12 oz fresh halibut fillets, cut into 2 pieces
1/4 teaspoon ground cinnamon
Salt and freshly ground pepper to taste
1 cup coarsely chopped zucchini or yellow summer squash
1/4 cup pitted kalamata olives, halved
1/4 cup drained Muir Glen™ organic no-salt-added diced tomatoes (from 14.5-oz can)
2 tablespoons chicken stock
4 orange slices
2 to 4 sprigs fresh thyme leaves

Steps:

  • Heat oven to 400°F. Cut 2 (16-inch) squares cooking parchment paper or foil.
  • Season both sides of fish with cinnamon, salt and pepper; place 1 piece each onto middle of parchment paper. For each piece, top with half the zucchini, olives and tomatoes; season with a pinch more salt and pepper. Pour 1 tablespoon stock over each, then top with half the orange slices and thyme.
  • To make packets, roll and crimp opposite sides of parchment paper together over fish and vegetables, then roll and crimp ends to prevent steam from escaping. Place packets on cookie sheet.
  • Bake 12 to 15 minutes or until fish flakes easily with a fork. Transfer packets to plates for serving.

2 bunches asparagus, trimmed, halved lengthwise if thick, divided
6 Tbsp. unsalted butter
7 Tbsp. extra-virgin olive oil, divided
1 tsp. Aleppo-style pepper
2 1/2 lb. skinless halibut, salmon, or arctic char fillet
Kosher salt, freshly ground pepper
2 bunches ramps or scallions, trimmed
3/4 cup Castelvetrano olives, pitted, torn
1/4 cup finely chopped chives
1/4 cup fresh lemon juice
2 Tbsp. coarsely chopped tarragon, plus leaves for serving
Boiled small waxy potatoes and lemon wedges (for serving)

Steps:

  • Preheat oven to 325°F. Thinly slice one-quarter of asparagus into coins and place in a medium bowl; set aside.
  • Heat butter and 2 Tbsp. oil in a small saucepan over medium. As soon as butter is melted, add Aleppo-style pepper and remove from heat.
  • Season fish with salt and black pepper on both sides and place on a rimmed baking sheet. Scatter ramps and remaining asparagus around fish; season with salt and black pepper. Pour butter mixture over fish and vegetables. Give vegetables a toss to evenly coat. Roast, undisturbed, until fish is just opaque in the center and asparagus is bright green and tender, 15-25 minutes, depending on the thickness of your fillets.
  • Toss olives, chives, lemon juice, 2 Tbsp. tarragon, and remaining 5 Tbsp. oil with reserved asparagus; season with salt and black pepper.
  • Transfer fish to a platter; top with ramps and asparagus. Spoon some olive mixture over, then scatter tarragon leaves over. Serve with potatoes, lemon wedges, and remaining olive mixture alongside.

24 ounces halibut fillets
4 tablespoons olive oil, divided
2 large shallots, chopped
1/2 cup flour
1/2 teaspoon crushed red pepper flakes
5 plum tomatoes (seeded and chopped)
1/2 cup kalamata olive (pitted and chopped)
1/2 cup fresh basil, divided
1 tablespoon capers (I use more)
1 (6 ounce) can clams (with juice!, can use clam juice only if you prefer)
1/4 cup dry white wine

Steps:

  • Season fish with salt and pepper and dredge in flour.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add fish and saute' until lightly browned and opaque in the center (4 minutes per side) and then transfer to platter.
  • Heat the remaining olive oil in the same skillet and add shallots and crused red pepper. Saute' for 1 minute.
  • Mix in the tomatoes, olives, 1/4 cup basil and capers. Add the clams and wine.
  • Boil until sauce thickens slightly, about 5 minutes).

1 1/2 lbs tomatoes, quartered
3 tablespoons katamata olives, pitted

Steps:

  • Preheat broilder.
  • In a broiler-safe pan cook garlic in the oil over medium heat for one minute. Stir in tomatoes, olives and marjoram. Simmer for 5 minutes or until tomatoes have wilted a bit.
  • Add fish to pan, skin side down and cook for 5 minutes.
  • Top fish with crumbs and broil until crumbs are golden and fish is done (2 minutes).

