Easy, homemade noodles for two.

1 cup all-purpose flour
1 egg
1 pinch salt

Steps:

  • Mix all ingredients. Roll thin with flour, then roll like a jelly roll. Cut into 1/2 inch strips. Let dry.
  • Drop into hot chicken broth. Boil for 15 minutes.

2/3 to 3/4 cup all-purpose flour
1/8 teaspoon salt
1 egg
1 teaspoon cold water
6 cups water
1 teaspoon canola oil

Steps:

  • In a small bowl, combine 2/3 cup flour and salt. Make a well in the center. Beat egg and cold water; pour into well. Stir together, forming a ball. , Turn dough onto a floured surface; knead for 8 minutes, adding remaining flour if necessary to keep dough from sticking to surface or hands. Cover and let rest for 10 minutes. , On a lightly floured surface, roll dough into a 12x8-in. rectangle. Dust top of dough with flour to prevent sticking while rolling. Trim the edges. Dust both sides of dough with flour. Roll up jelly-roll style; cut into 1/4-in. slices. Separate and unroll the noodles; let rest on a clean towel for 1 hour. , In a large saucepan, bring water to a rapid boil. Add oil and noodles; cook for 7-9 minutes or until tender. 2 to 2-1/2 cups all-purpose flour, divided
1/2 teaspoon salt
3 large eggs, lightly beaten
1 tablespoon cold water
1 tablespoon canola oil

Steps:

  • Place 2 cups flour and salt on a pastry board or in a deep bowl. Make a well in a center of the flour; add eggs and water. Gradually mix with hands or a wooden spoon until well blended., Gather into a ball and knead on a floured surface until smooth, about 10 minutes. If necessary, add remaining flour to keep dough from sticking to surface or hands. Divide the dough into thirds. On a lightly floured surface, roll each section into a paper-thin rectangle. Dust top of dough with flour to prevent sticking while rolling. Trim the edges and flour both sides of dough. , Roll dough, jelly-roll style. Using a sharp knife, cut 1/4-in. slices. Unroll noodles and allow to dry on paper towels before cooking. , To cook, bring salted water to a rapid boil. An old family recipe from St. John Lutheran Church member, Lillie Kauitzsch, Bartlett, Texas. A much better taste than store bought. I also remember my great-grandmother making noodles like this when I visited her in Oklahoma, many moons ago. Preparations time is an estimate.

Number Of Ingredients 5

3 egg yolks
1 whole egg
3 tablespoons cold water
1 teaspoon salt
2 cups flour

Steps:

  • Beat the egg yolks with the whole egg until very light.
  • Beat in the salt and water.
  • Stir in the flour and work with hands until blended.
  • Divide dough into 2 parts.
  • Roll out each part as thin as possible on a lightly floured board.
  • Let stand until partially dry (like chamois skin), at least 1 hour, then roll up like a jelly roll and cut into strips of any desired width.
  • Shake out strips and allow them to finish drying before using or storing them.

  • Unfold the strips and allow to dry.
  • Bring 2 quarts salted water to boil, add noodles and cook 10 to 15 minutes (depending on how much they have dried).

Olive oil, for drizzling
1 medium yellow onion, sliced
3 cloves garlic, sliced
Kosher salt and freshly cracked black pepper
1 pound tomatoes, medium diced
2 white anchovies
1/2 teaspoon crushed red pepper flakes
1 pound dried linguine or spaghetti
1/4 cup chopped fresh parsley
2 tablespoons salt-packed capers, rinsed
1 tablespoon unsalted butter
1/4 cup freshly grated Parmesan, plus more for serving

Steps:

  • Set up a grill for even, medium-high heat. If using a charcoal grill, build the coals evenly on the bottom.
  • Place a Dutch oven on the grill and coat the bottom with a film of olive oil, followed by the onions and garlic. Season with salt and pepper and cook until the onions begin to soften, 2 to 3 minutes. Stir in the tomatoes. Add the anchovies and, using a wooden spoon, break them down into small pieces. Add the red pepper flakes, stirring to melt into the oil. Add 4 1/2 cups water and bring to a simmer. Season with salt and pepper, then add the pasta. Close the lid of the grill and cook according to package directions. Remove from the heat and stir in the parsley, capers, butter, 2 tablespoons olive oil and the Parmesan. Serve with some more black pepper, a drizzle of olive oil and more Parmesan.
