An ancient meal made with only a few ingredients, Hareesa is a rich and creamy soup made from wheat and chicken and has the consistency of porridge. This dish is intended to feed a crowd, and simmer for hours on end. But, I have simplified the recipe to make this warm, comforting dish to feed your family in just a few hours.

5 cups Wheat Berries (500g)
3 lb. Whole Chicken
½ cup Ghee
2 tsp. Salt
1 sm. Onion
3 Bay Leaves
1 tsp. Whole Cloves
4 Cardamom Pods ((Optional))
1 Dried Lime/Lemon ((Optional))
1 tb. Salt
1 tsp. Black Pepper

Steps:

  • In a large bowl, add the wheat berries. Heat up a kettle of water and add enough boiling water to cover the wheat and at least a couple of inches above. Soak for minimum 6 hours (preferably overnight). Change the water at least once.
  • In a large pot, add the soaked and drained wheat berries along with enough water to cover at least 2 inches above the wheat. Cook over medium heat for one hour, stirring every few minutes to prevent sticking.
  • In a separate large pot, add the whole chicken, onion and all the aromatics and seasonings. Cook for 90 minutes until the chicken is fall off the bone tender. Remove the chicken and set aside to cool and shred.
  • Once the wheat has cooked for 1 hour, start adding the prepared chicken broth, one ladle at a time. This process is similar to risotto, where you keep adding warm chicken broth as the wheat absorbs it. Use a strainer when adding the chicken broth to catch any of the aromatics. Using the bottom of the ladle or a potato masher, mash the wheat buds during the cooking process. They don't need to be fully mashed, but slightly crushed. This process should go on for about 90 minutes or so for a total cooking time of 2.5 hours.
  • Shred the whole chicken into small bite size pieces. In a small skillet or saucepan, add ½ cup of ghee (or butter) and warm over medium until JUST melted. Add the warmed ghee and shredded chicken to the hareese. Season with salt and stir to incorporate.

Classic Moroccan Harira: Tomato, Lentil, and Chickpea Soup image

Harira is a famous Moroccan soup that's especially popular in Ramadan. This classic recipe uses fresh tomatoes, chickpeas, and lentils.

3 tablespoons vegetable oil
1/2 pound lamb (or beef or chicken, chopped into 1/2-inch pieces)
6 large tomatoes (peeled, seeded and pureed)
1 tablespoon Kosher salt
1/2 teaspoon turmeric (or 1/4 teaspoon yellow food coloring)
1 bunch parsley (no stems, finely chopped to yield about 1/4 cup)
1 bunch cilantro (no stems, finely chopped to yield about 1/4 cup)
1 stalk celery (with leaves, finely chopped)
1 1/2 teaspoons pepper
1 teaspoon ground cinnamon
1 tablespoon ground ginger
1 large onion (grated)
1 handful of dried chickpeas (soaked overnight and peeled)
10 to 11 cups of water (divided 3-8)
3 tablespoons dried lentils (soaked overnight)
3 tablespoons tomato paste (mixed into 1 cup water)
2 tablespoons vermicelli (broken into pieces)
Optional: 1 tablespoon smen
Optional: 2 tablespoons rice (uncooked)
For Thickening the Soup:
1 cup flour
2 cups water
Garnish: chopped parsley

Steps:

