Bacon Carbonara Pasta is a classic Italian dish with creamy egg sauce, noodles, eggs and bacon topped with Parmesan cheese in 30 minutes.

1 pound spaghetti
10 slices bacon (, cut into small pieces)
3 large eggs (, yolks)
1/2 teaspoon Kosher salt
1/4 teaspoon coarse ground black pepper
1 cup Parmesan (, shaved)
1 cup frozen peas

Steps:

  • Cook the pasta in a large pot to one minute less than the directions on the box and keep 1/2 cup of pasta water to the side to drain pasta (do not rinse pasta).
  • In a large skillet add the bacon and cook it until crisp then turn off the heat and remove the bacon with a slotted spoon then add the pasta and toss it in the bacon fat.
  • Add the eggs, salt, pepper and Parmesan cheese to a large bowl and whisk well before adding slowly while tossing the hot pasta quickly to prevent it from scrambling.
  • Add in 1/4 cup of the pasta water and peas, tossing again to create a saucy consistency to the pasta then topping with bacon before serving.

Number Of Ingredients 6

1 pkg. (1 lb.) spaghetti, uncooked
8 slices OSCAR MAYER Bacon, cut into 1-inch-thick slices
1 onion, finely chopped
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed, softened
1/2 cup KRAFT Zesty Italian Dressing
3 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook spaghetti as directed on package, omitting salt.
  • Meanwhile, cook and stir bacon and onions in large skillet on medium heat 8 min. or until bacon is crisp and onions are tender. Remove bacon mixture from skillet; drain. Wipe skillet with paper towel.
  • Drain spaghetti. Immediately add to skillet along with the bacon mixture and all remaining ingredients; toss until cream cheese is completely melted and mixture is well blended.

I have tried so many recipes for Carbonara, but this is the best one I have tried. Love that it gets it's creamy flavor from pasta water, and not heavy cream.

1 lb dry spaghetti
2 Tbsp olive oil, extra virgin
4 oz pancetta, or slab bacon, cubed or sliced into small strips
4 clove garlic, finely chopped
2 large eggs
1 c freshly grated, high quality parmesan
freshly ground black pepper
1 handful fresh flat leaf parsley, chopped

Steps:

  • 1. Prepare the sauce while the pasta is cooking to ensure that the spaghetti will be hot and ready when the sauce is finished; it is very important that the pasta is hot when adding the egg mixture, so that the heat of the pasta cooks the raw eggs in the sauce.
  • 2. Bring a large pot of salted water to a boil. add the pasta and cook for 8-10 mins or until tender yet firm (al dente). Reserve 1/2 cup of pasta water, and drain the pasta well.
  • 3. Meanwhile, heat the olive oil in a deep skillet over medium heat. Add the pancetta or bacon and saute for about 3 minutes. until the bacon is crisp and the fat is rendered. Toss the garlic into the fat and saute for less then 1 minute to soften.
  • 4. Add the hot, drained spaghetti to the pan and toss for 2 minutes to coat the pasta in the bacon fat. Beat the eggs and Parmesan together in a mixing bowl, stirring well to prevent lumps. Remove the pan from the heat and pour the egg/cheese mixture into the pasta, whisking quickly until the eggs thicken, but do not scramble.
  • 5. Thin out the sauce with the reserved pasta water, until it reaches desired consistency. Season the carbonara with several turns of freshly ground black pepper and taste for salt. use additional grated parmesan on top of servings and garnish with parsley.

8 to 10 slice bacon
2 clove garlic, minced
2 1/8 c heavy cream
salt and pepper to taste
2 eggs
2 oz parmesan cheese
16 oz fettuccini

Steps:

  • 1. Cut the bacon into approximately 1/2" strips and fry over medium heat.
  • 2. In the meantime, cook the fettuccine according to package directions.
  • 3. When the bacon is almost done, add the garlic and cook about 1 minute. Add the cream and salt and pepper to the pan with bacon and garlic. Simmer until thick and creamy.
  • 4. Whisk together the eggs and Parmesan in a small bowl.
  • 5. When the pasta is cooked, drain and add it to the pan with the bacon and cream sauce. Stir to combine. Add the egg and Parmesan to the pan and stir again. Serve immediately with more Parmesan sprinkled on top, if desired.

Number Of Ingredients 8

1 lb spaghetti
3 egg yolks
1 tablespoon heavy cream (or so)
some olive oil
3 shallots, sliced thin
2 -3 cloves garlic, smashed and or minced
1/2-1 lb thinly sliced bacon, cut into squares
1/2 cup freshly grated parmesan cheese or 1/2 cup romano cheese

Steps:

  • Turn on your boombox with some loud rock music.
  • Boil water for spaghetti as you normally would.
  • Mix egg yolks and cream together and set aside.
  • In a saute pan, place olive oil, bacon, and garlic, to cook over low heat, till bacon is crisp.
  • Make sure to cook the bacon very slowly.
  • When done, add shallots mix for half a minute or so, and pull from heat.
  • Drain pasta and place into a large pot or bowl.
  • Add bacon mix and toss once.
  • Add egg/cream mix and cheese, toss again.
  • These last three steps should be done very quickly to cook the egg mixture, and spread the cheese evenly.
  • Serve wilth freshly ground black pepper, a fresh salad, and a nice glass of wine.
  • My choice on wine is Johanisberg Reisling.
  • Rock on!

1/4 cup extra virgin olive oil
1/2 lb bacon, diced into 1/4 -inch pieces (6 to 8 slices)
1/2 cup dry white wine
3 large eggs
3/4 cup grated parmesan cheese (, about 2 ounces)
1/4 cup grated pecorino romano cheese (, about 3/4 ounce)
3 cloves garlic, pressed through garlic press or minced to paste
1 lb spaghetti
salt
ground black pepper

Steps:

  • Adjust oven rack to lower-middle position, set large heatproof serving bowl on rack, and heat oven to 200 degrees.
  • Bring 4 quarts water to rolling boil in large Dutch oven or stockpot.
  • While water is heating, heat oil in large skillet over medium heat until shimmering, but not smoking.
  • Add bacon and cook, stirring occasionally, until lightly browned and crisp, about 8 minutes.
  • Add wine and simmer until alcohol has cooked off and is slightly reduced, 6 to 8 minutes.
  • Remove from heat and cover to keep warm.
  • Beat eggs, cheeses, and garlic together with fork in small bowl.
  • When water comes to boil, add pasta and 1 tablespoon table salt, stir.
  • Cook until al dente Reserve 1/3 cup pasta cooking water and drain pasta for about 5 seconds, leaving pasta slightly wet.
  • Transfer drained pasta to warm serving bowl if pasta is dry, add some reserved cooking water and toss to moisten.
  • Immediately pour egg mixture over hot pasta, sprinkle with 1 teaspoon sea salt flakes or 3/4 teaspoon table salt-- toss well to combine.
  • Pour bacon mixture over pasta, season generously with black pepper, and toss well to combine.
  • Serve immediately.

  • Start adding about 2 liters or 2 quarts of water in a pot, and bring it to a boil. Salt it with about 1 ½ tbsp of table salt. Cook pasta for the amount of time stated in the package. Drain it reserving 2 cups of the cooking water.
  • In the meantime, chop the bacon (or pancetta), and make sure that cheese is grated and garlic is minced.
  • In a skillet, cook bacon until crispy. When bacon is ready, remove it from pan and set it aside. Leave about 1 tablespoon of bacon fat in the pan and add the chopped garlic. Sauté it until it starts changing color, being careful not to burn it since it changes color really fast. Remove it from pan quickly, so it won't continue cooking, and put it together with the bacon.
