These shortbread bars are really easy and have a great toffee taste!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Beat butter, brown sugar, vanilla extract, and egg yolk in a large bowl; stir in flour and salt. Press dough into prepared baking dish.
- Bake in preheated oven until crust is light brown, 25 to 30 minutes.
- Immediately sprinkle chocolate chips over hot crust. Let stand until soft, about 5 minutes, and spread evenly; sprinkle with nuts. Cool pan on wire rack for 30 minutes.

TOFFEE BARS
My mom made these bars when I was a child, and she still does, so they bring back a lot of memories for me. This recipe is my own variation that I developed in recent years; I love the colors of the cranberries and white chocolate - they're very festive. But sometimes I make them just like Mom with milk chocolate and walnuts. Most of the time I forget to add the salt, and I find it doesn't make any difference - they always taste delicious and are always a hit!

Steps:
- Preheat the oven to 350 degrees F.
- In a mixer, beat the butter, sugar, egg yolk, and vanilla. Gradually mix in flour, then salt, and continue beating until well blended, scraping down the sides of the bowl as necessary. Transfer batter to a 9 by 13-inch pan, and flatten out with a rubber spatula.
- Bake until slightly browned, about 20 to 25 minutes. Remove from the oven and immediately place squares of white chocolate on top, gently spreading with an off-set spatula or dull knife as they melt. Sprinkle with nuts and cranberries. Allow to set, about 15 minutes, and then cut into squares.
TOFFEE BARS
Steps:
- Preheat the oven to 350 degrees F.
- Lightly butter a 9-by-13-inch baking pan, preferably a light-colored aluminum or steel pan. (Dark pans cause over-browning.)
- Heat a large skillet over medium heat, add the butter, and cook until the butter foams and turns amber brown, 3 to 5 minutes. Pour the butter into a large bowl and set aside until cool enough to touch.
- Meanwhile, sift the flour, baking powder, nutmeg and salt together into a bowl.
- In the bowl of a stand mixer, or using a hand mixer, combine the brown sugar with the butter and mix until combined. Add the eggs and vanilla, and mix until smooth, thick and light, 3 to 5 minutes. (You want to make sure the mixture is very light and airy, like frosting.) Stir in the sifted flour mixture and mix by hand until incorporated.
- Pour the batter into the prepared baking pan and spread it into an even layer, smoothing the top. Scatter the hazelnuts, pressing lightly to submerge them about halfway in the batter.
- Bake until the surface wrinkles evenly and turns nut brown, about 35 minutes. Let cool completely, at least 2 hours, before cutting into 2-inch bars.
TOFFEE NUT BARS, A VINTAGE RECIPE
A great bar cookie recipe, not gooey or chewy. There is a chopped nut base, then a crumb layer, then a thin spongy spicy cake-y layer. The amounts of spices can be adjusted to your taste. These work pretty well for me. From the archives in my collection. My daughter requested these, reminding me that I used to make them a lot. Things do get mislaid, though. And/or forgotten. Naaahhhh, who forgets anything at my age?!

Steps:
- Mix together as for pie crust: the sugar, brown sugar, flour and butter.
- Sprinkle bottom of 11 x 15 pan ungreased with 1 cup chopped nuts, then with 2 cups of above mixture.
- Beat together the remaining ingredients.
- Stir into flour mix. Pour over mix in pan, spreading gently and evenly.
- Bake in a 350 oven 35-40 minute.
- Cut into as many bars as desired.

- CRUST:
- COMBINE all ingredients, mixing until crumbly. Press firmly into greased 13"x9" cake pan.
- BAKE at 350°F for 15-18 minutes, or until light golden.
- TOPPING:
- BEAT eggs, sugar, corn syrup and melted butter together until blended. Stir in cinnamon chips, cranberries and walnuts. Pour evenly over crust.
- BAKE for about 30-35 minutes longer, or until set and golden. Cool completely, then cut into bars.

A wonderful, graham cracker based chocolate toffee bar that will delight your taste buds! I'm still trying to discover who brought these to our office Cookie Swap party! They were kind enough to share the recipe, so I'm sharing it as well. The version I had was with nuts, so I don't even know if there was any toffee in it!

- Preheat oven to 400 degrees F.
- LIne a 10x15-inch baking pan with foil.
- Arrange graham crackers in a single layer in the prepared pan.
- Combine the butter and brown sugar in a saucepan. Bring to a boil.
- Boil for exactly 3 minutes, stirring occasionally. Drizzle over the graham crackers.
- Bake in preheated oven for exactly 5 minutes. Remove from the oven. Sprinkle with the chocolate chips. After 1 minute, spread with a buttered spatula. Sprinkle with the toffee chips.
- Cool to room temperature. Chill until set. Cut or break into bars.
- Store the bars, covered, in the refrigerator.

- Mix in egg yolk.
- Ad flour gradually, stirring only to blend.

