AUTHENTIC CAJUN GUMBO

I learned to cook in Louisiana and I love to cook Cajun food. This cajun gumbo recipe is one of my favorites. -Paul Morris, Kelso, Washington

Number Of Ingredients 19

6 quarts water
1 chicken (5 pounds), cut up
2 large onions, quartered
4 celery ribs, cut into 3-inch pieces
6 garlic cloves, coarsely chopped
2 tablespoons salt
1 teaspoon garlic powder
1/2 teaspoon poultry seasoning
1/2 teaspoon cayenne pepper
1/2 teaspoon pepper
1/4 teaspoon white pepper
1 cup canola oil
1-1/2 cups all-purpose flour
1 large onion, finely chopped
1 pound fully cooked andouille sausage links, chopped
2 pounds sliced okra
2 pints shucked oysters
3 tablespoons gumbo file powder
Hot cooked rice

Steps:

  • Place the first 11 ingredients in a stockpot; bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours., Remove chicken and allow to cool. Strain broth, discarding vegetables; skim fat. Remove meat from bones; cut chicken into bite-size pieces and set aside. Discard bones., In the same pan, cook and stir oil and flour over medium heat until caramel-colored, about 14 minutes (do not burn). Add finely chopped onion; cook and stir 2 minutes longer. Gradually stir in broth. Bring to a boil., Carefully stir in sausage and reserved chicken. Reduce heat; simmer, uncovered, for 10 minutes. Stir in okra and oysters. Simmer, uncovered, 10-15 minutes longer or just until okra is tender. Stir in file powder. Serve with rice.

GUMBO Z'HERBES



Gumbo Z'herbes image

This hearty vegetable gumbo is traditionally eaten on Holy Thursday to fortify worshipers for Good Friday, a day of fasting and abstinence from meat. I've seen recipes that contain everything from chicken wings to spicy chaurice sausage (a Cajun cousin of chorizo) to smoked brisket. Custom also dictates that the gumbo is supposed to have an odd number of greens--five or seven or nine and as many as fifteen--for luck. Many recipes include foraged herbs such as peppergrass, as well as the green tops from radishes, carrots, and beets. Leah Chase, the Grande Dame of NOLA, is world famous for her Gumbo Z'herbes. At her restaurant, Dooky Chase, there are three lunch seatings on Holy Thursday, serving nearly five hundred guests. Most recipes are quite the production, featuring multiple pots and pureeing vast quantities of simmered greens. I've streamlined the recipe by using baby greens and prechopped greens to avoid pureeing them at the end. Aim for the odd number in any combination of "z'herbes" you'd like. This amount of liquid is suitable for 3 pounds of greens.

6 tablespoons pure olive oil, canola oil, or rendered bacon fat
1 pound chaurice, fresh chorizo, or hot pork Italian sausage, removed from casing
16 ounces andouille sausage, sliced
1/3 cup all-purpose flour
1 sweet onion, chopped
1 poblano pepper, chopped
1 celery stalk, chopped
6 garlic cloves
2 quarts homemade chicken stock, reduced-fat low-sodium chicken broth, or water
1 smoked ham hock (about 8 ounces)
1 (16-ounce) bag chopped collard greens, or 1 (1 1/2-pound) bunch collard greens, stems removed and leaves coarsely chopped
1 (12-ounce) bag chopped kale or baby kale
1 (16-ounce) box baby spinach leaves
1/2 cabbage (about 8 ounces), cored and thinly sliced
6 green onions, chopped
2 teaspoons chopped fresh thyme
Coarse kosher salt and freshly ground black pepper
Hot sauce, for serving
Cooked white rice, for serving

Steps:

  • Heat 1 tablespoon of the oil in a large heavy pot over medium heat. Add both kinds of sausage; cook until the sausage is cooked through and the fat has rendered, about 5 minutes. Use a slotted spoon to transfer the meat to a plate.
  • Add the remaining 5 tablespoons oil to the pot. Add the flour and cook, stirring frequently with a wooden spoon, until deep golden brown, about 15 minutes. Add the onion, poblano, and celery and cook, stirring often, until onion is translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the stock and stir to combine.
  • Plop the ham hock in and bring to a boil over high heat. Return the chorizo and andouille to the pot. Add the collard greens, kale, spinach, cabbage, green onions, and thyme. (You may need to let the greens cook a bit between additions so they will all fit in the pot. Don't be tempted to add additional liquid too soon: It's easy to add but hard to remove, and you want the gumbo to be dense and like stew, not soup.) Reduce the heat to maintain a simmer. Cook until the greens are tender, about 45 minutes. Taste and adjust for seasoning with salt and pepper. Add hot sauce to taste. Serve ladled over cooked white rice with hot sauce on the side.