  • Gather the ingredients.
  • Heat up the cooking oil in a 6-quart or larger pressure cooker. Add the meat.
  • Cook for a few minutes, stirring to brown all sides.
  • Add the pureed tomatoes, kosher salt, turmeric, parsley, cilantro, celery, pepper, cinnamon, ginger, onion, chickpeas, and smen (if using). Stir and add 3 cups of the water.
  • Cover tightly and heat over high heat until pressure is achieved. Reduce the heat to medium and cook for 20 to 30 minutes. Remove from the heat and release the pressure.
  • Add the lentils, tomato paste mixture, and the remaining 8 cups (2 quarts) of water. If at any point there's an oily surface forming on top of the soup, simply skim it off and discard. This can happen because of the meat's fat, if left on.
  • Have the rice or vermicelli at hand, if using, but don't add yet.
  • Cover the pot and heat the soup over high heat until pressure is achieved. Reduce the heat to medium and continue cooking. If adding rice, cook the soup on pressure for 30 minutes. Release the pressure and add the rice. Cover and cook with pressure for an additional 15 minutes. Taste for seasoning and add salt and pepper if desired. If using vermicelli, cook the soup on pressure for 45 minutes. Release the pressure, and add the vermicelli. Simmer the soup, uncovered, for 5 to 10 minutes or until the vermicelli is plump and cooked. Taste for seasoning and add salt and pepper if desired.
  • While the soup is cooking, make a soup thickener by mixing together the flour and water.
  • Mix well, but if the mixture is not smooth, pass it through a sieve to remove lumps.
  • Bring the soup to a full simmer. Slowly, and in a thin stream, pour in 1/4 of the flour mixture. Stir constantly and keep the soup simmering so the flour doesn't stick to the bottom or cooks up in lumps.
  • Add another 1/4 of the flour thickener. You will notice the soup beginning to thicken when you've used approximately half the flour mixture. The thickness of harira is up to you.
  • Simmer the thickened soup, stirring occasionally, for 5 to 10 minutes to cook off the taste of the flour. Remove the soup from the heat, serve, and garnish with some chopped parsley. Enjoy.

When the day calls for soup but your schedule doesn't, look to an assertive ingredient that doesn't require hours of simmering to extract flavor. Harissa, a North African chile paste, packs a punch right out of the jar (brands range in heat levels, though, so adjust quantity to taste). Dump in 2 cans of chickpeas: The starchy, seasoned liquid thickens the soup quickly. Besides that, additional vegetables and toppings you want to add are up to you: Soup should bend to your life, not the opposite.

1 large yellow onion, diced (about 1/2 cup)

Steps:

  • Heat the olive oil in a Dutch oven or soup pot over medium heat. Add the onion, carrot and a pinch of salt, and sauté, stirring occasionally, until tender, 8 to 10 minutes. Stir in the garlic and cumin and cook until fragrant, 1 minute. Stir in the harissa and cook until fragrant, 1 minute.
  • Add the chickpeas and their liquid. Fill a can with water, and add that to the pot as well. Season with salt, and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until the chickpeas are warmed and the flavors have come together, about 10 minutes. Turn off the heat and stir in the lemon juice. Now taste it: Add salt, water (if too thick), honey (if too spicy), and/or harissa (if not spicy enough) to your liking. Serve hot, with whichever toppings you like.

10 dried New Mexico chiles (2 ounces), stems removed
8 dried guajillo chiles (1 1/2 ounces), stems removed
1/2 teaspoon whole coriander seeds
1/2 teaspoon whole cumin seeds
1/4 cup vegetable oil
1 tablespoon kosher salt
6 cloves garlic, roughly chopped
Juice of 1 lemon (about 2 tablespoons)
Freshly ground black pepper

Steps:

  • If you want spicy harissa, include the chiles' seeds; if not, slit them open to remove and discard the seeds. Tear the chiles into large pieces and place them in a medium bowl. Carefully pour 4 cups boiling water over chiles and set aside until softened, about 20 minutes.
  • Meanwhile, place the coriander and cumin seeds in a small skillet and cook over medium heat, swirling the pan often, until the spices are fragrant and lightly toasted, 2 to 3 minutes. Transfer the spices into a blender, add the oil, salt, garlic and lemon juice, and puree until smooth. Drain the chiles, reserving 1 cup of the soaking liquid (discard remaining liquid). Add the chiles and reserved liquid to the blender and puree on high until very smooth, about 2 minutes. Season the harissa with pepper and transfer to an airtight container. Refrigerate for up to 2 weeks.

