How to butterfly and roast a moist flavorsome chicken

4 lb (1.8kg) chicken ((fresh, preferably organic))
1 lemon
1 cup fresh herbs ((see notes))
4 garlic cloves ((maybe more depending on size))
2 teaspoons salt
freshly ground pepper
1/2 teaspoon chilli flakes ((optional))
1/2 cup extra virgin olive oil ((divided))
1 teaspoon salt ((extra))

Steps:

  • Pat the chicken dry with paper towels and turn the chicken breast side down on the board. Using strong kitchen scissors ( the Jamie Oliver ones I have are great), start at the tail and cut up each side of the backbone and cut the backbone out.
  • Turn chicken breast side up and press down with the heel of your palm onto the breast bone until you hear a snap.
  • The chicken should now be flattened and ready for flavor bombing!
  • Preheat oven 400ºF/200ºC
  • Take a long strip of rind off the lemon using a potato peeler (or as much lemon as you want). You don't want any white pith. Reserve the lemon.
  • Using a mini food processor or similar appliance, process lemon rind, herbs, garlic and chilli flakes, if using, with 1/4 extra virgin olive oil until finely chopped and looks a bit like pesto.
  • Season with 2 teaspoons salt and freshly ground pepper
  • Place the chicken in a roasting pan breast side down. Squeeze over the juice half of the lemon,
  • Spoon a 1/3 of the herb/oil mixture over the chicken and spread evenly and into all crevices.
  • Turn chicken over breast side up. Squeeze over the juice of the remaining lemon half.
  • Slip your fingers gently between the breast and the skin to make a pocket to fill with goodness.
  • Spoon some of the herb/oil mixture into the pocket you have just made then spoon and spread the rest over the chicken.
  • Drizzle over remaining oil and sprinkle with extra salt (or to your taste).
  • Roast for 1 hour. Check at 50 minutes. (see recipe notes)
  • When cooked, remove and cover with loosely with foil to rest for 10 minutes.

1 large chicken, about 4 to 5 pounds (1.8 to 2.3kg)
2 tablespoons (30ml) light olive oil or other neutral-flavored oil, such as canola or vegetable, divided
Kosher salt and freshly ground black pepper (see note)
1 teaspoon (5g) baking powder (optional; see note)
2 teaspoons (10g) chopped fresh parsley, thyme, rosemary, oregano, marjoram, savory, or a mix (optional)
1 medium onion, roughly chopped (about 1 cup)
1 medium carrot, peeled and roughly chopped (about 1/2 cup)
1 medium rib celery, roughly chopped (about 1/2 cup)
1 bay leaf
1 cup (240ml) dry vermouth or sherry
1 cup (240ml) water
1 teaspoon (5ml) soy sauce
3 tablespoons (45g) unsalted butter
2 teaspoons (10ml) juice from 1 lemon

Steps:

  • Place oven rack in upper-middle position and preheat oven to 450°F (232°C). Using sharp kitchen shears, remove backbone from chicken and cut spine into 5 to 6 one-inch-long pieces. Set backbone aside. Flatten chicken by placing skin side up on a cutting board and applying firm pressure to breastbone. Transfer to a wire rack set in a foil-lined rimmed baking sheet. Position chicken so that breasts are aligned with center of baking sheet and legs are close to edge.
  • If using herbs: using your fingers and starting from the neck end and working your way down towards the legs, gently separate chicken skin from the breast and thigh meat; be careful not to tear the skin. Carefully push the herbs under the skin, distributing them as evenly as possible all over the breast and thigh muscle.
  • Combine 1 tablespoon (15g) kosher salt, 1/2 teaspoon ground black pepper, and 1 teaspoon (5g) baking powder (if using) in a small bowl. Sprinkle all over chicken skin and cavity sides, then return to skin-up position. Drizzle chicken skin with 1 tablespoon (15ml) oil, rubbing to distribute evenly.
  • Roast chicken until thickest part of breast close to bone registers 150°F (66°C) on an instant-read thermometer and joint between thighs and body registers at least 175°F (80°C), about 45 minutes.
  • Meanwhile, heat remaining 1 tablespoon (15ml) oil in a small saucepan over high heat until shimmering. Add chicken backbone and cook, stirring frequently, until well browned, about 3 minutes. Add onion, carrot, and celery and cook, stirring frequently, until beginning to brown, about 3 minutes. Add bay leaf and deglaze with vermouth or sherry and 1 cup (240ml) water, using a wooden spoon to scrape up any browned bits from bottom of pan. Reduce heat to maintain simmer and cook for 20 minutes. Strain out solids and return liquid to pan. Boil over medium-high heat until approximately 1/3 cup (80ml) remains, about 7 minutes. Whisk in soy sauce, butter, and lemon juice off heat. Season to taste with salt and pepper.
  • Remove chicken from oven, transfer to cutting board, tent loosely with foil, and allow to rest 5 minutes before carving. Serve with hot jus.

