1 7-ounce package amaretti cookies
1 tablespoon sugar
6 tablespoons unsalted butter, melted, plus more for the pan
For the filling:
1 pound whole-milk ricotta cheese (preferably fresh)1 1/2 cups sugar
1 15-ounce can pure pumpkin puree
3 large eggs
3/4 cup mascarpone cheese
1 tablespoon pure vanilla extract
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon salt
For the topping:
1 3/4 cups fresh cranberries
1/2 cup sugar
1 tablespoon fresh lemon juice
Pinch of salt

Steps:

  • Preheat the oven to 325 degrees F. Wrap the outside (bottom and side) of a 9-inch springform pan with foil. Make the crust: Pulse the cookies and sugar in a food processor until finely ground. Add the melted butter; pulse to combine. Press into the bottom and about 1/4 inch up the side of the pan. Brush the side of the pan lightly with melted butter. Bake until golden and set, 12 to 15 minutes. Transfer to a rack; cool completely.
  • Make the filling: Drain the ricotta in a fine-mesh sieve, 20 minutes. Combine with the sugar in the food processor; pulse until smooth. Add the pumpkin, eggs, mascarpone, vanilla, pie spice and salt; pulse until combined. (Do not overmix.) Pour the filling into the cooled crust. Bake until set around the edge but the center still jiggles slightly, 1 1/2 hours to 1 hour 45 minutes. Transfer to a rack and let cool to room temperature. Cover and refrigerate until cold and set, at least 8 hours or overnight.
  • Make the topping: Chop 1 cup cranberries and put in a small saucepan with the sugar, lemon juice, salt and 1/3 cup water. Cook over medium heat until thick, 7 to 10 minutes. Stir in the remaining 3/4 cup whole cranberries; cook 2 more minutes. Let cool.
  • Let the cheesecake sit at room temperature 20 minutes, then run a thin knife around the edge and remove the springform ring. Add a splash of water to the cranberry topping to loosen, if needed, then spread over the cheesecake.

1 teaspoon fresh lemon juice
1/8 teaspoon pure vanilla extract
1/3 cup cold heavy cream
1 store-bought pumpkin pie
1/2 cup canned jellied cranberry sauce
2 tablespoons water
1 teaspoon cornstarch

Steps:

  • Beat the cream cheese and sugar in a large bowl with a mixer on medium speed until fluffy, about 2 minutes. Beat in the lemon juice and vanilla. Beat in the heavy cream on high speed until stiff peaks form, 2 to 3 minutes. Spread the mixture on top of the pumpkin pie. Refrigerate until set, 1 to 2 hours.
  • Melt the cranberry sauce and 1 tablespoon water in a small saucepan over low heat, stirring until smooth, about 5 minutes. Mix the cornstarch with the remaining 1 tablespoon water in a small bowl, then whisk into the cranberry sauce. Bring to a simmer and cook just until thickened, about 30 seconds. Scrape into a bowl and let cool slightly, about 15 minutes. Spread over the cream cheese topping and refrigerate until set, about 30 minutes.

1 stick (8 tablespoons) unsalted butter, melted
2 cups graham cracker crumbs (from about 18 whole crackers)
2 tablespoons plus 2 teaspoons sugar
Pinch fine salt
Three 11.5-ounce containers whipped cream cheese, at room temperature
1 1/4 cups sugar
One 16-ounce container sour cream, at room temperature
1 cup heavy cream
1 teaspoon pure vanilla extract
4 large eggs, at room temperature
1 cup sugar
1/2 cup dried cranberries
3 cups frozen cranberries, thawed

