BEST CINNAMON ROLLS
When I married him, I discovered that my husband's family has the best cinnamon roll recipe! I asked his mom how to make homemade cinnamon rolls, and I've been making them ever since. Serve them with scrambled eggs, and you have a filling breakfast. As a variation, you can replace the filling with a mixture of raisins and pecans. -Shenai Fisher, Topeka, Kansas

Steps:
- Pour milk into a microwave-safe bowl and heat in the microwave until warm but not hot to the touch, 45 to 60 seconds. It should be about 105 degrees F (41 degrees C). Pour into the bowl of a standing mixer.
- Add 1 tablespoon sugar and yeast to the warm milk. Stir and let sit (proof) until foamy, about 5 minutes. Add 1/2 cup sugar, melted butter, eggs, and vanilla extract; stir with a dough hook until combined.
- Add 4 cups flour, sea salt, and cinnamon; stir with the dough hook, starting on low speed and gradually increasing to high speed, until a large ball of smooth and slightly tacky dough is formed. Add 1 tablespoon flour at a time if dough seems too sticky, until a smooth ball is formed.
- Transfer dough to a floured surface and knead with your hands until smooth and elastic, 3 to 5 minutes. Form into a ball and place inside a greased bowl. Cover the bowl with a warm, damp towel and let dough rise in a warm place until doubled in size, about 1 hour.
- While the dough is rising, combine brown sugar, softened butter, and cinnamon for the filling in a small bowl until uniform throughout. Set aside.
- Gently press the gas out of the dough and transfer to a large, floured work surface. Roll the dough into a 24x12-inch rectangle, about 1/4-inch thick. Spread the filling over the dough with greased hands or a greased spatula. Roll up the dough and cut into 12 equally sized rolls, about 2-inches long.
- Line a 9x13-inch glass baking dish with lightly greased parchment paper. Place cinnamon rolls in the prepared baking dish in 4 rows of 3, evenly spaced. Cover and let rise until nearly doubled, about 30 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until golden brown, 18 to 20 minutes.
- While the rolls are baking, beat together powdered sugar, cream cheese, softened butter, vanilla extract, and salt for frosting. Keep at room temperature while rolls bake.
- Spread frosting on warm rolls. Let cool before serving.

Steps:
- In a large mixing bowl combine warm water, sugar, oil, and yeast.
- Stir it a few times, then let it sit for a full 15 minutes.
- Now add the salt and eggs and flour to the yeast mixture (add more flour if too sticky, but it should be soft).
- Mix together for 10 minutes in mixer ( I use my Bosch).
- Once it has mixed for ten minutes, let it sit for 10 minutes. It should double in size. It will take longer if your kitchen is cold.
- After it has doubled in size, you want to pour some oil onto the counter (instead of flour) to roll your dough out on.
- Press it into a rectangle.
- Melt butter in a microwave safe bowl, and pour it onto the dough that you have pressed out into a rectangle.
- In a separate bowl, mix white and brown sugar, and cinnamon together. Sprinkle it over the melted butter.
- Tightly roll into a log and cut into 20-24 even sized pieces.
- Place on baking tray with parchment paper on it, and let rise more. You can let them rise as short or as long as you want. Sometimes I just let them rise for like 5 minutes. They will continue to rise in the oven. You want them to be nice and big, so if your kitchen is cold it may take longer.
- Bake at 400 for 12-15 minutes.
- While the rolls bake, mix all of the ingredients for the cream cheese frosting together using a hand mixer, in a medium sized bowl, until nice and smooth.
- When you pull the rolls out of the oven, let them sit for a minute or two, then slather frosting over the top and let it melt into the rolls.

THE BEST CINNAMON ROLLS EVER!
Here's an easy alternative to buying those famous cinnamon rolls in the mall. They taste exactly the same, and the dough is made in the bread machine (or kitchen aid).

Steps:
- In the pan of your bread machine or kitchen aid, combine water, melted butter, vanilla pudding mix, warm milk, egg, white sugar, salt, flour and yeast. Set machine to Dough cycle; press Start and let beat for 10 minutes then stop it. Or beat ingredients in kitchen aid for 10 minutes. Let dough rest in bread machine / kitchen aid for 10 minutes.
- When Dough cycle has finished, turn dough out onto a lightly floured surface and roll out into a large rectangle shape until dough is 1/2 inch thick, if recipe is scaled larger, you might need to make additional rectangles as you don't want to make them into a long log that you cannot roll with two hands. Spread rectangle with softened butter. Sprinkle brown and cinnamon over dough, you don't have to stick exact with the measurements, they are just guidelines for buying and portioning out the filling.
- Roll up dough, beginning with long side. Slice into 16 (or more) one inch slices and place in 9X13 inch buttered pan (you can also use muffin tins! Also 9X13 inch pan refers to original serving amount not scaled amount). Let rise in a warm place until doubled, about 30 - 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 15 to 20 minutes. While rolls are baking, stir together the cream cheese, softened butter, confectioners' sugar, vanilla and milk. Remove rolls from oven, let cool, and top with cream cheese frosting.

GRANDMA'S BEST CINNAMON ROLLS
This is from a clipping from a magazine dated 1997 I mix the dough in the bread machine on the dough cycle. And then shape, rise and bake in the oven. The rolls are tender and I like the oatmeal. I finished them off with some icing I had left over from a spanich bar cake that I made a few days before. This is a good recipe if you are home getting ready for overnight guests, the bread machine does a lot of the work, and your guests think you spent hours making these. (the prep time doesn't include the time in the bread machine)
