½ pound ground turkey
1 egg
¼ cup salsa
⅛ cup chopped red bell pepper
⅛ cup chopped yellow bell pepper
¼ cup chopped onion
¼ cup dry bread crumbs
lemon pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the turkey, egg, salsa, red bell pepper, yellow bell pepper, onion, bread crumbs and lemon pepper. Mix well with hands until blended. Roll into a small loaf and place on a foil-lined baking sheet.
  • Bake in the preheated oven for 25 minutes.

3/4 cup quick-cooking oats
1/2 cup skim milk
1 medium onion, peeled
2 pounds ground turkey breast
1/2 cup chopped red bell pepper
2 eggs, beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon salt
Freshly ground black pepper
1 (8-ounce) can tomato sauce

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
  • Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
  • Remove from the oven and let rest for 10 to 15 minutes before slicing.

After much trial and error trying to make a more healthy meatloaf, I came up with this recipe. It is important to make this on a baking sheet so the liquids can be drained off the meatloaf. Also, do not put the topping on before the meatloaf has cooked for 30 minutes. Turkey creates a lot of juices, so if you put the topping on first it will become watery and runny.

¾ cup crushed buttery round crackers
½ cup milk
1 small onion, chopped
1 egg
1 ½ teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a jelly roll pan.

1 tbsp olive oil
1 large onion , finely chopped
1 garlic clove , crushed
2 tbsp Worcestershire sauce
2 tsp tomato purée , plus 1 tbsp for the beans
500g turkey mince (thigh is best)
1 large egg , beaten
85g fresh white breadcrumbs
2 tbsp barbecue sauce , plus 4 tbsp for the beans
2 x 400g cans cannellini beans
1-2 tbsp roughly chopped parsley

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
  • Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
  • Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
  • When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.

1/2 cup ketchup, divided

Steps:

  • Preheat oven to 375 degrees. Line a baking pan with foil and lightly spray with non-stick cooking spray.
  • Add the olive oil to a medium skillet. Saute the bell pepper, onion and the garlic until tender ( about 6 minutes). Stir in the thyme, basil, salt and the pepper and continue to saute for another minute. Add the Worcestershire sauce, ¼ cup of the ketchup and the chicken broth; stir until blended and set aside to cool. For faster cooling transfer mixture to a bowl. Mixture can still be warm when used, just not hot.
  • Meanwhile, in a large bowl, combine the ground turkey, eggs and the bread crumbs. Stir in the green pepper mixture a little at a time until well blended.

2 tsp Worcestershire sauce
1/2 small onion (minced)
1 tsp olive oil
1.3 lb ground turkey (99% or 93% (I prefer 93))
1/2 cup seasoned whole wheat or gluten-free breadcrumbs (I like 4C)
1 large egg
1 tsp marjoram
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350F.
  • In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
  • In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.
  • In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.
  • Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
  • Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

3 garlic cloves, minced
1 1/4 lbs ground turkey
1/2 cup breadcrumbs
1 egg (or 1/4 cup egg substitute)
3/4 cup catsup
2 teaspoons Worcestershire sauce
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Melt butter in a skillet.
  • Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
  • Place mixture in a large bowl to cool for 5 minutes.

Our turkey meatloaf is full of flavor, moist in the middle, and has become a reader favorite! You would never guess this meatloaf is packed with mushrooms, but that's what makes it so darn delicious. Lots of finely chopped mushrooms add flavor and moisture, often missing from the typical turkey meatloaf. When choosing which mushrooms to add, white button mushrooms will work perfectly fine. For more flavor, try one or a combination of brown cremini, portobello, or shiitake mushrooms. The mushrooms need to be very finely chopped. You can do this by hand or use a food processor.

1 medium onion, peeled and finely chopped

  • Preheat oven to 400°F.
  • Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until onion is softened, about 2 minutes. Add carrot and cook, stirring, until softened, about 3 minutes. 1 tablespoon canola oil
2 eggs
1/2 cup 2% low-fat milk
2 teaspoons lemon juice
1 teaspoon salt

2 cups whole wheat bread crumbs, soft
1 (10 ounce) package frozen spinach, thawed and squeezed dry

1 lb ground turkey breast
2 medium sized eggs
1 1/2 cup oatmeal
1/2 cup plain bread crumbs
1 cup chopped bell peppers
1 small yellow onion (chopped)
1 tsp seasoning salt
1/2 tsp ground black pepper
1 tsp minced garlic
1/2 cup your favorite barbecue sauce

Steps:

  • Preheat the oven on 375 F.
  • Place the ground turkey, vegetables, eggs, oatmeal, bread crumbs, seasonings, and 1/4 cup of the barbecue sauce in a large bowl. Mix the ingredients using your hands.
  • Mold the meatloaf, then brush on some of the remaining barbecue sauce on to the meatloaf.
  • Cover the meatloaf, and place in the oven for 25 minutes.
  • Remove from the oven, uncover, and pour the remaining barbecue sauce all over the meatloaf.
  • Place the meatloaf back into the oven uncovered for 10 to 15 minutes.
  • Let the meatloaf sit for 5 minutes before cutting into it.
  • Serve!

1/2 cup shredded carrot
1/2 cup fat-free milk
1/4 cup egg substitute
2 tablespoons ketchup
1 teaspoon garlic powder

TOPPING:
1/4 cup ketchup
1/4 cup quick-cooking oats

Steps:

  • Preheat oven to 350°. Combine first 8 ingredients. Add turkey; mix lightly but thoroughly., Transfer to a 9x5-in. loaf pan coated with cooking spray. Mix topping ingredients; spread over loaf. Bake until a thermometer reads 165°, 60-65 minutes. Let stand 10 minutes before slicing.

Deliciously Moist Healthy Turkey Meatloaf has lots of hidden sauteed mixed vegetables and "Meaty" Mushrooms. A family favorite.

1 medium onion, finely diced
2 carrots, peeled and finely diced
6 cloves garlic, crushed
1/4 cup fresh thyme
1 cup shiitake mushrooms, finely diced
2 1/2 teaspoons sea salt
2 tablespoons extra virgin olive oil
1/2 cup gluten-free oats
1/2 cup unsweetened store-bought or homemade hemp milk (see notes below for homemade hemp milk)
2 tablespoons organic Worcestershire
2 teaspoons Dijon mustard
1/2 cup organic ketchup
1 organic egg, such as Vital Farms
1 pound organic ground turkey
DRESSING: Combine 1 cup organic ketchup and 4 tablespoons worcestershire

Steps:

  • Preheat the oven to 375 degrees. Line a large baking pan with parchment paper.
  • Combine the onions, carrots, garlic and thyme in the bowl of a food processor. Process until minced but be sure to stop before the mixture turns into a paste. Transfer onion-carrot mixture to a bowl.
  • Add the mushrooms to the the food processor. Process until just minced. Set mushrooms aside.
  • Heat the oil in a large skillet over medium heat. Add the onion-carrot mixture and cook for about 6 minutes, or until onions begin to soften. Add the minced mushrooms to the skillet, season with 1/2 teaspoon of salt and cook for about 5 or 6 minutes, or until both the onions and shiitakes are soft. Set the sauteed vegetable mixture aside in a large mixing bowl to cool.
  • In a small bowl, combine the oats, hemp milk, Worcestershire, Dijon mustard, 2 tablespoons of the ketchup, egg and remaining 2 teaspoons of salt and whisk.
  • Remove turkey meatloaf from the oven and let it rest for at least 15 minutes before serving.

1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper

1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

  • In a food processor add the egg whites, onion, kale, carrots, garlic and ketchup. Process until smooth.
