French Grated Carrot Salad with Lemon Dijon Vinaigrette image

This grated carrot salad with lemon dijon vinaigrette is standard fare in French bistros and markets.

1 pound carrots, peeled
2 teaspoons Dijon mustard
1 tablespoon freshly squeezed lemon juice, from one lemon
1½ tablespoons vegetable oil
1½ tablespoons extra virgin olive oil
1-2 teaspoons honey, to taste
Heaping ¼ teaspoon salt
¼ teaspoon freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
2 finely sliced scallions (or 1tablespoon finely chopped shallots)

Steps:

  • Shred the carrots in a food processor. Set aside.
  • In a salad bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions (or shallots) and toss well. Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
  • Notes: Depending on the sweetness of the carrots, you may want to add more or less honey. Also, if you make this salad ahead of time, be sure to check the seasoning again before serving as the flavors tend to mellow.

10 oz. Organic Shredded Carrots (or julienne 1 or 2 Carrots)
1/2 Cup Organic Raisins
1/2 Cup Fresh Organic Pineapple, diced
1/2 Cup Organic Apple, diced
1/4 Cup Organic Grapes, diced
1/4 Cup Mayonnaise (give Spectrum a try)
1/4 Cup Full Fat Greek Yogurt
2 teaspoons Organic Cane Sugar
1/4 teaspoon Sea Salt

Steps:

  • Combine the carrots, raisins, pineapple, apple, grapes in a large bowl
  • Whisk the mayo, yogurt, sugar and salt together in a small bowl and pour over the vegetables. Use a spatula or large spoon to gently mix until combined
  • Cover and refrigerate until ready to serve

2 bunches topped carrots
1 cup good mayonnaise
1/2 golden pineapple, peeled and chopped
1/2 cup raisins
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Peel the carrots and grate them in a food processor fitted with the large grating attachment. If you lay the carrots on their sides in the feed tube, you will have nice long grated strands. Place the grated carrots in a large bowl and add the mayonnaise, pineapple, raisins, salt, and pepper. Toss well and season to taste. Serve chilled or at room temperature.

1/2 teaspoon Dijon mustard
3 tablespoons olive oil
1/2 lb carrot, peeled and shredded
1/4 teaspoon salt
1/8 teaspoon pinch ground black pepper
1 tablespoon chopped fresh parsley (optional)
1 mango, cut into chunks

Steps:

  • In a small bowl, whisk the lemon juice, mustard, and olive oil together until the dressing is completely blended. Stir the dressing into the shredded carrots. Sprinkle the carrot salad with the salt, pepper, and parsley, if using. Toss the salad again to blend the seasonings and chill it for 30 minutes before serving.
  • My Note: Sometime I added some golden raisins and walnuts. It's like carrot cake without the cake! with out the mango.
  • It's important to grate the carrots finely. We can get grated carrots at salad bars here, but when you make this salad, you have to use a fine grate. It makes a wonderful difference. When combined with beets and celery root, this is called the Parisian salad, and served at most bistrots. And so good for you. Russians do finely grated carrot salads too, and Moroccans.