- 1. Crust. Cream butter; add brown sugar & cream well. Add flour to creamed mixture and work it into a dough with your hands. Pat into an ungreased 9" sq. pand and bake 10 mins. in oven at 350.
- 2. Topping. Beat egg whites until light, then stir in brown sugar & mix well. Add vanilla. Set aside. Sift flour, baking powder & salt together and stir into the brown sugar mixture. Beat until smooth. Add nuts & coconut, mix well. Spread evenly over slightly cooled baked bottom layer in the pan. Bake 25 mins. in oven at 350. Cool & cut into squares.

- Preheat oven to 370F (175C); line 9"x13" pyrex baking dish with foil.
- For pastry: In mixer, cream butter; add sugar and lemon peel and beat until light and fluffy; combine flour, salt and cornstarch in small bowl; mix to blend; add to butter and mix just until dough starts coming together; press dough into baking dish, forming 1 inch high edges; pierce all over with fork.
- Bake until starting to colour, piercing with fork if pastry begins to puff during baking, about 40 minutes; remove from oven, maintaining oven temperature.
- For topping: Combine butter, brown sugar and honey in saucepan; whisk over medium-high heat until mixture comes to boil; boil without stirring until mixture thickens and bubbles enlarge, about 1 minute; mix in almonds and hazelnuts; remove from heat and stir in cream; spread topping in crust; bake until caramel bubbles, about 20 minutes.
- Cool in pan, on rack; remove from pan, using foil as aid; cut into 1 1/2 inch squares; keep in an air-tight container.

DELICIOUSLY EASY TOFFEE-NUT BARS
I found this in a Hershey's cook book and decided to try it not knowing if i really liked toffee- they were amazing. I was so suprised how easy this recipe was. My dad told me that i wasn't allowed to make them anymore because they were so good. =] I used a half cup of walnuts and a half cup of pecan and it turned out great!

- Heat oven to 350 degrees (F).
- Combine flour, brown sugar, and butter in a large bowl; mix until fine crumbs form, though a few large crumbs may remain. Press into an ungreased 13x9-inch baking pan. Sprinkle nuts over crust and set aside to prepare toffee topping.
- In a small saucepan, combine brown sugar and butter. Cook over medium heat, stirring constantly, until mixture comes to a boil; boil and stir 30 seconds. Pour over crust immediately.

- Preheat oven to 350 degrees. Grease a 9; x 13; pan.
- Cream together the Earth Balance and brown sugar until well blended. Add salt and baking soda and mix well. Add in egg replacer and vanilla.
- Being careful not to overmix, add in flour until just combined. Fold in 1 cup of pecans and chocolate chips.
- Spread ( I had to use my hand and actually "pat") the dough into the prepared baking pan. Sprinkle the remaining chopped nuts over the top of the dough.
- On middle rack of oven, bake about 20-25 minutes. They will look uncooked if you try to cut into them. Resist the urge and let them cool on wire rack for about 1 hour. Cut into bar shapes and enjoy with some yummy Almond Breeze, or your favorite non-dairy milk.

- Mars Delight. Mars Delight, the lighter and fluffier sibling of the standard Mars bar, entered stores in 2004, but was sadly discontinued in 2008. However, fans are trying to rally up signatures with a petition to bring back the beloved treat.
- Mars’ White Maltesers. These little balls of malty white chocolate were loved by many. But clearly, not by that many because Mars stopped selling them a few years ago.
- Quality Street Toffee Deluxe. We’ve got some seriously sad news for Quality Street fans, especially those who favour a Toffee Deluxe. After 80 years Nestle have decided to swap the beloved Toffee Deluxe for a Honeycomb Crunch in the run up to Christmas 2016.
- Cadbury’s Tiffin. Yes, we’ve got great news for Tiffin fans. This delicious chocolate bar will be returning to supermarket shelves in a ‘Special Edition’ form in 2016 in the UK.
- Time Out. In March 2016, news broke that Cadburys had been slowly removing the Time Out that we know and love from our shelves. When one loyal fan tweeted the brand to ask what had happened, the brand said that they had ‘combined the two original slim fingers into one delicious, wafery bar for only 35p that now contains 111 calories’, and that it was now known as the Time Out Wafer.
- Snaps. Much like a chocolate Pringle, these thin and crisp chocolate delights came in five amazing flavours – Milk Chocolate, Hazelnut, Caramel Crunch, Mint and Orange.

- Astros. We’re pretty sure these biscuit and chocolate balls were aimed at the kids, but we still ate more than our fair share of them when they launched in 1997.
- Texan. Nougat + toffee + chocolate = a match made in chocolate bar heaven. Texan bars were one of our absolute FAVES, as was crying “Sure is a mighty chew!”
- Milk Tray Bar. We don’t know why this fusion of ALL of the chocolates from a Milk Tray chocolate box worked, but the point is, it did. Strawberry cream, fudge, Turkish delight, hazelnut – and that elusive lime barrel that you can’t get for love nor money nowadays.
