossing, until well coated, about 1 minute; season with salt. Divide among bowls and drizzle with olive oil.

SHRIMP ARRABBIATA

2 Tbsp. olive oil, divided
1 lb. uncooked large shrimp, peeled and deveined
1 cup finely chopped onion
1 clove garlic, finely chopped
1/2 tsp. dried basil leaves, crushed
1/2 tsp. dried oregano leaves, crushed
1 jar Bertolli® Arrabbiata Sauce
8 ounces linguine, cooked and drained
1/4 cup grated Parmesan cheese

Steps:

  • Heat 1 tablespoon olive oil in 12-inch nonstick skillet over medium-high heat and cook shrimp, stirring occasionally, 6 minutes or until shrimp turn pink. Remove shrimp from skillet and set aside.
  • Heat remaining 1 tablespoon olive oil in same skillet over medium-high heat and cook onion, stirring occasionally, 5 minutes or until tender. Stir in garlic, basil and oregano and cook 1 minute. Stir in Sauce and bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Stir in shrimp, then toss with linguine. Sprinkle with cheese and garnish, if desired, with chopped fresh parsley.

PENNE ARRABIATA

2/3 cup good olive oil
1 cup whole peeled garlic cloves (24 cloves)
2 (28-ounce) cans whole peeled San Marzano tomatoes
2 teaspoons whole fennel seeds, chopped
1 teaspoon crushed red pepper flakes
1/3 cup dry red wine, such as Chianti
Kosher salt and freshly ground black pepper
1/4 cup julienned fresh basil leaves, plus extra for serving
1 pound dry penne rigate, such as DeCecco
Freshly grated Parmesan cheese, for serving

Steps:

  • In a medium (10-inch) pot or Dutch oven, such as Le Creuset, warm the olive oil over medium-low heat. Add the garlic and cook for 10 to 12 minutes, tossing occasionally, until the garlic has softened and is lightly browned.
  • Meanwhile, drain the tomatoes, place them in a food processor fitted with the steel blade, and pulse until they're roughly chopped. With a slotted spoon, transfer the garlic to the food processor and pulse again to chop the garlic. Pour the tomato mixture into the pot with the olive oil, add the fennel, red pepper flakes, red wine, 1 tablespoon salt, and 1 teaspoon black pepper. Bring to a boil, lower the heat, and simmer for 30 minutes. Stir in the basil, taste for seasonings (it will be very spicy!), and keep warm over very low heat.
  • Meanwhile, bring a large pot of water to a full boil. Add 2 tablespoons kosher salt and the penne and cook according to the directions of the package.
  • Two minutes before the pasta is al dente, using a wire or spider strainer, lift the pasta out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water. Simmer for 2 to 3 minutes, until the pasta is al dente. Spoon the pasta into low shallow bowls, sprinkle with extra basil and Parmesan cheese, and serve hot.

DECONSTRUCTED PIZZA SKEWERS WITH ROASTED TOMATO, FRIED MOZZARELLA AND BASIL AIOLI



Deconstructed Pizza Skewers with Roasted Tomato, Fried Mozzarella and Basil Aioli image

As good as I am, it's quite hard to convince my clients to eat pizza out of a cup, so here is how I pay homage to my favorite childhood meal.

1 teaspoon olive oil
3/4 cup light mayonnaise
1/3 cup basil leaves
1/4 cup baby arugula leaves
1 tablespoon fresh lemon juice
1 1/2 teaspoon minced garlic
1 tablespoon grated Parmesan
Salt and pepper, to taste
1 half-pint container red or yellow grape tomatoes
1 egg
1 package small mozzarella bocconcini (24 pieces)
1/2 cup breadcrumbs

Steps:

  • For the aioli, blend mayonnaise, basil, arugula, lemon juice, garlic, Parmesan, salt, and pepper in a food processor until completely smooth.
  • In a frying pan, warm a teaspoon of olive oil on medium heat.
  • Add the tomatoes and stir to lightly cook and slightly blister their skins. Remove and cool.
  • In a separate bowl, beat the egg. Dredge the mozzarella in the egg and then in breadcrumbs. Fill a Dutch oven halfway with olive oil, heat until 400 to 450 degrees F, and fry the mozzarella balls approximately 30 seconds each or until golden brown on all sides. Set aside on a paper towel to cool.
  • Once the mozzarella is at room temperature, use a toothpick or skewer and poke through one tomato then one mozzarella ball, dotting the tops with the basil aioli. Repeat.

DECONSTRUCTED GAZPACHO

6 slices baguette, sliced on severe angle to yield long angled 1/4 inch thick pieces
2 plum tomatoes, seeded and finely diced
1/2 European or seedless cucumber, 1/4 finely diced, 1/4 cut in larger chunks
2 ribs celery, 1 finely diced, 1 cut in chunks, leafy green tops in tact
1 green bell pepper, seeded, 1/2 finely diced, 1/2 chunked
1 small white onion, half finely chopped, half chunked
The juice of 1 lime
1 can crushed tomatoes, 15 ounces
1 tablespoon extra-virgin olive oil
1 teaspoon to tablespoon hot sauce, such as Tabasco, to your taste
Salt, to your taste
2 sprigs fresh oregano
A handful flat leaf parsley leaves

Steps:

  • Toast bread lightly under hot broiler on both sides. Let cool.
  • Combine chopped fresh tomatoes with finely diced cucumber, celery, pepper, and onion in a bowl. Dress with the juice of 1/2 lime. Set aside.
  • Place remaining chunked veggies in food processor with the juice of remaining half lime, crushed tomatoes, extra virgin olive oil, hot sauce, a little salt, the leaves of 1 sprig of oregano and a few leaves parsley. Process until smooth. Adjust salt and hot sauce to your taste. Chop remaining parsley and oregano and add to diced veggies. Season veggies with salt, to taste.
  • Pour puree into shallow bowl or dish, just enough to coat the bottom. Set a toast on each dish and top with equal amounts of diced vegetables. Serve.

ARRABBIATA SAUCE

2 small garlic cloves, peeled and crushed
2 tbsp extra virgin olive oil
1 red chilli, deseeded and finely chopped
1 x 400g can chopped tomatoes

Steps:

  • Pour the oil into a saucepan and fry the garlic over a medium heat for 1-2 mins until fragrant, but not browned. Add the chilli, fry for another minute, then add the tomatoes along with 1 tsp salt and ½ tsp sugar. Stir well to combine the ingredients and simmer gently for 20 mins, stirring regularly. The sauce will thicken slowly as it cooks.
  • Taste and adjust the seasoning if needed. Serve stirred through pasta, or blend it first to create a smoother sauce if you prefer. Will keep chilled for up to five days.

1 tbsp extra virgin olive oil
2 garlic cloves, sliced
½-1 tsp chilli flakes
2 x 400g cans chopped tomatoes
300g penne
a handful basil leaves, torn

Steps:

  • Heat the oil in a frying pan over a medium heat and fry the garlic and chilli flakes for 2-3 mins until fragrant and the garlic is lightly golden. Tip in the chopped tomatoes and bring to a simmer. Cook for 10 mins until the mixture has slightly thickened. Season well.
  • Cook the penne in a pan of boiling salted water for 10 mins until al dente. Drain, reserving a mugful of the pasta cooking water.
  • Tip the pasta into the sauce, scatter with most of the basil and toss to combine. Add a splash of the reserved pasta cooking water to help the sauce coat the pasta, if needed. Scatter with the remaining basil to serve.
