ROAST PORK WITH CRACKLING

Roast pork with crackling image

This classic roast pork recipe with lots of delicious crackling is great for Sunday lunch with the family. Top with our tasty apple & cider gravy

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 2h30m

Number Of Ingredients 11

1.8kg piece of rolled and tied pork loin with the skin scored
2 garlic cloves, sliced into thin slivers
small bunch rosemary, broken into small sprigs
3 bay leaves, torn
1 onion, roughly chopped
1 large carrot, chopped
1 Bramley apple, peeled, quartered, cored and roughly sliced
1 tbsp sunflower oil
2 tbsp plain flour
100ml good quality cider
500ml vegetable or chicken stock

Steps:

  • If you have time, rub salt in the pork skin 2 hours before cooking and leave it uncovered in the fridge. Heat the oven to 230C/210C fan/gas 8. Turn the pork rind-side down and with a small knife make about 6 deep incisions along the meat. Poke a sliver of garlic, a piece of rosemary and bay in each incision and turn the pork the right way up. If you didn't salt the pork earlier salt the skin now.
  • Mix the carrot, onion and apple and scatter along the middle of a shallow roasting tray to make a bed for the pork to sit on. Sit the pork on the vegetables and rub the skin with the oil. Place the pork in the oven and leave for 15 mins then turn the heat down to 180C/160C fan/gas 4 and continue to roast for 1hr 30 mins. If after this time you don't have brilliant crackling turn the heat up again and check every 5 mins until the skin has crackled.
  • Remove the pork from the roasting tray to a board to rest and pour off all but about 2 tbsp of fat from the tray. If your tray is robust enough to go on the heat then do so, if not scrape the contents into a shallow saucepan and place on the heat. Stir the flour in with the veg and cook until you have a mushy, dark amber paste then splash in the cider and bubble down to a thick paste again. Pour in the stock and simmer everything for 8-10 mins until you have thickened gravy. Strain the sauce into another saucepan pushing as much puréed apple as you can through the sieve. Simmer again and season to taste.
  • Carve the pork loin with crackling attached into slices using a serrated knife and serve with your favourite vegetables and the apple and cider gravy.

HERB-MARINATED PORK TENDERLOINS

Herb-Marinated Pork Tenderloins image

For a healthy main course, try Ina Garten's Herb-Marinated Pork Tenderloins recipe from Barefoot Contessa on Food Network herbs add great flavor without fat.

Provided by Ina Garten

Categories     main-dish

Time 3h35m

Yield 6 servings

Number Of Ingredients 10

1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
Good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

SPICE BLEND FOR PORK ROAST
1 Tbsp each granulated garlic & onion, paprika & steak seasoning
2 tsp crushed rosemary
APPLE BOURBON MARINADE
2 c apple juice
1/2 c bourbon
1/4 c firmly packed brown sugar (i used 1/3 cup)
APPLE BOURBON GRAVY
1/4 c butter (1/2 stick) i used 1/3 cup
1/4 c all purpose flour (i used 1/3 cup)
1/2 c drippings from roast
1 1/2 c apple bourbon marinade
1/2 c apple juice
1 tsp steak seasoning like montreal instead of salt & pepper
1 1/2-2 tsp chopped dried chive, optional

  • 1. To make the Pork Roast-PREHEAT OVEN TO 450 DEGREES F. Combine all of the spices in a small bowl then sprinkle liberally over the entire roast. Spray a shallow baking pan with non stick cooking spray, add roast and roast for 15 minutes. This locks in the moistness. LOWER TEMPERATURE to 275 degrees F. and continue to roast for 1 hour and 30 minutes or until internal temperature reaches 155 degrees F. when tested with a meat thermometer. Remove from oven and allow to rest about 15 minutes, temperature will continue to rise to about 165 degrees F. Then carve, I prefer using an electric knife for easier carving.
  • 2. Blend the 3 marinade ingredients together until the sugar dissolves, & set aside till needed. To Make the gravy. In a medium size sauce pan, melt the butter.
  • 3. Add in the flour, and stir until flour blend together with the melted butter, making a thick paste like consistency.
  • 4. Whisk the paste mixture together.
  • 5. Add in the Apple Bourbon marinade
  • 6. Whisk briskly to eliminate any lumps, and continue to stir over medium high heat.
  • 7. Add in the steak seasoning and chive if desired. Taste first, and add spice according to taste buds.
  • 8. Serve with your favorite Roast or poultry, great over mashed potatoes too. NOTE: THERE IS NO REASON TO BE INTIMIDATED WHEN MAKING THIS SIMPLE EASY TASTY AND DELICIOUS GRAVY if you follow the easy step by step instructions.

