Homemade Granola Bars image

Make Homemade Granola Bars with this easy Ina Garten recipe from Barefoot Contessa on Food Network, perfect for breakfast or for a quick, high-energy snack.

2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut, loosely packed
1/2 cup toasted wheat germ
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup light brown sugar, lightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup chopped pitted dates
1/2 cup chopped dried apricots
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
  • Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
  • Reduce the oven temperature to 300 degrees F.
  • Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
  • Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

Chewy, nutty, chocolaty, and packed with tasty energy, no one will ever know these bars are low-fat and healthy! They're very easy to make and you can pack in everyone's favorite nuts and fruits. My family has now stopped buying Kashi® and chewy bars because we love these so much. These are gluten-free when made with rice flour and appear to be professionally made thanks to the small spoonful of corn syrup that keeps everything tightly combined and gives the bars a nice shine. Have fun experimenting with different combinations of nuts, dried fruits, and toppings! Almond butter works well, too!

⅓ cup peanut butter
3 tablespoons butter, melted
¼ cup brown sugar
2 tablespoons honey
1 tablespoon corn syrup
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
½ teaspoon salt
3 tablespoons unsweetened applesauce
1 ⅔ cups old-fashioned oats
⅓ cup all-purpose flour
½ cup unsalted peanuts
½ cup raisins
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  • Stir peanut butter and melted butter together in a bowl until smooth. Add brown sugar, honey, corn syrup, vanilla extract, cinnamon, and salt; stir. Mix applesauce into peanut butter mixture.
  • Combine oats and flour in a bowl; toss to coat oats with flour. Stir peanuts and raisins into oat mixture. Pour peanut butter mixture over the oat mixture; stir to coat completely. Spread mixture into the prepared baking dish.
  • Bake in the preheated oven for 10 minutes. Sprinkle chocolate chips over the top and continue baking until chocolate melts and edges begin to brown, about 5 minutes more. Spread melted chocolate chips with the back of a spoon or a rubber spatula to coat the top. Cool completely before cutting into bars.

1 1/2 cups steel cut oats
3 egg whites
1 egg
1 1/2 teaspoons vanilla extract
1 tablespoon vegetable oil
1 teaspoon vegetable oil
1 1/2 teaspoons ground cinnamon
3/4 cup dark brown sugar
1/4 teaspoon salt
2/3 cup dried fruit
1/4 cup nuts
1/4 cup 100% bran

Steps:

  • Toast oats on a dry sheet pan at 400 degrees for 10min or until slightly brown and toasted.
  • Whisk together eggs, egg whites, vanilla, oil, cinnamon, sugar and salt in a bowl.
  • Add in oats, fruit, nuts and bran.
  • Spread in a 8 by 11 pan that is lined with foil and sprayed with cooking spray.
  • Cook at 325 degrees for 35 to 40 minutes. Let cool, cut and enjoy!
  • If you use a bigger pan like a 9 by 13 your bars will be thiner and cook in approx 25min. Or use a smaller pan for thicker bars and cook an extra 5-10min.

This is a base recipe that is full of nutrient rich ingredients but yet is not overly sweet. The result is a chewy, almost cake-like granola bar though not at all similar to any that you would find in the supermarket. This recipe is pretty flexible so don't hesitate to modify to suit your tastes. For a vegan version, replace the honey with maple syrup. And, try some of the suggested additions. (Updated March 2008)

2 cups rolled oats (old-fashioned)
1 cup whole wheat pastry flour (or stoneground spelt flour)
1 cup wheat germ
1/2 teaspoon salt
2 teaspoons cinnamon, ground
1/4 teaspoon nutmeg, freshly grated
1/2 cup ground flax seeds
1/2 cup oil (neutral flavor like sunflower)
1/2 cup honey
2 teaspoons vanilla extract
2 teaspoons blackstrap molasses (optional)
1 cup sugar-free applesauce, thick

Steps:

  • Preheat oven to 350°F.
  • Toast oats for 5 minutes in a dry skillet over medium heat. Let cool.
  • In a large bowl, combine dry ingredients (including oats) and whisk together until well combined.
  • In a separate bowl, whisk together wet ingredients until well blended.
  • Add wet mixture to dry ingredients and blend gently until well moistened. Add any of the suggested additions now (see Step 8). Mixture should be moist but not too wet. If it seems too dry and crumbly, add a little more applesauce (by the spoonful).
  • Line a 9in x 13in pan with parchment paper and press mixture into pan.
  • Bake at 350°F for 30 minutes. Cut into bars while warm, but let cool completely before removing from pan.
  • Suggested additions (add up to 2 cups of any of the following): chocolate chips, raisins (soaked in hot water for 10 minutes then drained), unsweetened shredded coconut, sunflower seeds (unsalted), pumpkin seeds (unsalted), dried fruit (like chopped apricots, cranberries), chopped toasted nuts.
