2 to 2 1/2 pounds large red tomatoes
3 tablespoons good olive oil
2 teaspoons dried oregano
Kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup Pesto, store-bought or homemade, recipe follows
1/2 cup freshly grated Parmesan cheese
1/4 cup walnuts
1/4 cup pine nuts
3 tablespoons diced garlic (9 cloves)
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 425 degrees.
  • Core the tomatoes and then slice them across (not through the stem) in 1/2 inch-thick slices. Arrange the slices in a single layer on a sheet pan. Drizzle the tomatoes with the olive oil and sprinkle with the oregano, 1 1/2 teaspoons salt, and the pepper.
  • Bake the tomatoes for 10 minutes. Remove them from the oven, spread each slice with Pesto, and sprinkle with the Parmesan cheese. Return the tomatoes to the oven and continue baking for 7 to 10 minutes, until the Parmesan is melted and begins to brown. Using a flat metal spatula, put the tomatoes on a serving platter, sprinkle with extra salt, and serve hot, warm, or at room temperature.
  • Place the walnuts, pine nuts, and garlic in the bowl of a food processor fitted with the steel blade. Process for 30 seconds. Add the basil, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is pureed. Add the Parmesan and puree for a minute. Use immediately or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.

Chef Note: This is a great sauce for pasta salad because it's delicious at room temperature. You could also slather it on bruschetta, grilled fish or chicken. Or make a brunch dish by topping a thick slice of toast with proscuitto, a poached egg and a little of this summer pesto. In summer, when you can get your hands on vine-ripe tomatoes, you don't even need to peel them. To intensify the flavor, you can add a few oven-dried tomatoes. The pesto keeps several days in a tightly sealed container in the refrigerator.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese
2 tsp. CLASSICO Traditional Basil Pesto Sauce and Spread
2 tsp. finely chopped drained oil-packed sun-dried tomatoes

Steps:

  • Preheat oven to 400°F. Unroll crescent dough; separate into four rectangles. Place two of the rectangles, side-by-side, on nonstick baking sheet. Firmly press seams and perforations together to seal. Reserve remaining dough for decorative garnish.
  • Cut block of cream cheese horizontally in half. Spread pesto onto bottom half of cream cheese; cover with tomatoes. Top with remaining cream cheese to form sandwich. Place in center of dough. Bring up ends of dough around all sides of cream cheese to enclose completely; pinch ends of dough together to seal. Place, seam-side down, on baking sheet. Cut remaining crescent dough into small fun shapes, such as leaves or fruit. Arrange on top of dough.
  • Bake 20 min. Serve warm with assorted crackers and fresh vegetables.

Desperate to find yet another way to use all the tomatoes from 4 plants, I found this in The Big Book of Casseroles. I used prepared pesto, but if you make your own, it is that much better. Had SO many, I shared with the neighbors, and even the young ones liked it. I used about 20 plum tomatoes and increased the remaining ingredients to match.

2 tomatoes, halved lengthwise and seeded
salt & freshly ground black pepper
2 tablespoons basil pesto
1/3 cup monterey jack cheese, grated
2 green onions, including green tops, sliced
2 tablespoons fresh parsley, chopped

Steps:

  • Drain tomatoes, cut side down on paper towels for 10 minutes.
  • Place cut sides up in 8x8 baking dish, coated with cooking spray.
  • Season with salt and pepper.
  • In a small bowl, combine pesto, cheese, onions, and parsley.

2 cups cherry tomatoes
1 tablespoon olive oil
Salt and pepper, to taste
16 ounces short pasta (penne, bucatini, rotini, etc.)
1/2 cup basil pesto
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/4 cup seasoned breadcrumbs
Fresh basil, for garnish (optional)

Steps:

  • Preheat oven to 400 degrees. Toss tomatoes with olive oil, salt and pepper. Arrange on a large baking sheet.
  • Bake for 15-20 minutes, or until tomatoes just begin to burst. Remove from oven and set aside.
  • Meanwhile, cook the past according to package directions. Drain.
  • In a large bowl, toss the cooked pasta with the pesto. Gently stir in the roasted tomatoes along with 1 1/2 cups of the mozzarella cheese.
  • Arrange the pasta in a lightly greased, 9x13 inch baking dish. Top with the remaining mozzarella and the Parmesan cheese. Sprinkle with the breadcrumbs.

