This easy Vegetable Lasagna is made with chicken broth, so it's not exactly vegetarian fare. It is, however, a great choice for an otherwise meat-free dish.

2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. ground red pepper (cayenne)
1 can (14 oz.) fat-free reduced-sodium chicken broth
1 cup KRAFT Shredded Parmesan Cheese, divided
2 Tbsp. KRAFT Tuscan House Italian Dressing
4 carrots, peeled, sliced
1 pkg. (10 oz.) frozen peas, thawed
3 cloves garlic, minced
1 container (15 oz.) POLLY-O Original Ricotta Cheese
9 lasagna noodles, cooked
1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Heat oven to 375°F.
  • Melt butter in medium saucepan on low heat. Stir in flour and pepper; cook and stir 2 min. or until bubbly. Gradually stir in broth; bring to boil on medium heat, stirring constantly. Simmer on low heat 3 to 5 min. or until thickened, stirring constantly. Stir in 3/4 cup Parmesan.
  • Heat dressing in large skillet on medium-high heat. Add carrots; cook and stir 4 min. Stir in peas and garlic; cook 1 min. or until carrots are crisp-tender, stirring occasionally. Set aside. Mix ricotta and remaining Parmesan until blended.
  • Spread 1/4 cup of the Parmesan sauce onto bottom of 13x9-inch baking dish sprayed with cooking spray. Cover with layers of 3 noodles, half the ricotta mixture, 1/3 of the vegetable mixture, 3/4 cup mozzarella and 1/3 of the remaining Parmesan sauce; repeat layers. Top with remaining noodles, Parmesan sauce, vegetable mixture and mozzarella; cover.
  • Bake 40 min. or until heated through, uncovering for the last 10 min. Let stand 10 min. before cutting to serve.

2 jars tomato sauce
32 oz mozzarella cheese
1/4 cup onion
1/4 cup broccoli
1/2 sweet potato
1/4 cup carrots
1/4 cup cauliflower
1/2 cup zucchini
1/2 cup spinach leaves
1/3 cup frozen peas
16 ounces ricotta cheese
2 tsp cumin
1 tsp dried rosemary
2 tbsp fresh basil
2 tbsp fresh oregano
1 tbsp fresh Italian parsley
4 garlic cloves
OR
Vegan Ricotta
16 oz firm sprouted tofu
2 tsp cumin
1 tsp dried rosemary
2 tbsp fresh basil
1 tbsp fresh italian parsley
2 tbsp fresh oregano
2 tbsp freshly squeezed lemon
1 tsp apple cider vinegar
2 tsp extra-virgin olive oil
1 elephant garlic clove
2 garlic cloves
3 tsp nutritional yeast
1/2 tsp himalayan sea salt

Steps:

  • Preheat the oven to 450°F.
  • Roughly chop and steam the onion, broccoli, carrots, cauliflower, zucchini, and quartered sweet potato until soft (about 10 minutes) in about 1-1 1/2 inches of water.
  • Add the spinach leaves/frozen peas and finish steaming until the spinach is just wilted (about 3 minutes).
  • While the vegetables are steaming:
  • Pour 1 jar of tomato sauce into a large bowl (with extra room for the ricotta/vegetables)
  • If you are using regular or vegan ricotta puree the ricotta ingredients in a blender then add to the tomato sauce bowl.
  • Puree the steamed vegetables in a blender (use up to 1/4 cup of water from the steamer to blend.)
  • add to the tomato sauce and ricotta bowl.
  • Add a thin layer of tomato sauce on the bottom of your pan.
  • Layer the lasagna noodles so they are overlapping a 1/2 inch for each noodle.
  • Spread a layer of cheese on top of each noodle. Spread a layer of sauce. Layer cooked meat if you are adding meat.
  • Repeat until all of your ingredients are gone
  • Top with cheese and sauce, put foil on the top of the casserole, and put it in the oven!
  • After 1/2 hour, reduce the cooking temperature to 350°F.
  • Cook an additional half hour, then let it rest for 15 minutes before slicing. This helps the layers congeal.
  • Take the 2nd jar of sauce and pour half on top of the lasagna and serve the other half in a bowl for dinner.

8 cups zucchini (unpeeled & shredded)
3/4 lb mushroom, coarsely chopped
2 onions, chopped
2 garlic cloves, minced
1 tablespoon vegetable oil
1 (19 ounce) can diced tomatoes, undrained
1 cup water
1 (5 1/2 ounce) can tomato paste
3 teaspoons italian seasoning
pepper, to taste
1 teaspoon sugar, if needed
9 lasagna noodles
2 cups part-skim cottage cheese
2 cups part-skim mozzarella cheese, shredded
1 egg, lightly beaten (optional)
1/2 cup parmesan cheese, freshly grated

Steps:

  • Preheat oven to 350°F.
  • In a large nonstick pan, heat vegetable oil over medium heat.
  • Add zucchini, mushrooms, onions and garlic, and cook until tender.
  • Add tomatoes, water, tomato paste and Italian seasoning.
  • Bring to a boil, reduce heat to medium-low and simmer uncovered for 20 minutes until mixture has spaghetti sauce consistency, stirring occasionally.
  • Season with pepper to taste and add sugar if too acidic.
  • In large pot of boiling water, cook lasagna noodles as directed on package (usually 10 to 12 minutes) until tender but firm.
  • Drain and rinse under cold water the drain again.
  • Combine cottage cheese, mozzarella, egg and half of Parmesan.
  • Cover bottom of 13 x 9 inch baking dish with a bit of the tomato sauce.
  • Place 1 layer of cooked noodles in dish.
  • Cover with half of cheese mixture.
  • Repeat with remaining sauce, noodles and cheeses to make 3 layers of each ending with a final layer of tomato sauce.
  • Sprinkle with remaining Parmesan cheese.
  • Bake for 45 minutes or until hot and bubbly.
  • Remove from oven and allow to stand for 5 to 10 minutes before serving.

