1 cup whole wheat flour
1 cup regular rolled oats
½ cup brown sugar
½ cup barley flour
½ cup oat bran
¼ cup wheat bran
3 tablespoons nonfat dry milk powder
2 tablespoons ground flaxseed
5 teaspoons ground cinnamon
1 ½ teaspoons baking powder
¼ teaspoon baking soda
½ cup honey
5 tablespoons water
¼ cup olive oil
1 teaspoon vanilla extract
1 cup chocolate chips
1 cup chopped walnuts
1 cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Mix whole wheat flour, rolled oats, brown sugar, barley flour, oat bran, wheat bran, nonfat dry milk powder, flaxseed, cinnamon, baking powder, and baking soda together in a bowl. Add honey, water, olive oil, and vanilla extract to flour mixture and mix well; fold in chocolate chips, walnuts, and coconut.
  • Place dough in the center of the prepared baking sheet and cover with waxed paper. Roll a rolling pin over dough to spread onto the entire baking sheet. Remove waxed paper.
  • Bake in the preheated oven until set, about 20 minutes. Remove baking sheet from oven and allow to cool slightly for 5 minutes. Slide parchment paper onto a work surface and cut into bars. Transfer bars to a wire rack to cool completely.

1 cup Crisco
2 tablespoons molasses
2 teaspoons vanilla
2 large eggs
3 cups quick-cooking rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts
1 (12 ounce) package semi-sweet chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F.
  • Grease 15 x 10 or 13 x 9-inch pan.
  • In a large bowl, beat brown sugar and shortening until light and fluffy.
  • Add molasses, vanilla and eggs; blend well.
  • Stir in oats, flour, baking soda and salt; blend well.
  • Stir in nuts and chocolate chips.
  • Spread in greased pan.
  • Bake at 350°F.
  • for 20 to 25 minutes or until light golden brown and center is set.
  • Cool slightly. Cut into bars.
  • Serve warm or cool.

1 ½ cups butter
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
½ teaspoon baking soda
2 cups quick cooking oats
2 tablespoons butter
1 cup semisweet chocolate chips
⅔ cup evaporated milk
¼ cup white sugar
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
  • To prepare Filling: In a heavy pot, melt 2 tablespoons of the butter and chocolate chips. Add the evaporated milk and 1/4 cup of the white sugar. Bring to a rolling boil, stirring constantly. Remove from heat. Stir in nuts and cool.
  • To prepare cookie base: Cream 1 1/2 cups of the butter and the brown sugar together. Add the vanilla and the egg, and beat until light and fluffy.
  • Add the flour, baking soda, and 1 3/4 cups of the oats and blend well.
  • Press 2/3 of this mixture into the bottom of the greased pan. Spread the cooled filling on top of the cookie crust.
  • Mix the remaining 1/4 cup of oats with the remainder of the cookie base, and crumble over the filling. Bake for 25-30 minutes.

1 1/2 cups rolled oats (large or quick flakes)
1 cup barley
1/2 cup shredded coconut
1/2 cup dried cranberries
1/4 cup unsalted sunflower seeds
1 cup light peanut butter
1 cup brown sugar
1/3 cup unsalted butter
2 teaspoons vanilla
1 teaspoon cinnamon
1 large egg

Steps:

  • Preheat oven to 350°F Grease and line a 9-inch square pan with parchment paper so the paper hangs over the sides of the pan.
  • In a bowl, toss together oats, barley flakes, coconut cranberries and seeds. Set aside.
  • In a saucepan, combine peanut butter, brown sugar, butter, vanillla and cinnamon and stir over medium-low heat until melted. Pour melted mixture over dry mixture and stir together. Blend in egg and spread mixture into pan, patting down evenly.

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