HERB-ROASTED PORK LOIN

Herb-Roasted Pork Loin image

In Tuscany, the word arista is used for a pork roast seasoned with herbs and garlic. According to local lore, the dish received its name in the 15th century, when it was served to a group of Greek bishops who declared it aristos-"the best." Most food scholars dismiss this story, noting that 14th-century Italian author Franco Sacchetti referred to a pork roast as "arista" in one of his novels. But there's no debate that this impressive dish will earn high marks wherever it's served. Here, the rub's fresh herbs echo the subtly herbaceous flavors of the Tempranillo. Williams-Sonoma

Time 2h30m

Yield 8 serving(s)

Number Of Ingredients 9

4 large garlic cloves
2 tablespoons fresh rosemary leaves
2 tablespoons fresh sage leaves
2 teaspoons crushed fennel seeds
sea salt & freshly ground black pepper, to taste
1 bone-in pork loin roast, about 5 lb
4 tablespoons olive oil
1 yellow onion, halved and sliced
1 cup dry white wine, such as Pinot Grigio

Steps:

  • Preheat an oven to 325°F.
  • Using a chef's knife, very finely chop together the garlic, rosemary and sage. Transfer to a small bowl, add the fennel seeds, season with salt and pepper, and mix well. Make slits 1/2 inch deep all over the pork roast and insert some of the mixture into each slit. Rub the roast with the remaining seasoning, then rub with 2 Tbs. of the olive oil. Place the meat in a roasting pan just large enough to hold it.
  • Transfer the pan to the oven and roast the meat for 1 hour. In a bowl, toss the onion slices with the remaining 2 Tbs. olive oil and scatter them around the meat. Continue to roast until an instant-read thermometer inserted into the thickest part of the roast, away from the bone, registers 150°F, or the meat is pale pink when cut into at the center, about 1 1/4 hours more. Transfer the roast to a carving board, cover loosely with aluminum foil and let rest for 15 minutes before carving.
  • Meanwhile, pour off most of the fat in the roasting pan and place the pan over medium-low heat. Add the wine and deglaze the pan, stirring to scrape up any browned bits from the pan bottom. Simmer until the sauce is slightly reduced.
  • Carve the roast and arrange on a warmed platter. Spoon the pan sauce over the pork and serve immediately.

HERB ROAST PORK WITH VEGETABLE ROASTIES & APPLE GRAVY

Herb roast pork with vegetable roasties & apple gravy image

This lean roast dinner uses pork leg topped with prosciutto. Serve with roast potatoes, carrots and celeriac, plus lots of herbs and an apple gravy

Provided by Sara Buenfeld

Categories     Dinner

Time 2h5m

Number Of Ingredients 16

1 ¼kg boneless pork leg roasting joint
1 tbsp wholegrain mustard
2 tbsp chopped parsley
2 tbsp chopped thyme , plus a few extra sprigs
1 tsp chopped sage
80g pack prosciutto
4 good sprays of oil
3 carrots , halved lengthways, then cut across
6 small potatoes (500g), halved
2 red onions , cut into wedges
12 garlic cloves
1 small celeriac (650g), peeled and cut into 12 wedges
2 tbsp cornflour
600ml reduced-salt chicken stock
1 small Bramley apple , diced
Savoy cabbage and peas, to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Cut all the rind and fat off the pork and discard so that you are left with a lean chunk of meat. Spread with the mustard, scatter with the chopped herbs and season with black pepper. Place the prosciutto slices on top of the pork to protect the meat where the fat has been removed.
  • Spray a large roasting tin with oil and put the pork in the centre. Surround with all the vegetables, scatter with the thyme sprigs, then spray again and cover with foil. Roast for 1 hr, then turn the heat up to 220C/200C fan/gas 7. Uncover, spray again and roast for 20 mins more.
  • Meanwhile, make the gravy. Mix the cornflour with a little water to make a wet paste, heat the stock in a pan, stir in the cornflour mixture and cook, stirring, until thickened. Add the apple and cook for 5 mins until it's softened but still holds its shape.
  • Remove the meat from the tin and pour any juices from the tin into the gravy. Spray the veg with oil and roast for 20 mins more (while the meat rests) to brown them. Serve the pork with the roasted and fresh vegetables, and the apple gravy.

STUFFED PORK TENDERLOIN WITH APPLE BOURBON GRAVY

Stuffed Pork Tenderloin with Apple Bourbon Gravy image

This Stuffed Pork Tenderloin with Apple Bourbon Gravy is the perfect alternative to a huge turkey on your holiday menu!

Provided by The Chunky Chef

Categories     Main Course

Time 1h15m

Number Of Ingredients 29

1 1/2 lb pork tenderloin (silver skin removed)
2 Tbsp olive oil
2 slices bacon (diced)
2 small to medium gala apples (or your favorite type) (peeled, cored, and diced)
1 small yellow onion (diced)
2 cloves garlic (minced)
1/2 tsp kosher salt
1/4 tsp black pepper
1 Tbsp chopped fresh sage
1 1/2 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 1/2 Tbsp packed light brown sugar
1 1/2 tsp smoked paprika
3/4 tsp garlic powder
1/2 tsp black pepper
1/2 tsp onion powder
1/2 tsp dried thyme
1/4 tsp ground cumin
1/4 - 1/3 cup pan drippings (from cooking the pork)
1/3 cup bourbon
1 cup reduced sodium chicken broth or stock
2/3 cup apple cider
2 tsp dijon mustard
1/2 tsp kosher salt
1/4 tsp black pepper
1/4 tsp onion powder
1/4 cup cold water
2 Tbsp cornstarch
1 Tbsp cold unsalted butter