HARISSA CHICKEN AND LENTIL SOUP

3 tablespoons extra-virgin olive oil
4 scallions, thinly sliced (dark green parts separated)
3 cloves garlic, minced
1 pound skinless, boneless chicken breasts, cut into 1 1/2-inch chunks
Kosher salt and freshly ground pepper
4 teaspoons ground cumin
1/4 cup plus 2 tablespoons harissa
1 14.5-ounce can diced tomatoes
2 15.5-ounce cans lentils
4 pieces pita bread
1 teaspoon grated lemon zest, plus 4 teaspoons lemon juice
1/2 cup nonfat plain Greek yogurt

Steps:

  • Preheat the oven to 350˚ F. Heat the olive oil in a medium pot over medium-high heat. Add the white and light green scallion parts and cook until they begin to soften, about 2 minutes. Add the garlic and cook 1 minute. Add the chicken, season with 3/4 teaspoon each salt and pepper and cook, stirring occasionally, until browned on all sides. Stir in the cumin and 1/4 cup harissa to coat the chicken completely; cook 1 minute.
  • Add the tomatoes, lentils and 4 1/2 cups water to the pot. Cook until the chicken is cooked through and the soup thickens slightly, about 15 minutes. Season with salt and pepper.
  • Meanwhile, wrap the pita in foil and place in the oven to warm, 8 to 10 minutes. Stir the remaining 2 tablespoons harissa and the lemon zest into the yogurt. Right before serving, stir the lemon juice into the soup.
  • Divide the soup among bowls. Top with the yogurt mixture and dark green scallion parts; serve with the pita.

3 tbsp olive oil , plus extra to drizzle
4 boneless, skinless chicken thighs
1 leek , washed and finely sliced
4 fat celery sticks, chopped into small pieces
3 large carrots , chopped into small pieces
2 big parsnips , peeled and chopped into small pieces
small pack coriander , stalks finely chopped, leaves reserved to serve
1 tbsp cumin seeds
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground cinnamon
2 tsp ground turmeric
2 tbsp harissa (we used Belazu)
2 x 400g cans chopped tomatoes
2 chicken stock cubes , crumbled
85g raw green lentils
zest and juice 1 lemon
1 tbsp golden caster sugar
natural yogurt , toast and hummus, to serve

Steps:

  • Heat half the oil in a frying pan, season the thighs and brown really well on both sides. Remove to a plate. Tip a mug of water into the pan and simmer, scraping up all the browned bits. Tip this liquid into a measuring jug for later.
  • Put the remaining oil, the vegetables and coriander stalks in a big saucepan. Gently cook until the veg is softened - about 5 mins. Stir in the spices, turn up the heat, and cook for a few mins. Stir in the harissa, followed by the tomatoes, the chicken, stock cubes and lentils. Top up your jug of chickeny juices to 500ml with water, then add this, too. Bring to a simmer, cover and cook for 30 mins.
  • Lift the chicken from the soup and shred finely using a couple of forks. Return to the soup with the lemon zest and juice, sugar, and season to taste. Ladle into bowls with a dollop of yogurt and the coriander leaves, and serve with toast, spread with hummus and drizzled with oil.

1 large onion, diced (about 2 cups)
3 stalks celery, diced (about 1 1/2 cups)
3 large carrots, peeled and cut in rounds
1/2 teaspoon ground turmeric

1/2 to 1 teaspoon harissa or dried red chile flakes, plus more for serving
Salt to taste
1 bunch parsley, chopped (about 1 1/2 cups/75 grams), divided
1 bunch cilantro, chopped (about 1 1/2 cups/75 grams), divided
1 (15-ounce/425-gram) can tomatoes, crushed, or 2 cups (450 grams) tomato sauce
7 cups (1 2/3 liters) chicken or vegetable stock
1 cup (200 grams) dried chickpeas, soaked overnight and cooked or 1 (15-ounce/425-gram) can chickpeas, drained
1 cup (370 grams) green lentils