3 tablespoons vegetable oil
3 tablespoons all-purpose flour
1 small onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
3 cloves garlic, chopped
Kosher salt and freshly ground pepper
1 tablespoon soy sauce or Worcestershire sauce
1 teaspoon smoked paprika (preferably hot)
2 cups low-sodium vegetable broth
1 pound kale or Swiss chard, stemmed and chopped
1 10-ounce package frozen black-eyed peas
Brown rice, for serving (optional)

Steps:

  • Heat the vegetable oil in a large pot over medium-high heat. Add the flour and cook, stirring, until golden, about 3 minutes. Add the onion, bell pepper, celery, garlic, 3 tablespoons water and 1/4 teaspoon each salt and pepper. Reduce the heat to medium, cover and cook, stirring occasionally, until the vegetables soften, about 8 minutes.
  • Add the soy sauce and paprika and cook, stirring, 30 seconds. Stir in the vegetable broth, scraping up any browned bits from the bottom of the pot, then cover and bring to a boil.
  • Add the greens and black-eyed peas to the pot. Reduce the heat, cover and simmer, stirring occasionally, until tender, about 15 minutes. Season with salt and pepper. Serve with the rice, if desired.

This is my own concoction and I'm sure not "politically correct", lol, but this is the way we like it. LOADED with chicken, vegetables, tomatoes and rice!

12 cups chicken stock, from stewed chicken
1 large stewing chicken
1 bay leaf
2 cups chopped onions
1 cup chopped celery
4 cups diced potatoes
3 carrots, peeled and sliced
2 cups sliced fresh okra
1 (28 ounce) can del monte stewed tomatoes, broken up with the juice
2 (6 ounce) cans tomato paste
1 (10 ounce) can corn, with juice
1 (10 ounce) jar Green Giant sliced mushrooms, drained
4 tablespoons chicken bouillon granules
1 teaspoon thyme
1 teaspoon garlic powder
1/2 teaspoon salt (to taste)
1/2 teaspoon pepper (to taste)
1/4 cup sugar (to taste)
1/2 teaspoon chili powder
1/2 tablespoon butter
1 (14 ounce) can chicken broth
1 lb Polish kielbasa, sliced on the bias
2 cups cooked rice

Steps:

  • In large pot, stew chicken with bay leaf til done and tender.
  • Remove chicken from pot, cool, remove meat and cut into large bite-sized pieces.
  • Put meat in bowl and cover, set aside or refrigerate til needed later.
  • Measure out 10-12 cups of stock from chicken and pour into clean pot.
  • Bring stock to a boil and add celery, onions, potatoes, carrots, and okra. Cook til tender.
  • Add chicken and rest of ingredients, and simmer 10-15 minutes over low heat.

2 green bell peppers, chopped

1 (10.75 ounce) can reduced-sodium chicken broth
1 tablespoon salt-free Cajun seasoning
¼ teaspoon salt
¼ teaspoon ground black pepper, or more to taste
½ pound uncooked medium shrimp, peeled and deveined
5 cups frozen riced cauliflower
2 sprigs chopped fresh parsley, or to taste

Steps:

  • Heat a large skillet over medium heat. Add flour; cook, stirring constantly, until flour is deep golden and smells toasty, 7 to 10 minutes. Reduce heat if browning too quickly. Transfer to a 6-quart slow cooker.
  • Add oil, bell peppers, onion, and garlic to the skillet; cook and stir until tender, 5 to 7 minutes. Stir into slow cooker until coated. Stir in sausage, tomatoes, broth, Cajun seasoning, salt, and black pepper.
  • Cook on Low for 6 to 7 hours or on High for 3 to 3 1/2 hours. Stir in shrimp; cook until opaque, about 30 minutes on Low or 15 minutes on High.
  • Meanwhile, place riced cauliflower in a heatproof dish, cover, and microwave until heated through, about 4 minutes, stirring halfway through.
  • Serve gumbo over cauliflower. Sprinkle with parsley and additional black pepper.
