SLOW COOKER SWEET POTATO CASSEROLE WITH PECAN TOPPING
My niece is allergic to cinnamon, so I came up with this variation of a classic sweet potato casserole with pecans recipe. This recipe is for a 3-quart slow cooker, but it can be easily doubled for a 6-quart slow cooker. I prefer to use fresh mashed sweet potatoes as it makes the recipe less sweet, but canned will also work.

- Lightly grease a 3-quart slow cooker with cooking spray.
- Combine potatoes, white sugar, 1/3 cup butter, 3 tablespoons brown sugar, eggs, vanilla extract, nutmeg, allspice, ginger, and cardamom in a large bowl. Beat using an electric mixer at medium speed until smooth. Add whipping cream and stir well. Pour into the prepared slow cooker.
- Combine pecans, 3/4 cup brown sugar, flour, and 2 tablespoons butter in a small bowl. Sprinkle over sweet potato mixture.
- Cover and cook on High, 3 to 4 hours.

SLOW COOKER SWEET POTATO CASSEROLE WITH PECANS
Steps:
- Wash the sweet potatoes and peel them. Remove any dark spots as these will turn black when cooked. Dice them.
- Throw them into slow cooker and pour ¾ cup of water over. Close the lid and cook them on HIGH for 3 hours or until the sweet potatoes are cooked through. I recommend mixing them 1 or 2 times while cooking.
- Meanwhile: In a food processor, combine the oats and pecans. Process until coarse-like texture. Transfer this mixture into a bowl and add the rest of the ingredients and mix well. Set aside for later.
- When the sweet potatoes are ready, drain some of the excess water (if you feel there is too much) and puree them using a potato masher or electric mixer/blender. Smoothen them and top with pecan mixture.
- Cover with lid and cook on HIGH for 30-60 minutes (the time can be adjusted to your needs. Taste it after 30 minutes to see, if the topping is hot enough. If not, leave for a further 30 minutes).
- Serve warm.

ROASTED SWEET POTATOES WITH HONEY AND PECANS
Glaze sweet potatoes with honey, butter, cinnamon and ginger; add texture with crunchy pecans.

- Preheat the oven to 400 degrees F. Pierce the sweet potatoes all over with a fork and microwave on high until cooked through, 8 to 12 minutes, turning them over halfway through the cooking time. Start checking for doneness during the last 4 minutes of cooking time. They should feel soft when you squeeze them. Cut into thick rounds and arrange decoratively in a small or medium baking dish.
- Stir together the melted butter, honey, cinnamon, allspice, ginger and 1/4 teaspoon salt until smooth. Pour over the potatoes and toss to coat. Roast until the honey butter is bubbly and the potatoes are glazed, about 20 minutes. Sprinkle with a pinch of salt and top with pecans.

- Toss the sweet potatoes with the cornstarch in a bowl to coat well. Add the mixture to a slow cooker and dot with the butter. Sprinkle over the brown sugar, pumpkin pie spice and cayenne. Pour in the vanilla, orange juice and 1/4 cup water. Season with salt. Place the lid on the slow cooker and cook on low, stirring once or twice, until the potatoes are tender, about 3 hours.
- Toss the potatoes once more and transfer to a serving dish. Sprinkle with the walnuts and parsley and serve.
SLOW COOKER MASHED SWEET POTATOES WITH SPICY PECAN TOPPING

- Place sweet potato chunks into a 4- or 5-quart slow cooker. Stir orange juice, brown sugar, 2 tablespoons melted butter, orange zest, and ginger in a bowl. Pour over the sweet potatoes.
- Cover and cook on Low until sweet potatoes are very tender, 4 to 5 hours. Stir every hour. Cooking time will vary with the size of the chunks and the age of the sweet potatoes.
- Meanwhile, line a rimmed baking sheet with parchment paper.
- Combine candied ginger, salt, cayenne pepper, and cinnamon in a small bowl. Set spice mixture aside.
- Heat pecans in a nonstick pan until lightly toasted, stirring or shaking the pan constantly, 4 to 5 minutes. Add 1 tablespoon butter and stir until melted. Mix in spice mixture and stir until pecans are coated. Sprinkle with brown sugar and water and mix to coat all the pecans. Cook until liquid evaporates, stirring constantly, about 2 more minutes.
- Spread out pecans on the prepared baking sheet in a single layer and allow to cool.
- Use a hand mixer or potato masher to mash the sweet potatoes with the remaining 2 tablespoons butter, cream, and salt. Lightly chop the cooled pecans and sprinkle on top. Garnish with fresh mint.