1/3 cup olive oil
4 large cloves garlic, thinly sliced
1 medium onion, chopped
Kosher salt
1 large carrot, shredded on the large holes of a box grater
2 tablespoons tomato paste
1/4 teaspoon crushed red pepper flakes
Two 28-ounce cans plum tomatoes, crushed by hand
2 bay leaves
1 large sprig basil; plus 1/4 cup leaves, coarsely chopped
1 large sprig thyme
One 10-ounce box frozen chopped spinach, thawed
1 pound ricotta cheese
3/4 cup grated Parmesan
1 large egg
Kosher salt
1/4 teaspoon freshly grated nutmeg
12 no-boil lasagna noodles
1 pound shredded low-moisture whole-milk mozzarella (4 cups)
Cooking spray

Steps:

  • For the sauce: Put the olive oil and garlic in a medium pot over low heat. Cook the garlic, stirring occasionally at first and more often as it colors, until golden brown, about 7 minutes. Raise the heat to medium-low, add the onions and a large pinch of salt and cook, stirring occasionally, until the onions are softened, about 5 minutes. Add the carrots, and cook, stirring occasionally, until softened, about 5 minutes. Add the tomato paste and red pepper flakes, and cook, stirring constantly, for 2 minutes. Add the tomatoes, bay leaves, basil sprig, thyme and 1 teaspoon salt, raise the heat to medium and bring the sauce to a lively simmer. Continue to cook, stirring frequently, until quite thick (if you draw a spoon through the sauce, you'll see the bottom of the pot for a few seconds before the sauce fills back in), about 30 minutes. As the sauce thickens, turn the heat down a bit so the bottom doesn't scorch. Stir in the chopped basil. Let cool to room temperature before assembling the lasagna. (Makes 1 quart.)
  • To assemble: Preheat the oven to 350 degrees F. Squeeze the spinach in your hands to remove as much liquid as possible. Put it in a large bowl, and stir in the ricotta, 1/2 cup of the Parmesan, the egg, 1 teaspoon salt and the nutmeg.
  • Spread 3/4 cup of the tomato sauce on the bottom of a 9-by-13-inch baking dish. Lay 3 lasagna noodles across the sauce (they won't touch). Spread 3/4 cup tomato sauce on top. Dollop 1/3 of the ricotta mixture (about 1 cup) across the sauce, and use the back of a spoon to spread it (it will smush into the tomato sauce, which is fine). Scatter 1 cup of the mozzarella on top.
  • Repeat the layering 2 more times. Top with the last 3 noodles, spread the last 3/4 cup tomato sauce over them and scatter the remaining 1 cup mozzarella and 1/4 cup Parmesan over the top. Spray a large piece of foil with cooking spray, and cover the baking dish.
  • Bake until the noodles are soft and the cheese has melted, about 40 minutes. Remove the foil, and continue to bake until the cheese is bubbling and the lasagna is slightly browned around the edges, about 15 minutes more. Let rest 10 minutes before serving.

This is my family's favorite lasagna. It is a recipe I got from a local mennonite cookbook and it is SUPERB! It has a homemade tomato sauce that is easy to whip up while the noodles are cooking. Try it... I hope you love it as much as we do!

1 lb ground beef
1/2 cup chopped onion (sometimes I use slightly more)
3 cups tomato juice
2 tablespoons brown sugar
1 tablespoon vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon marjoram
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1/3 cup water
8 ounces lasagna noodles
2 cups cottage cheese
2 cups shredded mozzarella cheese (I have always used the mozzarella) or 2 cups swiss cheese (I have always used the mozzarella)
1 tablespoon parsley flakes (I substitute fresh parsley when I have it)
1/3 cup parmesan cheese

Steps:

  • Brown ground beef and onion in large skillet, then drain.
  • Place beef and onion back into skillet.
  • Add tomato juice, brown sugar, vinegar, salt, oregano, marjoram, and garlic powder; cover and simmer for 20 minutes.
  • Meanwhile, cook lasagna noodles with 1 Tbsp oil according to the package directions.
  • Dissolve cornstarch in water and add to sauce, stirring until thickened.
  • In a greased 9x13 inch baking dish, layer noodles, meat sauce, cottage and mozzarella or swiss cheese, and parsley flakes.
  • Sprinkle parmesan cheese over the top.
  • Bake at 350 degrees for 35-40 minutes.

1 egg, beaten
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
3/4 cup KRAFT Grated Parmesan Cheese, divided
2 cups KRAFT Shredded Mozzarella Cheese, divided
1 jar (24 oz.) CLASSICO Tomato and Basil Pasta Sauce
6 lasagna noodles, cooked

Steps:

  • Heat oven to 350°F.
  • Cook vegetables in skillet sprayed with cooking spray on medium-high heat 5 min. or until crisp-tender, stirring occasionally.
  • Mix egg, cottage cheese and 1/2 cup Parmesan. Spread 3/4 cup spaghetti sauce in bottom of 12x8-inch baking dish. Top with 3 lasagna noodles, 1/2 of the cottage cheese mixture, 1/2 of the vegetables, 1 cup spaghetti sauce and 1 cup mozzarella; repeat layers. Sprinkle with remaining Parmesan.
  • Bake 45 min or until heated through. Let stand 10 min before serving.
