The distinct, rich flavor and fantastic crunch of hazelnuts add a delicious twist to this recipe for scallops.

6 tablespoons unsalted butter
1/4 cup hazelnuts, skins removed coarsely chopped
2 teaspoons white-wine vinegar
Coarse salt and ground pepper
1 pound large sea scallops (about 12), muscles removed, cut in half horizontally
1 to 2 bunches (about 1/2 pound total) arugula (preferably baby), washed well and dried

Steps:

  • In a large skillet, stirring frequently, cook butter over medium heat until golden brown and most of the foam has subsided, about 4 minutes. Immediately transfer butter to a small bowl. Stir in hazelnuts and vinegar, and season with salt and pepper. Cover hazelnut butter to keep warm, and set aside. Wipe out pan with a paper towel.
  • Season scallops generously with salt and pepper. Place same skillet over medium-high heat. When skillet is hot, cook scallops, in two batches (to avoid steaming), until browned and opaque in center, turning over once with a thin-bladed metal spatula, about 2 minutes total.
  • Divide arugula among four serving plates; top with scallops. Spoon hazelnut butter over scallops.

Roasted Butternut Squash Ravioli with Sage, Hazelnut and Brown Butter Sauce image

2 butternut squash, halved and seeded
Pinch cinnamon
Pinch nutmeg
1 tablespoon finely chopped orange zest
2 teaspoons chipotle puree
1/4 cup finely chopped parsley
1/4 cup finely grated Parmesan cheese
Salt and freshly ground pepper
4 sheets pasta dough, 12 to 14 inches long by 4 inches wide
2 eggs mixed with 2 tablespoons water
Chopped chives
2 sticks unsalted butter
1/4 cup coarsely ground hazelnuts
8 sage leaves, chiffonade
Salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Place squash on a baking sheet and roast until soft 30 to 40 minutes. Scoop out flesh and run though a food mill. Place the puree into a medium saucepan and cook over low heat until almost dry. Add the remaining ingredients and season with salt and pepper to taste. Lay a sheet of pasta dough on a lightly floured work surface and distribute a heaping teaspoon-sized portion of the filling at least 2 inches apart. Use your fingertip or a brush to moisten the edges of the pasta sheet with the egg wash. Carefully place a second sheet of the pasta dough on top of the first and press with your fingertips to separate the rows of filling. Repeat with the remaining dough. With a ravioli cutter or pastry wheel, cut along straight lines on the vertical and horizontal to form each ravioli square. Press the edges closed with your fingertips to seal well. Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for about 5 minutes. Drain, plate and spoon butter sauce over and garnish with finely chopped chives.
  • Melt butter in a medium saute pan over medium heat and cook until the foam subsides and the butter begins to brown, 3 to 4 minutes. Remove from the heat, stir in the hazelnuts and sage and season with salt and pepper to taste.

1 cup all purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1 1/2 cups whole milk
1/2 cup whipping cream
2 tablespoons (1/4 stick) unsalted butter, melted
2 large eggs
2 tablespoons Frangelico (hazelnut liqueur)
1 teaspoon grated lemon peel
Additional melted butter
Hazelnut cream
1 cup hazelnuts, toasted, husked
1/2 cup powdered sugar
6 tablespoons (3/4 stick) unsalted butter, room temperature
2 tablespoons plus 1 teaspoon all purpose flour
1 large egg
1 large egg yolk
1 tablespoon Frangelico
Sauce
2 tablespoons Frangelico
1 1/2 teaspoons sugar
1/2 cup (1 stick) unsalted butter
1/3 cup hazelnuts, toasted, chopped
1/4 teaspoon coarse kosher salt

Steps:

  • For crepes:
  • Whisk flour, sugar, and salt in large bowl. Make well in center of flour mixture. Whisk milk and next 5 ingredients in medium bowl to blend. Add to flour mixture; whisk to blend. Cover; let stand at room temperature 2 hours.
  • Heat nonstick skillet with 7-inch-diameter bottom over medium-high heat. Brush bottom with melted butter. Pour generous 2 tablespoons batter into skillet; swirl to coat bottom. Cook until edges are light brown, about 30 seconds. Loosen edges gently with spatula and turn crepe over. Cook until bottom begins to brown in spots, about 30 seconds. Transfer to plate. Cover with paper towel. Repeat to make 12 crepes total, brushing skillet with melted butter as needed and stacking crepes between paper towels. (Can be made 1 day ahead. Cover and chill.)
  • For hazelnut cream:
  • Using on/off turns, finely chop nuts with sugar in processor. Add remaining ingredients; process until blended.
  • Butter rimmed baking sheet. Place 1 crepe on work surface. Place 1 tablespoon hazelnut cream in lower right quarter of crepe. Fold crepe in half over cream, then into quarters, folding to show layers. Transfer to prepared baking sheet. Place 1 teaspoon hazelnut cream atop crepe. Repeat with remaining 11 crepes and hazelnut cream. (Can be prepared 3 hours ahead. Cover with plastic wrap and chill.)
  • Preheat oven to 400°F. Bake until crepes are hot and crisp around edges, about 6 minutes.
  • Meanwhile, prepare sauce:
  • Stir Frangelico and sugar in small bowl until sugar dissolves. Melt butter in heavy large skillet over medium-high heat; cook until butter browns, stirring occasionally, about 5 minutes. Remove from heat. Mix in Frangelico mixture, nuts, and salt.
  • Divide crepes among 6 plates. Spoon sauce over and around crepes.

4 (10 -12 ounce) pan-dressed trout
3/4 teaspoon ground cumin
3/4 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon olive oil
1 bunch green onion, cut into thin strips
4 tablespoons butter
1/4 cup hazelnuts, coarsely chopped
2 tablespoons lemon juice
2 tablespoons balsamic vinegar

Steps:

  • Spread trout open; sprinkle meaty side with cumin, salt and 1/8 teaspoon black pepper. \.
  • Heat oil in large non-stick skillet over medium-high heat. Add two trout, skin-side-up; cook for 2 minutes. Turn skin-side-down; cook 2 to 3 minutes more or until fish flakes easily when tested with fork.
  • Line 4 plates with green onion strips. Transfer fish to 2 of the plates, skin-side-down. Cover; keep warm.
  • Add additional oil, as needed, to fry remaining fish. Cook as above. Transfer to plates. Cover; keep warm.
  • Reduce heat to medium. Add butter and hazelnuts to skillet; cook, stirring often, 1-1/2 to 2 minutes, until butter and nuts begin to brown. Stir in lemon juice and vinegar; cook for 30 seconds until slightly thickened (aroma will be strong). Add remaining 1/8 teaspoon black pepper.
  • Pour nut mixture over trout; serve immediately.
