My husband says these onion rings are the best he's ever eaten. The cornmeal and pecans give them a special crunch.

2 pounds onions
2 eggs
1 cup buttermilk
2 cups all-purpose flour
1 cup cornmeal
1/2 cup chopped pecans
1 to 1-1/2 teaspoons salt
1/2 teaspoon pepper
Oil for deep-fat frying

Steps:

  • Cut onions into 1/2-in. slices; separate into rings. In a shallow bowl, whisk egg and buttermilk until blended. In another shallow bowl, combine the flour, cornmeal, pecans, salt and pepper. Dip onion rings in egg mixture, then coat with flour mixture., In an electric skillet or deep-fat fryer heat 1 in. of oil to 375°. Fry onion rings, a few at a time, for 1 to 1-1/2 minutes on each side or until golden brown. Drain on paper towels.

2 large yellow or sweet onions
2 cups buttermilk
1 1/2 cups all-purpose flour
1/4 cup yellow cornmeal
1 quart frying oil

Steps:

  • Peel the onions, slice them into rings. The ring should be about 1/2 inch thick. No more than 3/4 inch.
  • Add buttermilk, salt, and pepper to a vessel large enough for the onions to fit in.
  • Add the onions and allow at least 15 minutes for them to soak.
  • Heat up a dutch oven or large wide pot to 350 degree. Keep track of temperature with a candy/fry thermometer that is attached to the side of the pot.
  • You are going to work in bathes here, put no more than a few onion rings in at a time, so you don't overcrowd them or reduce the temperature of the oil too much. You can place the finished rings in a oven set to it's lowest temperature to keep warm.
  • Remove one ring from the buttermilk. Allow a moment to drip. Then dredge into the flour. Flip over to cover both sides, then into the oil.
  • Fry each ring for about 2 minutes or until golden brown. Flip half way through.
  • Season with salt immediately when out of the oil. Place on a sheet in the oven to keep warm.
  • Repeat until all the rings are done. Serve hot.

2 teaspoons smoked paprika
4 teaspoons kosher salt
2 cups buttermilk
4 eggs
3 cups panko breadcrumbs
4 tablespoons olive oil
2 large yellow sweet onions, such as Maui, sliced 1/4-to-1/2-inch thick

Steps:

  • Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
  • In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
  • In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
  • Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
  • Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

Steps:

  • Preheat the oven to 250 degrees.

  • Combine the flour, cornmeal, baking powder, Old Bay, salt and pepper in a shallow baking dish.
  • Peel and cut the onions into 1/4-inch-thick slices.

  • Dredge the rings in the flour mixture, shake off the excess.
  • Meanwhile, heat the oil to 400 degrees over medium-high heat in a large heavy pan.
  • Add the onions to form a single layer on the oil's surface and cook until golden brown, no more than 3 minutes.
  • Using tongs, transfer the onions to the paper towel-lined plate.
  • Let stand 2 minutes to drain, then carefully transfer to the rack in the warm oven.
  • Repeat till all are fried.
  • Season with salt!
  • Serve!

3 medium onions
1/2 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
shake paprika
shake seasoning salt

Steps:

  • Mix flour, baking powder, paprika, seasoning salt and water. Stir until smooth.
  • Slice onions 1/8-1/4" inch thick and seperate into rings.
  • Drop onions into batter in bowl and stir gently with a spoon. This saves time, over dipping each ring separately into batter. Make sure all onion rings are coated with batter.
  • Using a fork, drop one onion ring into fat to test temperature. Your onion ring should not cook too quickly or turn dark. If necessary, reduce temperature. You want your fried onion rings to puff up and turn golden brown, not overcook. If they over cook they will taste bitter.
  • When fat is ready, gently drop onion rings into pot or place in fryer basket and lower into fryer.
  • When onions rings are golden, using a slotted spoon lift into a metal strainer to drain. If using a fryer, simply lift the basket and allow your onion rings to drain.

2 cups milk

Steps:

  • Line 2 baking sheets with waxed paper; set aside. Line 2 additional baking sheets or 1 tray with paper towels; set aside.