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
  • For the crust: Brush a 10-inch springform pan with some of the melted butter. Stir together the remaining butter with the graham cracker crumbs, sugar and salt in a medium bowl. Press the crumb mixture into the bottom and 1 inch up the side of the pan. Use the back of a measuring cup or a drinking glass to pack the crust firmly and evenly into the edges of the pan. Bake until browned, 15 to 18 minutes. Let cool completely, then set the pan on top of a large sheet of aluminum foil and wrap the foil around the bottom of the pan and up the sides. Place the pan on a baking sheet.
  • For the filling: Beat the cream cheese and sugar in a large bowl with an electric mixer on medium speed for 1 minute. Add the sour cream, and mix until just combined, scraping down the sides of the bowl as needed. Add the cream and vanilla extract, and mix until just combined. Beat in the eggs one at time, beating the mixture after the last egg until just combined (take care not to overmix or the cake will turn into a souffle).
  • Pour the filling in to the crust. Bake until the cheesecake is slightly golden and barely set in the middle when the pan is tapped, about 1 hour and 20 minutes (the cake might puff up slightly while in the oven, but that is okay; it will deflate as it cools). Turn off the oven, and leave the cake inside with the door shut for 1 hour. It will continue to set and color slightly in the oven.
  • Run a thin knife or spatula around the cake to release it from the sides (this also helps reduce cracks in the top of the cake as it chills). Cover the cheesecake with plastic wrap and refrigerate overnight.
  • For the cranberry compote: Stir the sugar, dried cranberries and 1 cup water together in a medium saucepan. Bring to a boil over medium-high heat and then add the fresh cranberries. Reduce the heat to medium and simmer, stirring occasionally, until most of the fresh cranberries have burst and the sauce is slightly thickened, 8 to 10 minutes. Transfer the compote to a heat-safe bowl and let it cool slightly before covering the bowl with plastic wrap and refrigerating until it is completely chilled. The cranberry sauce will thicken as it cools. (This can be made up to one day in advance.)
  • For serving: Spread the cranberry compote in an even layer on top of the chilled cheesecake. The cheesecake will sink a bit in the center as it cools so it creates a perfect well for the cranberry compote. Run a thin knife or spatula between the cake and the sides again, then release the sides of the springform pan and remove the ring from the cheesecake base. Set the base on a cake platter, slice and serve.

1 (15 ounce) can pumpkin puree
2 tablespoons unsalted butter
3 eggs
1/2 cup sugar
1 cup heavy cream
1 teaspoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
1/2 cup pecans
4 ounces frozen cranberries
1 (2.3-ounce) package amaretto cookies (about 12) (recommended: Amaretti di Saronno)

Steps:

  • Make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Add the butter and mix with a pastry blender or your hands until the mixture resembles coarse crumbs. Pour in the ice water and work it in to bind the dough until it holds together without being too wet or sticky. Squeeze a small amount together, if it is crumbly, add more ice water, 1 teaspoon at a time. Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.
  • Sprinkle the counter and a rolling pin lightly with flour. Roll the dough out into a 10-inch circle. Carefully roll the dough up onto the pin and lay it inside a 9-inch pie pan. Press the dough firmly into the bottom and sides so it fits tightly. Trim the excess dough around the rim and pinch the edges to form a border. Place the crust on a sheet pan to catch any spills. Refrigerate until ready to fill.
  • Heat the oven to 375 degrees F.
  • Filling: Puree the pumpkin in a food processor with the butter and a pinch of salt. Measure 1 1/2 cups puree into a bowl. In another bowl beat the eggs and sugar until the sugar has melted. Add the eggs to the pumpkin puree and whisk well. Add the cream, cinnamon, and nutmeg and stir well to combine. Pour the mixture into the pie shell, and place on the bottom rack of the oven. Brush the pastry with the beaten egg white. Bake until the pie is set but still jiggles slightly, 45 to 50 minutes. Remove from the oven and allow it to cool.
  • Meanwhile, put the pecans on a baking sheet and bake them with the pie for about 10 minutes to toast them. Remove them from the oven and let them cool. Thaw the cranberries in a strainer set over a bowl to catch the liquid. Put the cookies, pecans, and cranberries into a food processor and pulse them a few times until they are coarsely chopped. Sprinkle the topping evenly over the cooled pie and serve immediately. Refrigerate leftovers.