Steps:

  • Heat a large oven safe skillet (I prefer cast iron), over MED LOW heat. Add bacon pieces and cook until crisp. Remove with a slotted spoon to a paper towel lined plate.
  • To the same skillet, add onion, apple, garlic, salt and pepper. Cook, stirring often, for 3-5 minutes, until softened.
  • Stir in sage, rosemary and thyme, and remove mixture to the plate with the bacon.
  • Wipe out skillet, but no need to wash. Set aside for now.
  • Add tenderloin to a cutting board. Hold your knife parallel to the board and carefully slice the pork from right to left (if you're a righty), until you're about 1/2 an inch away from the opposite side.
  • Open the tenderloin up like a book, then cover with plastic wrap or wax paper and pound with the flat side of a meat mallet until the whole tenderloin is about 1/2 an inch thick.
  • Remove plastic wrap, and spread stuffing mixture evenly over the surface of the meat, leaving a small border all the way around.
  • Start with a long edge, and roll the meat up into a tight log shape, pushing any stuffing back in that falls out of the ends.
  • Secure the ends with several toothpicks, keeping them all pointing the same way. Take note of how many you used, so you can make sure you take that same amount back out at the end of cooking!
  • Combine rub ingredients in a small bowl, then rub evenly over the entire surface of the tenderloin, being careful not to poke yourself on the toothpicks.
  • Preheat oven to 400°F.
  • Add 2 Tbsp to cast iron skillet from earlier, and heat over MED HIGH heat. Once oil is hot, add tenderloin, toothpick side down, and sear for 1-2 minutes per side, until golden brown.
  • Transfer the skillet to the preheated oven for about 20 minutes, or until an instant read thermometer reads 140-145°F.
  • Transfer pork to a cutting board and let rest for about 10 minutes.
  • While meat is resting, transfer skillet back to the stovetop and heat over MED/MED HIGH heat. There should be drippings in the skillet from cooking the pork, drain off some if needed, so that you have about 1/4 - 1/3 cup left... those add great flavor.
  • Add bourbon and use a wooden spoon to scrape the bottom of the pan, loosening any browned bits.
  • Pour in chicken stock, apple cider, mustard, salt, pepper, and onion powder, and bring to a low boil.
  • In a small mixing bowl, combine cold water and cornstarch and whisk together until smooth.
  • Pour cornstarch mixture into the boiling liquid, whisking as you add it.
  • Reduce heat to MED LOW and simmer, stirring often, until gravy has thickened to your liking.
  • Remove from heat and add cold butter, whisking as it melts into the gravy.
  • Slice tenderloin into 1/2-3/4" rings, and drizzle gravy over the slices.
  • Serve with additional gravy on the side.

  • Heat the oil in a large Dutch oven (or similar, heavy-bottomed pan) over medium-high heat. Saute the pork for about 5 minutes on each side, then remove it to a plate. In the same pan over medium heat, saute the garlic, rosemary and sage, stirring, for about one minute. Add the wine to the pan and use a wooden spoon to scrape the bottom of the pan. Cook the wine until the smell of the alcohol has disappeared, about 1 to 2 minutes.
  • Lower the heat under the pan to low-medium heat. Return the pork to the pan and season with salt and pepper. Partially cover with a lid and cook for about 1 - 1 1/2 hours, depending on thickness. (considerably less if you're using pork tenderloins). Rely on a thermometer to check for doneness, flipping the pork and scraping the bottom of the pan every 20 minutes or so and measuring the internal temperature with each flipping, to gauge the cooking progress. Make sure there continues to be some liquid in the pan. Add 1/4 cup of warm water if necessary.
  • When the pork is cooked through (ideally, you want to test with a thermometer, it should be about 140°F internal temperature.) Remove pork to a cutting board to rest and cover with loosely with a sheet of aluminum foil to help retain the heat while it rests.
  • Meanwhile, increase the heat under the liquid in the pan to medium. If your pan has little liquid, deglaze with a splash of white wine. Stir well to loosen the browned bits on the bottom of the pan. Allow to cook until the alcohol smell disappears (about 1-2 minutes). Add the chicken stock and stir to combine. Heat over medium heat a few minutes, to allow the chicken stock to heat through a bit. Reduce heat to medium-low. Add the cream. Heat gently over medium-low heat, stirring the sauce constantly, until it thickens a bit and is warmed through. Avoid vigorously boiling. A gentle simmer is fine. (*If your sauce doesn't thicken up, mix 2 Tbsp. cornstarch with 2 Tbsp. water and add a bit at a time to your sauce until it thickens to your liking.) Taste sauce and add salt and freshly ground pepper, to taste.
