HOMEMADE CHILI POWDER

Homemade Chili Powder image

A recipe I came across by accident in one of my cookbooks. I've never made chili powder before, nor have I looked on Zaar for a recipe. Heaven only knows why I haven't. The only chili powder that I can buy is very expensive (I have an allergy to black pepper and most brands say "spice" on the label which could mean anything) so I decided to try this one. I'll never buy chili powder again. You can adjust the heat by increasing or decreasing the amount of cayenne.

ANCHO CHILI POWDER

Ancho Chili Powder image

Provided by Tyler Florence

Categories     condiment

Time 7m

Yield about 1 cup

Number Of Ingredients 9

3 ancho chiles, seeded and hand-torn into pieces
2 tablespoons chili powder
2 tablespoons ground coriander
1 tablespoon ground cumin
1 tablespoon sweet paprika
1 tablespoon dried oregano
1 tablespoon garlic powder
1/4 teaspoon ground cinnamon
1 teaspoon sugar

Steps:

  • This homemade chili powder will add a smoky depth to chili and as a dry rub for steaks. Toast the ancho chile pieces over low heat in a dry skillet until fragrant, shaking the pan so they don't scorch. Put the chiles in a mini food processor and pulse to a powder. Add the remaining ingredients and buzz again to combine.

CHILI POWDER

Chili Powder image

To me, chili powder need not be superhot, but you can change that if you like-just add cayenne or some spicy dried chiles (most of the common dried red ones you find are pretty fiery). But it is easy enough to add heat at any stage of cooking or even at the table, whereas the warm, welcoming flavor of good chili powder is hard to come by. When you're buying dried chiles, look for those that are not brittle; they should retain some moisture and even be a bit soft.

Categories     Spice     Chili     Chile Pepper     Cumin

Yield Makes about 1/2 cup

Number Of Ingredients 4

4 ancho or 8 dried New Mexico chiles, stemmed and seeded
1 dried hot chile, like chile de árbol, stemmed and seeded, or cayenne to taste
2 tablespoons cumin seeds
2 tablespoons dried oregano, preferably from Mexico

Steps:

  • Combine the whole chiles and cumin seeds in a large skillet over medium heat. Cook, shaking the pan occasionally, until lightly browned and fragrant, just a few minutes; for the last minute of cooking, add the oregano.
  • Cool, then grind in a spice or coffee grinder to a fine powder; add cayenne at this stage if you're using it (some cooks also put in a bit of garlic powder). Store in a tightly covered opaque container for up to several months.

  • Remove the stems and seeds from the anchos and spread the peppers out flat. Reserve the seeds. Place the chiles flat on a comal or cast-iron skillet over medium heat. Lightly toast the ancho chiles until they’re brittle, being careful not to burn them. Place the chiles on a plate and let them cool.
  • Toast the cumin on the hot comal or skillet, still over medium heat, stirring and shaking until fragrant. Transfer to a separate plate. If a hotter chili powder is desired, toss some of the chile seeds onto the hot surface and toast them, too.
  • Cut the chiles into small strips with scissors. In a clean coffee grinder, coarsely grind the strips in several batches until powdered. Coarsely grind the cumin and chile seeds, if using, in the coffee grinder. Combine the powdered chile, cumin, ground seeds, Mexican oregano, and garlic powder in a bowl and then grind this coarse powder in the coffee grinder in batches until finely ground, about 2 minutes. Store in an airtight container until ready to use. Originally published September 12, 2015.