This week we are getting 2 different meals out of the same basic protein, cubed pork shoulder (butt) and chicken thighs. Midweek? A meat-free menu to lighten things up.

Handful dried porcini mushrooms (about 1/2 ounce)
3 cups chicken stock
8 boneless, skinless chicken thighs, pounded
Salt and pepper
2 tablespoons flour, plus more for dredging
2 to 3 tablespoons olive oil
4 tablespoons butter
2 cloves garlic, finely chopped
1 onion, finely chopped
A few fresh sage leaves, chopped
A few fresh thyme leaves, chopped
1/2 cup dry white wine
1 cup milk
1 cup quick-cooking polenta
1/2 cup grated Parmigiano-Reggiano
Finely chopped fresh parsley, for garnish

Steps:

  • Place the dried mushrooms in pot with 2 cups of the stock. Simmer to soften the mushrooms and flavor the stock. When rehydrated, remove the mushrooms from the stock and chop. Reserve the stock, except for the very bottom, which may contain grit from the mushrooms.
  • Sprinkle the chicken with salt and pepper, and then dredge in flour. Heat the oil in a pan over medium-high heat and add the chicken to brown on both sides. Remove to a plate and add a bit more oil if necessary. Add 2 tablespoons of the butter to the pan and melt. When the butter foams, add the garlic, onions, sage, thyme and some salt and pepper, and cook to soften, 7 to 8 minutes. Stir in 2 tablespoons flour, then deglaze the pan with the wine. Add the chopped mushrooms and whisk in the flavored stock. Cook to thicken a bit and add the chicken back to the sauce.
  • Cool and store for a make-ahead meal. Reheat over medium heat.
  • To serve, heat the remaining 1 cup stock, the milk and 1 cup water to a low boil. Whisk in the polenta, and then whisk to thicken, 2 to 3 minutes. Stir in the remaining 2 tablespoons butter, some salt and pepper and the grated cheese.
  • Serve the polenta in shallow bowls topped with the chicken, gravy and a sprinkle of parsley.

High-Roasted Butterflied Chicken With Herbs and Porcini Mushroom image

This a combination recipe from Cook's Illustrated. It is sinfully delicious! The porcini mushrooms add a unique earthy, smoky flavor. I personally didn't brine the chicken because it already had a saline solution injection. I also didn't make the potatoes with it, but will try that next time. Although there seems to be a lot of steps, it's not really all that difficult for amazing results! Th skin is absolutely beautiful and crisp.

1 cup kosher salt, for brine (or 1/2 cup table salt)
1/2 cup granulated sugar
1 whole chicken, giblets removed and reserved for another use, fat around cavity removed and discarded (3 1/2 to 4 lbs)
2 1/2 lbs russet potatoes or 2 1/2 lbs yukon gold potatoes, about 4 to 5 medium peeled and sliced 1/8 to 1/4 inch thick
4 tablespoons dried porcini mushrooms
1 tablespoon minced fresh thyme leave
1 tablespoon minced fresh rosemary
kosher salt
1/3 cup unsalted butter, at room temperature
vegetable oil cooking spray (nonstick)
1 1/2 tablespoons olive oil
3/4 teaspoon table salt (for potatoes)
ground black pepper

Steps:

  • Dissolve salt and sugar in 2 quarts cold water in large container. Immerse chicken and refrigerate until fully seasoned, about 1 hour.
  • Meanwhile, In small bowl, cover mushrooms with boiling water; let stand until mushrooms soften, about 15 minutes. Using fork, lift mushrooms from liquid and chop fine.
  • In small bowl, mix porcini, thyme, rosemary, 1/2 teaspoon salt, and butter until combined.
  • Adjust oven rack to lower-middle position and heat oven to 500 degrees. Line bottom of broiler pan with foil and spray with nonstick vegetable cooking spray.
  • Remove chicken from brine and rinse thoroughly under cold running water. Butterfly chicken, flatten breastbone with palm of hand.
  • Slip your fingers between skin and breast, loosening the membrane.
  • Scoop some of the butter onto a spoon, slide it under breast skin, and spread by pushing on top of skin with your fingers.
  • Work butter under skin to cover breast evenly. Repeat with each drumstick and thigh.
  • Position chicken on broiler pan rack; thoroughly pat dry with paper towels.
  • Toss potatoes with 1 tablespoon oil, salt, and pepper to taste in medium bowl. Spread potatoes in even layer in foil-lined broiler pan bottom.
  • Place broiler pan rack with chicken on top. Rub chicken with remaining 1 1/2 teaspoons oil and sprinkle with pepper.
  • Roast chicken until spotty brown, about 20 minutes.
  • Rotate pan and continue to roast until skin has crisped and turned a deep brown and an instant-read thermometer registers 160 degrees in thickest part of breast, 20 to 25 minutes longer.
  • Transfer chicken to cutting board.
  • With potholders, remove broiler pan rack; soak up excess grease from potatoes with several sheets paper towels. Remove foil liner with potatoes from broiler pan bottom and invert foil and potatoes onto cookie sheet or second cutting board. Carefully peel back foil, using a metal spatula to help scrape potatoes off foil as needed. With additional paper towels, pat off remaining grease.
  • Cut chicken into serving pieces and serve with potatoes.

1 (3 pound) organic free-range chicken
Kosher salt and freshly ground black pepper
1/2 red onion, quartered
1/2 lemon, cut into 4 pieces
1/2 head garlic, about 6 cloves, smashed
1 bunch fresh thyme
1 1/2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 pound sliced bacon, cut in 1/2
3 pounds whole cremini mushrooms, wiped clean with a damp towel

Steps:

  • Heat the oven to 400 degrees F.
  • Pat the chicken dry with paper towels. Season the cavity with salt and pepper.
  • In a large bowl combine the onion, lemon, garlic, half the thyme, and 1 1/2 tablespoons olive oil; season with salt and pepper and mix it well. Stuff the bird with the mixture. Using 2 (3-foot) pieces of kitchen twine, tie up the chicken: Tuck the wing tips between the wings and the body. Put the midpoint of the twine under the chicken, bring the ends up and around the wings, and pull them tight against the body. Bring the ends of the twine up underneath the legs, wrap the string around them, pull the legs together, and tie them tightly. Place the chicken, breast side up in a roasting pan, and layer the strips of bacon up breast until covered. Scatter over the remaining thyme, drizzle over some more olive oil and season everything with salt and pepper.
  • Roast the chicken for 1 1/2 hours; arrange the mushrooms around the chicken 45 minutes after roasting. Baste with the pan juices every 20 minutes. The chicken is done when an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the thigh (the legs should wiggle easily in their sockets.)
  • Remove the chicken from the pan, cover with foil, and let stand for 10 minutes to rest. Serve the chicken with the roasted mushrooms and pan juices.

2 cups dried porcini mushrooms ( 1 3/4 ounces )
1 1/2 cups boiling-hot water plus 1/4 cup cold water
1 cup thinly sliced shallots (about 3 medium)
1/3 cup olive oil, divided
1 1/2 teaspoons chopped thyme plus 3 whole sprigs
5 tablespoons dry Marsala, divided
1 1/2 tablespoons mild honey
1 whole chicken (about 3 1/2 pounds)
2 1/4 pounds large Yukon Gold potatoes
1/2 tablespoon all-purpose flour
1/2 cup reduced-sodium chicken broth
1 tablespoon white-wine vinegar
Equipment: kitchen string

Steps:

  • Soak porcini in hot water (1 1/2 cups) in a small bowl until well softened, 20 to 30 minutes. Lift porcini out, squeezing liquid into bowl, then rinse porcini (to remove any grit) and coarsely chop. Strain soaking liquid through a sieve lined with a damp paper towel into a small saucepan and reserve.
  • Preheat oven to 425°F with rack in middle.
  • Cook shallots in 2 tablespoons oil with 1/4 teaspoon salt in a 12-inch nonstick skillet over medium heat, stirring occasionally, until golden, about 7 minutes. Add porcini, chopped thyme, and 1/4 teaspoon pepper and cook, stirring occasionally, 2 minutes. Add 3 tablespoons Marsala and boil until most of liquid has evaporated, then remove from heat.
  • Add honey to soaking liquid in saucepan with thyme sprigs, remaining 2 tablespoons Marsala, and 1/4 teaspoon salt. Boil until syrupy and reduced to about 3 tablespoons, 15 to 20 minutes. Discard thyme sprigs.
  • Meanwhile, remove excess fat from chicken and pat dry. Season inside and out with a rounded teaspoon salt and 3/4 teaspoon pepper. Stuff cavity with mushroom mixture and tie legs with string.
  • Put chicken in a small (13-by 9-inch) roasting pan. Roast until an instant-read thermometer inserted into fleshy part of a thigh (do not touch bone) registers 170°F, about 1 hour. About 5 minutes before chicken is done, brush with all of honey glaze. If glaze begins to get too dark before chicken is cooked through, loosely cover with foil.
  • While chicken roasts, peel potatoes and cut into 1/2-inch pieces. In cleaned nonstick skillet, heat remaining 3 1/3 tablespoons oil over medium heat, then add potatoes, stirring to coat. Stir in remaining 1/4 cup water and simmer, covered, stirring occasionally, 10 minutes. Remove lid and increase heat to medium-high. Add 1/2 teaspoon salt. Continue to cook, stirring occasionally, until liquid has evaporated and potatoes are golden brown all over, about 20 minutes more. Transfer to a baking sheet (do not cover).
  • Transfer chicken to a cutting board to rest 15 minutes. Turn off oven and put potatoes in oven to keep warm.
  • Meanwhile, straddle roasting pan across 2 burners and add flour. Cook over medium-high heat, stirring, 1 minute. Add broth and vinegar, stirring and scraping up brown bits. Boil mixture until reduced by about a third, about 4 minutes. Strain through a fine-mesh sieve into a gravy boat.
  • Discard kitchen string from chicken. Scoop out mushroom mixture into a bowl, stir in potatoes, and serve with chicken.

I roasted at hot temperature the chicken in the skillet and I continue cooking at low temperature in the oven (65°C/150°F). This is not possible with every kind of oven. 4 chicken breasts, skinless butterflied
1/2-1 teaspoon spices (herbes de Provences or Mexican Seasoning Mix or)
2 tablespoons margarine
1/2 cup onion, chopped
250 g mushrooms, fresh or 250 g frozen porcini mushrooms, in pieces
1/2 cup white wine
1/2 cup heavy cream
1 cup broth
1 teaspoon cornflour
3 garlic cloves, minced
1 teaspoon lemon zest, grated
1 tablespoon chives, chopped (or more or other herbs to taste)
1/4 teaspoon black pepper
salt
chives, for decoration

Steps:

  • Preheat the oven and one Pyrex at 65°C/150°F.
  • Rub the chicken with the Mexican spices.
  • Heat skillet with 1 tablespoon margarine at high temperatures and add the chicken.
  • Cook the chicken on each side for about 2 minutes until light brown. Set aside in the preheated oven for at least 20 minutes.
  • In the same skillet add the second tablespoon of margarine.
  • Add onions and cook until soft.
  • Add mushrooms and cook for 5 minutes.
  • Dissolve corn flour in broth.
  • Now add wine, cream, broth with cornfour, lemon zest, pepper, garlic and chives.
  • Stir until combined, adjust salt and pepper and place another bowl in the oven until ready to eat.
  • Just before serving, place the chicken hearth on the plate adjust sauce on the plate and decorate with some chives if you want.
  • Note: cooking at low temperature will allow you to prepare in advance and have time for your guests as the meat will not dry out rapidly.

4 chicken breasts
1/2 teaspoon salt
1/2 teaspoon pepper
2 cups porcini mushrooms (sliced)
1/4 cup butter
2 cups cream, room temperature
1/2 cup dry white wine, room temperature
2 tablespoons chives
1 teaspoon lemon zest
1 garlic clove, very finely minced
1 tablespoon chives, for garnish

Steps:

  • Butterfly chicken breasts, flavor with salt and pepper, place open side up in 8x14" glass dish and set aside.
  • In a large skillet melt the butter then add porcinis. Cook covered, 2-3 minutes, stirring once.
  • Remove porcinis with slotted spoon, set aside and keep warm.
  • Stir in cream, white wine, two tablespoons chives, lemon zest and garlic.
  • Bring to boil then reduce heat.
  • Simmer, uncovered, 3-5 minutes or until slightly thickened and bubbly.
  • Stir in porcinis and remove from heat.
  • Drizzle sauce over raw breasts, cover with foil and bake in 350 oven until juices run clear.
  • Garnish with extra chives and serve with salad and fresh bread.
