SLOW-COOKER BLACK-BEAN SOUP WITH TURKEY

Steps:
- Set aside half an onion and chop the rest. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onions, carrots and garlic; sprinkle with the flour and cook, stirring, until slightly browned, 5 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan. Transfer the vegetables and cooking liquid to a slow cooker. Add the beans, turkey drumstick, pickling-spice packet, red pepper flakes and 8 cups water. Cover and cook on low 6 hours.
- Remove the drumstick and shred the meat; keep warm. Remove about 2 cups beans from the cooker and blend until smooth (or partially blend with an immersion blender). Return the beans and turkey meat to the soup. Season with salt and pepper.
- Mince the reserved 1/2 onion. Ladle the soup into bowls and top with the cilantro and minced onion. Garnish with sour cream and lime, if desired.
SAUSAGE-BEAN SOUP
Steps:
- Escarole and White Bean Soup: Cook 3 chopped garlic cloves and some red pepper flakes in olive oil. Add 3 cups chicken broth, 1 head chopped escarole and a parmesan rind; simmer 15 minutes. Add 1 can white beans, parmesan and salt.
- For Sausage-Bean Soup: Make Escarole and White Bean Soup; saute 4 chopped sweet Italian sausages with the garlic.

DELICIOUS 15 BEAN AND TURKEY SAUSAGE SOUP
This 15 Bean recipe can be made with either Cajun spice pack, or the plain, with salt and pepper to taste. It can be made in a crockpot (soak beans overnight, or at least 6 hours, first), or cooked on top of the stove. Eat as a main course soup OR SERVE OVER RICE, like a true cajun would! My husband eats ALL beans over rice!

Steps:
- Rinse Beans.
- OVERNIGHT SOAKING METHOD:
- Soak overnight in about 3 quarts of water (in large pot that will be used to cook beans) or at least 6 hours.
- Bring beans to a soft boil. Add garlic, frozen season blend (or fresh chopped onions,celery and bell pepper), sliced sausage, and hot pepper sauce. Shake a little pepper vinegar into pot (optional). Bring down to a low simmer and cook for about 45 minutes to 1 hour until soft. Taste and add salt and pepper to taste. Go easy! Remember it is easier to add salt, but almost impossible to take it back out! :)
- CROCKPOT METHOD. Same as above, except just throw everything into crockpot, put on low, cover and come home that night to a tasty meal!
- NOTE: If you forget to soak beans, you CAN boil them for about 30 - 45 minutes on top of stove before going to work. Then transfer to crockpot and carry on! Make sure there is enough water to cover beans by at least 2 inches.
- STOVETOP METHOD:
- In large pot with about 3 qts of water, bring beans to a rapid boil. Boil for about 45 to 60 minutes, stirring occasionally to prevent sticking. Bring down to a simmer, and add all ingredients. Cook for about another hour on low heat, until done.
- SERVE as a soup (about 1 cup per serving).
- CAJUN: Serve over 1/2 cup of rice in a bowl.
- Delicous with cole slaw or potato salad and slice of french bread. And bread pudding for dessert!

- Heat large pot with low fat cooking spray. Add onion, carrot and celery; cook and stir over medium heat until vegetables begin to soften.
- Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in Kielbasa. Cover and simmer gently for at least 1/2 hour to blend flavours.

- Heat olive oil in a Dutch oven or soup pot to medium heat. Add the onion and cook 3-4 minutes or until slightly soft. BLACK BEAN AND SMOKED SAUSAGE SOUP
I can easily make this after work, even if I have to prep everything from scratch. The original recipe was adapted from a Better Homes and Gardens Cookbook. It called for 1 lb of dried black beans but for us, canned works best on a weeknight. I've used either 2 or 3 cans of beans, it depends on how thick you like your bean soup. I think the coriander and sherry are the key to it's taste.

- In a large pot, cook the bacon until crisp. Remove with a slotted spoon and drain on paper towels.
- Pour off all but 1 tablespoon of the fat from the pot.

- In a large soup pot like a Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon. Eat a slice, then chop the rest and set aside. Preheat the oven to 325F.
- Brown the turkey thighs in the hot bacon grease, turning as needed. Remove and set aside. Add the carrots, onions and celery and cook until soft, about 6 to 8 minutes. Add the garlic and cook another minute or two.
- Return the turkey thighs to the pot, add the stock along with another quart of water. Add the beans, thyme and bay leaves and salt to taste. Cover the pot and set in the oven for 2 hours -- 90 minutes if you are using store-bought turkey.
- Check the turkey to see if it's tender. When it is, fish the thighs out and debone, then chop and shred a bit. Remember you will eat all this with a spoon, so that should guide you in terms of size. Return the turkey meat to the pot.

- Heat olive oil in a large Dutch oven over medium-high heat. Add the onion, and sauté 4 minutes or until onion is soft. Add bean purée, remaining beans, 2 cups water, chili powder, and next 4 ingredients (chili powder through garlic); bring to a boil. Cover, reduce heat, and simmer 5 minutes, stirring occasionally. Stir in turkey kielbasa; cook 1 minute or until thoroughly heated.

- In a large dutch oven or stock pot, heat the oil over medium high heat. Add the sausage and cook for 5 minutes, stirring occasionally, until browned. Add the onion, green bell pepper, carrot, and garlic. Season with the kosher salt and pepper, and cook, stirring occasionally, until the onion and pepper softens, about 5 minutes.
- Sprinkle the flour over the sausage and veggie mixture and stir to coat, stirring and cooking for 1-2 minutes or until it loses its raw floury taste and begins to smell toasty. Slowly add the milk and stir until smooth. Cook until the the mixture begins to thicken and bubble, stirring often, then add Worcestershire sauce, sage and beans. Reduce the heat to medium-low and continue to cook for 15-20 minutes or until the flavors come together, stirring occasionally. Add more salt and pepper to taste. Serve hot with a few sprinkles of fresh parsley and french bread for dipping or crackers on the side.

- Rinse beans. In a large saucepan or Dutch oven combine beans and 6 cups water. Bring to boiling; reduce heat. Simmer for 2 minutes. Remove from heat. Cover and let stand for 1 hour. (Or, place beans in water in pan. Cover and let soak in a cool place for 6 to 8 hours or overnight.) Drain and rinse beans.
- Return beans to saucepan. Stir in chicken broth, water, onion, celery, coriander, salt, cayenne pepper, and garlic. Bring to boiling; reduce heat. Simmer, covered, for 1 to 1 1/2 hours or until beans are tender.
- If desired, mash beans slightly. Stir in sausage; heat through. If desired, serve topped with sour cream and cilantro.