Steps:

  • Heat the oil in a large skillet over medium heat and sauté the onion, celery, and carrots until the onion turns translucent and begin to brown, about 5 to 10 minutes. Add the turmeric, cumin, harissa or chile flakes, 1 teaspoon of salt, 1 cup each of the parsley and cilantro, tomatoes, and the stock or water and bring to a boil. If using the soaked chickpeas, drain them and add to the pot. Simmer uncovered for 25 minutes, then add the lentils, another teaspoon of salt and a teaspoon of pepper and continue simmering until the chickpeas and lentils are cooked, about 20 minutes more. If using canned chickpeas omit the first 25 minutes of simmering and add with the lentils.
  • Whisk the flour, egg, and lemon juice into 2 cups (470 ml) of water. Stir into the soup. Simmer the soup about 5 minutes more and serve, sprinkled with the remaining cilantro and parsley. And don't forget to have some extra harissa in a plate on the side.

RED PEPPER, SQUASH & HARISSA SOUP

1 small butternut squash (about 600-700g), peeled and cut into chunks
2 red pepper , roughly chopped
2 red onion , roughly chopped
3 tbsp rapeseed oil
3 garlic cloves in their skins
1 tbsp ground coriander
2 tsp ground cumin
1.2l chicken or vegetable stock
2 tbsp harissa paste
50ml double cream

Steps:

  • Heat oven to 180C/160C fan/gas 4. Put all the veg on a large baking tray and toss together with rapeseed oil, garlic cloves in their skins, ground coriander, ground cumin and some seasoning. Roast for 45 mins, moving the veg around in the tray after 30 mins, until soft and starting to caramelise. Squeeze the garlic cloves out of their skins. Tip everything into a large pan. Add the chicken or vegetable stock, harissa paste and double cream. Bring to a simmer and bubble for a few mins. Blitz the soup in a blender, check the seasoning and add more liquid if you need to. Serve swirled with extra cream and harissa.

Harira, a savory Moroccan soup made with dried legumes - lentil, chickpeas, fava beans - is traditionally cooked with lamb or lamb broth, but this version is vegetarian. Though it is typically eaten to break the fast during Ramadan, it is served throughout the rest of the year as well. The soup tastes best the following day, when flavors have melded, but may thicken when refrigerated. Thin with water or broth when reheating, and adjust the salt.

2 tablespoons extra-virgin olive oil or butter
1 large onion, finely diced, about 2 cups
4 garlic cloves, minced
1 tablespoon dried ginger

1/4 teaspoon cayenne
1/2 teaspoon crumbled saffron

1 cup brown lentils, rinsed
1 cup red lentils, rinsed

1/4 pound angel hair pasta or vermicelli, broken into 1-inch pieces

Steps:

  • Put olive oil in a large heavy-bottomed soup pot over medium-high heat. Add onion and cook, stirring, until softened and lightly colored, 8 to 10 minutes. Stir in garlic, ginger, pepper, turmeric, cumin, cayenne, saffron and cinnamon. Cook for about 2 minutes more.
  • Add tomato, celery leaves and cilantro and bring to a brisk simmer. Cook, stirring, about 5 minutes, until mixture thickens somewhat, then add 1 teaspoon salt, the brown lentils, red lentils and dried favas. Add 8 cups water. Bring to a boil, then reduce to a gentle simmer, covered with the lid ajar.
  • Let soup simmer for 30 minutes, then taste broth and adjust salt. Cook for 1 hour more at a gentle simmer, until the legumes are soft and creamy. It may be necessary to add more liquid from time to time to keep soup from being too porridge-like. It should be on the thick side, but with a pourable consistency. (With every addition of water, taste and adjust for salt.)
  • Just before serving, add pasta and let cook for 2 to 3 minutes. Ladle soup into small bowls and pass lemon wedges for squeezing.