  • In a small bowl, combine crumbs and sugar; stir in butter. Press onto the bottom and 1-1/2 in. up the sides of a greased 9-in. springform pan. Bake at 350° for 5-7 minutes or until set. Cool for 10 minutes., In a large bowl, beat cream cheese and brown sugar until smooth. Beat in the pumpkin, milk, cornstarch, cinnamon and nutmeg. Add eggs; beat on low speed just until combined. 1-1/2 cups graham cracker crumbs
3/4 cup ground pecans
2 tablespoons sugar
7 tablespoons butter, melted
CRANBERRY LAYER:
4-1/2 cups fresh or frozen cranberries
1 cup sugar
3 tablespoons cornstarch
3 tablespoons water
4 teaspoons grated orange zest
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
3/4 cup packed brown sugar
1 can (15 ounces) pumpkin
3 teaspoons vanilla extract
1 teaspoon ground cinnamon
4 large eggs, lightly beaten
Whipped cream, additional ground cinnamon and shaved chocolate optional

Steps:

  • Preheat oven to 350°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. Place pan on a baking sheet., In a small bowl, mix cracker crumbs, pecans and sugar; stir in butter. Press onto bottom and up sides of prepared pan. Bake 15 minutes. Cool on a wire rack. 13 gingersnap cookies
1/2 cup chopped walnuts
2 tablespoons butter, melted
4 (8 ounce) packages cream cheese, at room temperature
1 1/2 cups sugar
5 eggs
1 (8 ounce) container sour cream
1/2 cup all-purpose flour
1 1/2 teaspoons vanilla extract
1 cup canned pumpkin
3/4 teaspoon ground cinnamon
1 (16 ounce) can whole berry cranberry sauce, stirred
whipped cream
sugared cranberries (optional)

Steps:

  • position racks in center and lower third of oven. Preheat oven to 350°F Coat 9"x3" springform pan with cooking spray. In food processor process cookies and walnuts until finely ground; stir in butter.
  • press crumb mixture onto bottom and 1" up side of pan. Bake 8 minutes or until set; cool.
  • Place roasting pan on lower oven rack; fill halfway with water. At medium-high speed beat cream cheese and sugar until fluffy, 3 minutes. At low speed beat in eggs, one at a time. Beat in sour cream, flour and vanilla. At medium speed beat 2 minutes.
  • Pour half of batter into crust. bake 40 minutes or until center jiggles slightly when pan is shaken. Meanwhile, at low speed beat pumpkin, cinnamon an ginger into remaining batter. Spread cranberry sauce over hot cheesecake layer, leaving 1/2" border. Top with pumpkin batter. Batter will almost come up to top edge of pan. Bake 40-45 minutes or until center jiggles slightly when pan is shaken. Turn oven off; let cake stand in oven with door closed 20 minutes. Run knife around edge to loosen. Cool. Cover; refrigerate overnight. If desired, transfer whipped cream to pastry bag fitter with large star tip; pipe onto cake. garnish with cranberries.

1 1/2 cups all-purpose flour, plus
1 tablespoon all-purpose flour
3/4 cup unsalted butter, at room temp
3/4 cup powdered sugar, plus
2 tablespoons powdered sugar
1 egg
3/4 teaspoon vanilla
1 dash salt
12 ounces cream cheese, room temp
1/2 cup brown sugar, packed
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1 dash allspice
1 dash cardamom
1 dash clove
1 dash white pepper
1 dash nutmeg
1 dash salt
1 1/4 cups pumpkin puree (10 ounces)
1/4 cup heavy cream
3 tablespoons maple syrup
1 1/2 teaspoons vanilla
2 eggs, room temp.
2 cups fresh cranberries (1/2 pound)
1/2 cup sugar
1/4 cup orange juice
1 1/2 teaspoons unflavored gelatin

Steps:

  • Pastry: Using a food processor, grind almonds.
  • Add 1/2 cup of the flour and process until fine.
  • Place almond mixture in a bowl.
  • Using the processor, cream the butter and powdered sugar.
  • Add in egg and vanilla and process.
  • Add in remaining flour, the almond mixture and salt, and pulse until a soft dough forms.
  • Pat the pastry into a round shape and refrigerate for about an hour, or until firm.
  • Preheat oven to 325ºF.
  • Roll out dough on a lightly floured surface.
  • The pastry should be about a 14 inch round and about 1/4 inch thick.
  • Place pastry in a 11 1/2 inch fluted tart pan, with a removable bottom.
  • Press pastry into pan, folding excess back into pan and pressing into sides.
  • Parbake the pastry (with a layer of parchment and dried beans) for 25 minutes, then remove the parchment and beans and continue to bake another 10 minutes.
  • Cool slightly.
  • Make Filling: Using a large bowl, combine cream cheese, brown sugar, spices and salt.
  • Beat on medium until smooth, then add pumpkin puree and continue beating until smooth.
  • Beat in the cream, syrup, vanilla and eggs on low.
  • Place the crust on a baking sheet in the oven, and pour in pumpkin mixture.
  • Bake 30-35 minutes until custard is set, though slightly jiggles in the center.
  • Cool completely.
  • Make Cranberry Topping: Place cranberries in a saucepan with a 1/2 cup of water and cook over medium high heat, until cranberries split.
  • Allow to cool.
  • Puree until smooth and strain.
  • Add sugar and 1/4 cup water to a saucepan and bring to a boil, stirring constantly.
  • Allow to cool.
  • Add orange juice and cranberry puree and stir until combined.
  • Soften gelatin in 2 tablespoons of water--about 5 minutes.
  • Finish melting in the microwave, 10 seconds on high.
  • Whisk into the cranberry mixture and pour over the pumkin custard.
  • Refrigerate until set-- for at least 1 hour, and up to 2 days.
  • Remove outer shell of tart pan and serve.

  • for the topping boil water and juice. add sugar and zest and lower heat. add cranberries and simmer until they burst, about twenty minutes. when completly cooled top cheesecake.

1 (15 ounce) can pumpkin
1 1/2 cups finely crushed gingersnaps (8-9 oz.)
1/4 cup melted butter
2 tablespoons packed brown sugar
1 (8 ounce) package low-fat cream cheese, softened
1 1/4 cups packed brown sugar
1/4 cup all-purpose flour
2 teaspoons pumpkin pie spice
5 eggs, slightly beaten
1 cup fresh cranberries (or frozen)
1/2 cup light corn syrup
1/2 cup cranberry sauce (or cranberry relish)

Steps:

  • Position two oven racks, one above the other, bottom rack in lowest position. On bottom rack place a 13x9x2 inch baking pan and pour in water to 1" depth.
  • Heat oven to 350*F. To drain pumpkin, line a fine mesh sieve with 100% cotton cheesecloth or a paper coffee filter; set over a bowl. Spoon in pumpkin, set aside while preparing crust.
  • For the crust:.
  • In bowl stir together crushed gingersnaps, butter, and the 2 tbls. of brown sugar. Press the crumb mixture onto bottom and about 1" up the sides of a 9x3" springform pan. Bake 5 minutes or until firm. Cool completely on rack.
  • For filling:.
  • In large bowl beat cream cheese and the 1 1/4 cups brown sugar with an electric mixer on medium speed until smooth. Beat in pumpkin(discard liquid), flour, and pumpkin pie spice until combined. Stir in eggs by hand.
  • Pour filling into crust lined pan, spreading to sides of pan. Place springform pan on baking sheet then on oven rack above water filled pan. Bake 1 hour or until filling appears set when gently shaken. Turn off the oven; let cheesecake stand in oven 30 minutes. (The top may crack as it cools).
  • Cool in pan on wire rack 15 minutes. With a small sharp knife, loosen the crust from sides of pan; cool 30 minutes. Remove sides of springform pan; cool completely on rack. Cover and chill at least 4 hours before serving. Serve with Cranberry Topping.
  • To make Cranberry Topping:.
  • In a small saucepan combine 1 cup cranberries and corn syrup. Cook and stir over medium heat 4-5 minutes or until berries begin to pop. Remove from heat. Stir in 1/2 cup cranberry sauce or relish. Cool.
  • Makes about 1 1/2 cups topping.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch springform pan.
  • Combine graham cracker crumbs and 1/4 cup white sugar in a bowl; stir in butter. Press crust onto the bottom and 1 1/2-inches up the side of prepared springform pan.
  • Bake in preheated oven until set and lightly browned, 5 to 7 minutes. Cool for 10 minutes.
  • Meanwhile, beat cream cheese and brown sugar in a large bowl until smooth. Stir pumpkin, cornstarch, 1 1/4 teaspoons cinnamon, and nutmeg into cream cheese mixture. Gradually beat in evaporated milk and eggs until just blended; pour into crust. Place pan on a baking sheet.
  • Bake in preheated oven until center is almost set, 55 to 60 minutes.
  • Combine sour cream, 1/3 cup white sugar, and vanilla extract in a small bowl. Spread sour cream topping over cheesecake and bake 5 minutes longer. Cool on wire rack for 10 minutes, then carefully run a knife around edge of pan to loosen; cool 1 hour then refrigerate overnight.
  • Remove sides of pan; let stand at room temperature 30 minutes before slicing. Sprinkle with cinnamon.