Looking for something impressive but oh so easy? This simple and delicious dish would make a great 'date night' dinner or even doubled for a dinner party. Tilapia is a really mild fish without that 'fishy' taste making this a great recipe for people who do not like fish and a wonderful meal for those who do! Pesto and tomatoes are so lovely and aromatic together and roasting allows the flavors to intensify. What a simple way to create an incredibly delicious dish. In order to soak up every delicious drop I would serve this over a simple rice like my Recipe#137364 or serve it with a good crusty bread. Adding a simple green salad and a wonderful bottle of wine would make this meal totally rock! I would serve it with Chateau Ste Michele Dry Riesling. 1/2 pint cherry tomatoes or 1/2 pint grape tomatoes
4 garlic cloves, minced
2 teaspoons extra virgin olive oil

8 ounces tilapia fillets, I use 4 oz fillets

lemon wedge (optional)

Steps:

  • Gently combine the tomatoes, garlic and olive oil with a little salt and pepper if desired and roast in a preheated 425 degree oven for about 10 minutes.
  • Juice the lemon and mix SOME of the juice with the pesto, adding more if desired or needed keeping the pesto a nice spreadable consistency and not runny. (Thanks breezer mom!) Spread mixture on top of the fish which has been seasoned with a little more salt and pepper if desired.
  • Cut the juiced lemon halves in half again so that you have two pieces of lemon to support each filet. Place a filet on top of two pieces of juiced lemon so that the fish is somewhat out of any liquid that accumulates, allowing it to roast rather than boil.
  • Return to oven for about 10 minutes or until the fish is flaky and no longer opaque.
  • Plate the fish along with the tomatoes and garlic and serve with more lemon wedges if desired.

This is a different twist on my family's old favorite: Baked Penne. This recipe is also meatLESS, which I like, but I am sure you can improvise and add ground meat or sausage if you prefer. This is great for potlucks or parties because it can easily be made ahead of time. I saw a version of this made on 30 Minute Meals, but I prefer to make my own pesto sauce from scratch, because I am not too fond of the store bought. To save time, please feel free to use store bought pesto. I also chose to use whole wheat pasta in this as well. Because of the great flavors of pesto, cheese and tomatoes, I find that it is easy to sub whole wheat pasta, even for folks who might be skeptical.

1 lb plain pasta or 1 lb whole wheat pasta (penne, ziti, shells or corkscrews work well)
2 tablespoons extra virgin olive oil
3 cloves garlic, minced

1 bay leaf
crushed red pepper flakes, to taste
1/2 cup fresh basil leaf

1/2 cup freshly grated parmigiano-reggiano cheese

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Preheat your pot for the tomato sauce over medium heat.
  • Add olive oil, then garlic and saute for 2-3 minutes.
  • Next add the diced onion, crushed red pepper, bay leaf, and saute for about 5 minutes, or until onion soft and fragrant.
  • Add the crushed tomatoes and stir well.
  • When tomatoes begin to boil, reduce heat to low, add fresh basil leaves, and salt and pepper to taste.
  • Let sauce simmer while you make your pesto (if not using store bought).
  • Preheat broiler.
  • Add pasta to boiling water and cook until just barely al dente.
  • Drain pasta, and toss with 1 cup of your pesto sauce, 1/2 cup parmesan, and 1 cup of the ricotta cheese, be sure to blend well.
  • Add pasta to a casserole dish.
  • Top with the tomato basil sauce.
  • You don't need to use all of the sauce, but rather serve the extra on the side.
  • Top casserole with shredded mozzarella cheese.
  • Place under broiler for about 5 minutes, or until cheese is melted.
  • **Note:Casserole can be assembled ahead of time, covered with foil, and then reheated in a 350 degree oven until heated through.
  • Remove foil for last 5-10 minutes in order to melt cheese.
