Whipped Butter is creamy, light, fluffy, and extra yummy on rolls, pancakes, muffins, and baked potatoes, and more! You only need two ingredients; real butter and milk. It's so easy to make and less expensive than buying it in the store!

Steps:
- Make sure butter is room temperature. The best way to soften butter is to let it sit at room temperature for 30 minutes.
- Add butter and milk to a stand mixer, or a mixing bowl.
- Using a paddle attachment mix butter on medium speed for 2 minutes. Scrape sides of the bowl.
- Using a wire whisk attachment, turn the mixer to medium-high speed and continue mixing for 2-4more minutes or until light and fluffy.

- Place the butter in a mixing bowl and add the milk. Beat with an electric mixer (or the whisk attachment on a stand mixer) for 2 minutes on low to medium speed.
- Scrape the sides of the bowl and beat on high for 2-3 additional minutes, until the butter is light and creamy.
- Transfer to an airtight container and store in the refrigerator for up to a week. Return to room temperature before serving.

HOMEMADE WHIPPED BUTTER
This is the method used by restaurants to whip butter to make it easier to spread, and for economical reasons to make butter go a lot further too. You can make it fancy like restaurants do by putting this mixture into a cake decorating tube with a fancy tip and pipe it into small dishes for individual servings. I have even used a plastic bag, cut off the corner, placed a fancy decorating tip in the corner, added the butter mixture and piped it into tiny dishes I got at the dollar store. One for each dinner guest is a nice touch. I store the whipped butter in a glass covered container on the counter top in cooler weather. In warmer weather I store it in the refrigerator and bring it to room temperature before using.

HOME-CHURNED BUTTER

- Pour the cream into a jar with a clean marble inside. Screw the lid on tightly. Shake the jar continuously for 5 mins (you can take turns shaking with someone else). The movement of the marble acts as a whisk and helps the butter to churn. You can do it without the marble, it just takes longer. At first the cream will thicken to whipped cream, then it will get even thicker. After about 5 mins you will hear sloshing in the jar - give it a few more vigorous shakes, and that's the butter churned.
- Scrape out the contents into a sieve sitting over a bowl - the liquid that drains out is buttermilk (which can be kept and used for baking or in pancakes), and the fatty solid in the sieve is the butter.
- With clean hands, squeeze the butter between your fingers over the sieve to squeeze out any more buttermilk, while working it into a ball. 'Wash' the butter in a bowl of ice-cold water to get rid of any residual buttermilk.
- To make brandy butter, beat the sugar and a small pinch of salt into the butter, then work in the brandy 1 tbsp at a time. Will keep in the fridge for up to one week.

This is a homemade whipped butter that will harden with refrigeration. My mom shared this recipe with me, it's pretty fun to make and you can flavor it with just about whatever spices you choose. Wonderful on baked potatoes and other veggies. It's a little loud as it churns in the dryer. The amount you make can also be adjusted to more or less.

- Using an empty plastic jar (I use an empty peanut butter jar):.
- Pour Heavy Whipping Cream into jar, leaving about 2 inches from the rim.
- Add salt or any other spice you desire (I recommend using salt for the first time).
- Seal tightly and shake jar lightly.
- Insert sealed jar into an Oven Mitt (bottom first) and place a tight rubberband around the top (beneath the covered portion of the lid).
- Place into a dryer on the No Heat setting and run for 10-15 minutes.
- After 10-15 minutes remove jar, shake lightly, tighten lid (lid may loosen a bit - I like to check it after 10 minutes).
- Repeat dryer method 3-4 times until desired texture is achieved.

BODY BUTTER WHIP
This is a light,tropical and luscious body butter that smells almost good enough to eat! I wouldn't however!!! I received this recipe in a monthy e-newsletter I receive from Nature's Gift. It is a wonderful small company in TN which specializes in essential oils and aromatherapy supplies. I love applying this butter right after I get out of the shower since it literally melts into your skin and leaves you soft and silky. It is wonderful in the winter but you may find it a little heavy in the warmer months. I remedy this situation by applying the butter sparingly after showering while my body is still damp... the water combines with the oils in the butter and helps emulsify it...right into your skin. I love the light, tropical scent from the coconut oil and cocoa butter... the essential oils are optional, but I think you will find them heavenly! I have a special bowl and beaters I use just for this recipe... just so I don't use them for anything else. Be sure to store this butter in a cool place since it will melt and turn into a soupy mess!

- Grate or shave the cocoa butter to help it melt faster and more evenly.
- Melt the cocoa butter slowly on low heat or in a double boiler.
- Once the cocoa butter is melted, remove from heat and allow to cool slightly.
- Stir in the virgin coconut oil. (The heat from the cocoa butter will melt the coconut oil.).
- Once the mixture starts to solidify, whip it with an electric hand mixer.
- While beating, sift the cornstarch over the mixture.
- Continue to beat.
- Add in the essential oils if desired.
- Continue to beat until light, fluffy and cool.
- This can range from 5 minutes up to 15 minutes depending on how warm your mixture is to begin with and the ambient room temperature.
- Package in pretty 4 oz plastic jars or plastic bail jars.
