STEAMED BLACK ALASKA COD
Black Alaska Cod is worth it's weight in gold so I am fussy how I cook it. Try to find thick chunks . Don't buy the thin tail piece there is no flesh and it tastes over smoked. This recipe is so simple I feel silly posting it but if you haven't steamed it try it. You may make a sauce but I like it just buttered with salt & pepper

Steps:
- Place the fish, skin side down in it top part of the steamer Steamer pot (like a double boiler but with an insert with holes to allow the steam to come through or a Chinese steamer basket).
- Pour Beer/water into the bottom half.
- Bring to a boil& steam the fish until it flakes apprx 20 minutes depending on the thickness of the filet.
- When coked remove the skin& bones.
- Lightly butter the flaked fish.
- Add salt& Pepper.

BLACK COD WITH FENNEL CHOWDER AND SMOKED OYSTER PANZANELLA

- For chowder:
- Melt butter in large saucepan over medium-low heat. Add fennel, potato, onion, and leek. Cover and cook until vegetables are just tender but not brown, about 8 minutes. Add flour, bay leaves, and thyme; stir 1 minute. Stir in clam juice, cream, and milk. Simmer until chowder thickens slightly and flavors blend, about 10 minutes. Mix in lemon peel; season to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cool 30 minutes; cover and refrigerate.
- For panzanella and fish:
- Toss celery, shallot, parsley, 1 1/2 teaspoons lemon juice, lemon peel, and smoked oysters in medium bowl. Season celery-shallot mixture to taste with salt and pepper.
- Combine 3 tablespoons butter, thyme, and 3 teaspoons lemon juice in small saucepan. Whisk over low heat until butter melts and sauce simmers; season with coarse salt and pepper. Remove from heat. Melt 2 tablespoons butter in large nonstick skillet over high heat. Sprinkle fish with coarse salt and pepper. Add fish, skin side down, to skillet. Cook until skin is crisp and fish is just opaque in center, drizzling lemon-butter sauce over, 6 to 7 minutes.
- Rewarm chowder over low heat; discard bay leaves. Divide chowder among 4 shallow bowls. Place fish, skin side down, in center of chowder. Stir panko into celery-shallot mixture; spoon over fish and serve.
- Available in the Asian foods section of some supermarkets and at Asian markets.
WARMED SMOKED BLACK ALASKAN COD SALAD

- In a medium saucepan bring the potatoes, salt and vegetable stock to a boil. Turn down heat and simmer for 4 to 5 minutes, remove from liquid and set aside. In a small bowl, combine the grainy mustard, Dijon mustard, rice wine vinegar, horseradish, lemon juice and salt and pepper. Whisk in oil. In a medium saucepan, bring the milk, thyme, bay leaf and garlic to a boil. Turn heat to low and poach black cod in liquid for 4 to 5 minutes. Remove from heat and keep warm. Blanch baby leeks in water, remove and set aside.
- In a small bowl, toss arugula, chickweed, onion and radishes with a tablespoon of vinaigrette, season with salt and pepper.
- To serve: Place the room temperature potatoes with baby leeks on 4 plates. Place salad on top of the potatoes and leeks. Place warm smoked black cod on top of salad. Top with small dollop caviar.
SMOKY BLACK COD SALAD

- In a large bowl whisk together the mayonnaise, yogurt, Dijon mustard, tarragon, salt, celery seed, and garlic.
- Fold in the chilled potatoes. Place in an an airtight container and refrigerate for at least 3 hours to blend the flavors.
- Add the celery, radishes (if using), red or purple onion, green onions (scallions), and the flaked black cod, and carefully mix (try not to break up the fish pieces too much).
- Arrange the salad in the center of a chilled, lettuce-lined serving dish and garnish with additional sliced smoked fish and/or Pacific pink shrimp.
- Makes 6 servings.

- Mix the salt, sugar and garlic powder in a bowl. Pour on a healthy layer of the mix into a lidded plastic tub that will hold the fish. I cut the fillets into pieces I imagine I will want to serve, so about 2 to 3 per side of a large sablefish, probably just two pieces per side with a typically sized black cod. Set the fish skin side down on the salt. Now use the remaining salt mix to massage into the meat of the fish. You want it covered with as much salt as the fish can hold. Cover the container and set in the fridge for however many hours as the fish weighs.
- Remove the sablefish and rinse it briefly under cool water. Pat it dry. Set it back in the fridge, this time uncovered, overnight.
- The next day, get your smoker ready. I prefer alder wood for fish, but any mild wood will do. Oak is nice, as is beech or maple or a fruit wood. Smoke the sablefish at about 160ºF for 2 to 3 hours. You want the fish cooked through, but just barely.
