Steps:
- Cook onion, celery and carrot in 2 tablespoons broth for about 3 minutes, stirring occasionally, until onion is tender.
- Stir in remaining broth, leek and beans. Heat to boiling.
- Boil 2 minutes; reduce heat. Cover and simmer about 1 to 2 hours or until beans are tender. (Add more broth during cooking if liquid does not cover beans.)
- Stir milk into soup.
- Place 1 cup of the soup in blender or food processor. Cover and blend on high speed about 30 seconds or until uniform consistency.
- Stir blended mixture into remaining soup mixture. Stir in cheese until melted.

Steps:
- Combine onion, carrots, celery, fennel, and garlic in a food processor and process until vegetables are finely chopped, about 15 seconds (or finely chop by hand).
- Heat oil in a heavy 4-quart saucepan over medium-high heat.
- Add chopped vegetables and cook, stirring, until they begin to soften, 2-3 minutes, Stir in tomatoes and stock and bring to a boil.
- Cover, reduce heat to medium-low, and simmer for 20 to 30 minutes.
- Add beans and pasta and cook, stirring frequently, until pasta is tender but firm (al dente), about 10 minutes.
- Season with salt and pepper to taste. Stir in basil and parsley. Garnish each serving with some cheese, if desired.

- In a large saucepan, cook onion, bacon, and garlic about 5 minutes or until onion is tender. Stir in beans; cook 1 minute more. Stir in tomatoes, chicken broth, dried thyme, and black pepper. Bring to boiling; reduce heat. Cover and simmer for 20 minutes.
- Remove from heat. Mash bean mixture slightly with the back of a wooden spoon. Stir in spinach. Let stand, covered, for 1 minute to wilt spinach.
- If desired, serve with toasted baguette slices and/or garnish with fresh thyme sprigs.

- Dice up your onion, Green Chilies, Cilantro, and Garlic. Dump in a crockpot.
- Rinse your beans in a strainer and then pour over veggies in crock pot.
- Dump in Oregano, Cayenne, and cumin.
- Pour Chicken Broth in and give a stir.
- Place Chicken Breasts (frozen or not, if you don't want to simmer as long can be thawed) on top.
- Simmer 5-6 hours. You can take the chicken out at about 5 hours and cube or shred or just break it apart with a utensil while cooking. After it is apart put it back in and stir. I shred it right in the crock pot by moving it around with a wooden spoon.
- Pour in a bowl and dig in!

- Using a food processor pulse the onion until minced.
- Drain and rinse the black beans.
- Add to the food processor with the cream cheese.
- Pulse until pureed.
- Dilute wtih chicken broth to your desired thickness.
- Transfer to a medium sauce pan and heat over low heat until thoroughly heated.
- Garnish with sour cream and chives.