When I was first dating my husband, we went to a small restaurant in Moss Landing and I had this dish. The sweet tomatoes, sour lemon and salty olives and capers are wonderful with the halibut. The chef was kind enough to list the ingredients for me. What I didn't remember exact amounts for, I improvised and it's close enough for me to what I had that day! If you can't get good cherry tomatoes, use any tomato chopped small. I've also subbed half the olive oil for stock when I'm feeling dietetic and that's good too. Not AS good, maybe, but good!

1/3 cup fresh lemon juice
2 teaspoons Dijon mustard
1/2 cup olive oil
1 cup cherry tomatoes, quartered
1/2 cup kalamata olive, pitted, chopped
2 tablespoons capers, rinsed, drained
2 tablespoons flat leaf parsley, chopped
2 lbs halibut steaks (for four pieces) or 2 lbs halibut fillets (for four pieces)

Steps:

  • Preheat oven to 400.
  • Mix lemon and mustard blend in oil 'til emulsified (I love my immersion blender!). Stir in tomatoes, olives, capers, salt & pepper.
  • Put the fish in a baking dish just large enough to hold them in one layer and pour the tomato mixture over it.
  • Cook the fish in middle of oven until just cooked through--depending on the thickness of your fish, it can vary from 10-20 minutes.
  • Stir in parsley, and serve fish with the sauce. Freshly ground black pepper is great, but the capers and olives usually have enough salt to carry the dish.
  • Excellent on angel hair pasta!

1 1/3 lbs ripe plum tomatoes
2 cloves garlic, peeled and smashed
1/3 cup white wine
1-2 Tbsp tomato paste (the kind in the tube is handy)
salt and pepper to taste
1 1/2 lb Norwegian or Pacific halibut fillet
2 bell peppers, seeded and sliced (I used 1/2 of 4 different color peppers)
handful of olives, I used Castelvetrano
2 Tbsp capers, drained
1 tsp fennel seeds
1 Meyer lemon, cut in wedges
1 Tbsp butter
handful fresh chopped parsley
very thinly sliced red onion slivers
olive oil

Steps:

  • Preheat oven to 350F
  • Rinse and chop the tomatoes into large chunks. Put them into a food processor with the garlic, and pulse/process them until pureed, but they don't have to be super smooth, some texture is good.
  • Put the tomatoes in a skillet and bring up to a boil. Turn down the heat to medium and add the wine and paste. Let it cook for about 15 minutes at a gentle bubble, so it can thicken. Taste and season well with salt and pepper.
  • Pour the sauce into the bottom of your baking pan. Top with the fish. Add the sliced peppers, olives, capers, fennel seeds and lemon wedges around the fish and nestle everything into the sauce.
  • Dot the fish with butter and loosely cover with foil. Bake for 40 minutes, removing the foil half way through. Finish the dish under the broiler for some last minute color.
  • Top the fish with the parsley and onions, drizzle with good olive oil, shower with fresh cracked black pepper and serve.

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the oil to a large cast-iron skillet over medium heat, then line the bottom with the potato rounds. Season with salt and pepper, add enough water to cover and bring to a boil. Cook until softened, about 5 minutes. Once the potatoes are softened, drain off the excess water so there is only a small amount left on the bottom. Scatter the lemons, shallots, tomatoes, wine, olives, capers and thyme over the potatoes. Dot with the butter. Season the fish with salt and pepper on both sides and put on top of the potatoes.
  • Make a parchment lid for the skillet by cutting a piece of parchment paper that's larger than your skillet. Fold it in half, then fold it in half again in the other direction so you have creases on 2 sides of the paper. Starting with the folded tip, fold on the diagonal 3 times, like a fan, to form narrow triangles. Measure how large your parchment lid should be by placing the tip of the triangle above the center of the skillet and cutting it where it hits the edge of the skillet. Cut off the folded tip to make a small hole in the center. Open up the parchment and set aside.
  • Open the parchment lid and place it over the skillet. Transfer the skillet to the oven and bake until the potatoes are soft and the halibut is fully cooked and no longer translucent, 15 to 20 minutes.
  • Remove the parchment lid. Serve, drizzled with some of the sauce from the skillet and some oil, then sprinkle with the parsley.
