SAUTEED GREENS
This is my go-to recipe for just about any green I receive in my vegetable co-op box. According to my picky son, even vegetables are good sauteed with garlic and Parmesan!

Steps:
- Heat olive oil in a large, heavy skillet over medium heat. Sprinkle with salt. Stir in garlic; cook until fragrant, about 30 seconds. Add greens; toss to coat with olive oil and garlic mixture. Cook until bright green and wilted, 4 to 6 minutes.
- Sprinkle with Parmesan cheese and red pepper. Cover and allow cheese to melt, about 2 minutes. Serve.

SAUTé OF WINTER GREENS AND SHIITAKE MUSHROOMS

Steps:
- Heat 2 tablespoons oil in extra-large skillet over high heat. Add mushrooms; sprinkle with coarse salt and pepper. Sauté until brown, about 10 minutes. Transfer to bowl.
- Pour 1/4 cup broth into same skillet. Add 1/3 of greens. Sprinkle with coarse salt and pepper. Toss until wilted but still bright green, about 2 minutes. Transfer to large strainer set over bowl. Repeat 2 more times with remaining broth and greens. DO AHEAD: Can be made 2 hours ahead. Let mushrooms and greens stand at room temperature. Reserve skillet.
- Heat 2 tablespoons oil in same skillet over medium-high heat. Add onions. Sauté until beginning to color, about 5 minutes. Add garlic and crushed red pepper; stir 1 minute. Add greens and mushrooms. Toss to heat through, about 2 minutes. Season with salt and pepper. Transfer to bowl.
HEARTY WINTER GREENS SAUTE

- Remove the center stems from all the greens and slice the leaves into 1/2-inch ribbons. Pour the olive oil into a large Dutch oven set over medium-high heat. Once hot, add the onion and garlic and saute until tender and fragrant, about 4 minutes. Season with salt and pepper.
- Stir in the ribbons of mustard greens, turnip greens and kale in batches, adding the next batch as the one prior wilts down. Once those three greens are added to the pot, pour in the broth and cook 15 minutes. Then add the ribbons of Swiss chard and cover with a lid. Let simmer 5 more minutes. Taste for seasoning. Spoon the greens into a large serving dish.
KALE AND ESCAROLE WITH SHALLOTS

- Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add 2 sliced shallots and cook until lightly browned, about 3 minutes. Add 1 head each torn Tuscan kale and escarole and 1/2 teaspoon kosher salt. Cook, stirring, until wilted, 3 to 5 minutes. Add 1 teaspoon grated lemon zest and a pinch of red pepper flakes; season with salt.

- Add chicken broth for rice, and water to a medium saucepan and bring to a boil. Stir in rice, cover pan, and reduce heat to a simmer. Cook until all of liquid has been absorbed and the rice is al dente, about 20 minutes. Remove from heat, fluff with a fork, and set aside.
- Bring a large pot of water to a rolling boil. Trim stems from collard greens at base of leaf. If remaining ribs are very large, run a knife parallel to the cutting board to shave off the thickest part of the ribs. Add half of greens at a time to pot and blanch in boiling water until they’re bright green and flexible, 2 minutes. Remove greens from water and submerge in a bowl of ice water until cool. Then drain and set aside.
- Meanwhile, add vegetable oil to a heavy-bottomed skillet or Dutch oven over medium-low heat. Add ground pork, using a wooden spatula to crumble meat.
- Mix in onion and bell pepper. Cook mixture, stirring occasionally, until pork is no longer pink and vegetables are softened, 13-15 minutes. Add garlic and cook 5 minutes more. Season mixture with Cajun seasoning, salt, and pepper.