2 cups crushed shortbread cookies
2 tablespoons sugar
1/4 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
2 tablespoons orange juice
1 tablespoon grated orange zest
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
3 large eggs, lightly beaten
TOPPING:
3 cups fresh or frozen cranberries, coarsely chopped
1-1/4 cups sugar
1 cup water
2 tablespoons cornstarch
1/4 cup orange juice
1/2 cup coarsely chopped pecans, toasted

Steps:

  • In a small bowl, combine cookie crumbs and sugar; stir in butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 325° for 6-8 minutes or until set. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in the orange juice and zest, vanilla and cinnamon. Add eggs; beat on low speed just until combined. Pour filling over crust. , Return pan to baking sheet. Bake at 325° for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight., In a large saucepan, combine the cranberries, sugar and water. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Combine cornstarch and orange juice until smooth; stir into cranberry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened., Remove from the heat; cool to room temperature. Stir in pecans. Spoon over cheesecake. Refrigerate until chilled.

What a wonderful way to end your fall dinner. This cheesecake would be especially good at Thanksgiving. Using a straight-sided glass to press crumb mixture onto bottom and up sides of springform pan will make that job a little easier. This cheesecake is best if made a day ahead and adding the topping about 30 minutes before serving. I haven't included cooling time in the prep or cook time. This recipe is originally from Southern Living.

1 cup graham cracker crumbs
1/4 cup granulated sugar
1/4 cup butter, melted
2 (8 ounce) packages cream cheese, softened

1 teaspoon lemon juice
1/2 teaspoon vanilla extract
2 large eggs
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cloves

1/3 cup light brown sugar, packed
1/3 cup chopped pecans

Steps:

  • Stir together the first 3 ingredients. Press crumb mixture into bottom and up sides of an 8-inch springform pan.
  • Bake crust at 325° for 8 minutes. Cool on a wire rack.
  • Beat cream cheese and next 4 ingredients at medium speed with an electric mixer until smooth.
  • Add eggs, 1 at a time, beating until blended after each addition.
  • Stir in cinnamon, nutmeg, and cloves.
  • Pour mixture into prepared crust.
  • Bake at 325° for 40 minutes or until almost set.
  • Remove cheesecake from oven; gently run a knife around edge of pan, and release sides.
  • Cool completely on a wire rack.
  • Cover and chill 8 hours.
  • Stir together 3 tablespoons butter, brown sugar, and pecans; spoon over top of cheesecake.
  • Broil 3 inches from heat for 3 minutes or until mixture begins to bubble.
  • Let stand 10 minutes before serving.
  • Store in refrigerator.

Steps:

  • Combine gingersnap crumbs and butter or margarine in a medium mixing bowl. Place mixture in a 10-inch springform pan. Press crumbs evenly over bottom and 2-inches up the sides of pan; set aside.
