Steps:
- Combine all ingredients except the pecans in a heavy saucepan. Over medium heat stir mixture until it comes to a boil. Turn heat down to medium-low and continue to stir. Spoon mixture up on sides of pan to melt any sugar that hasn't melted.
- Cook until mixture reaches 238 to 241 degrees F on a candy thermometer or soft ball stage. Stir in the pecans. Remove from heat. Stir until the mixture begins to thicken and becomes creamy and cloudy. Drop onto parchment paper, buttered pan or buttered marble slab, using a spoon or ice cream scoop. Let cool.

SOUR CREAM GLAZED PECANS
My GrannyN use to fix this alot when I was growing up. We had two pecan trees in the yard, and had loads of peacans every year. I've never timed myself making this. It takes the candy about an hour to reach soft ball stage.

Steps:
- Mix together sugar and sour cream in a heavy 2 1/2 quart saucepan.
- Cook over a low heat, stirring constantly, until the mixture reaches 240 degrees (or soft ball stage).
- Remove from heat and stir in vanilla.
- Continue to stir until the mixture begins to cool.
- Add pecans, making sure all of them are coated.
- Place pecans individually on wax paper to cool.
EASY CREAMY PECAN PRALINES
Steps:
- Gather the ingredients.
- Lay an 18-inch sheet of waxed paper or parchment paper on the countertop.
- Cut the butter into small pieces. Place the pieces of butter on a plate and put the plate in the freezer while you heat the ingredients.
- In a heavy medium saucepan, add the granulated sugar, brown sugar, and evaporated milk.
- Place the pan over medium heat, whisk to blend, and cook until the mixture reaches the soft-ball stage or 235 F when measured with a candy thermometer.
- Immediately remove the pan from the burner and stir in the frozen butter with a wooden spoon.
- Add the pecans and vanilla and continue stirring with a wooden spoon until the mixture is no longer shiny and thickens but is not too stiff. The candy should spread slightly when you spoon it onto the paper.
- Use a tablespoon to spoon mounds of the candy onto the waxed paper or parchment, making sure that there are pecans in each praline.
- Let the candy stand at room temperature until firm, about 30 minutes.

- Preheat oven to 350°F. Place pecans in baking dish and toast 10 minutes. Transfer nuts to a food processor and grind to a paste. Add remaining ingredients and process until smooth and creamy.

PECAN CREAM MINTS
Fancy mints. These are no cook; the cook time is time to harden. Liquid egg whites from a carton work great for splitting the recipe for two different flavor mints from the same batch. I put 1 1/2 tablespoons liquid egg whites and 1/4 teaspoon extract in each bowl with half of the cream and half of the sugar.

Steps:
- Combine egg white, mint, and cream, and gradually add sugar until you can roll the mixture out on wax paper; roll to about the size of a pencil.
- Slice your roll and press a pecan half into each slice.
- Let sit until they are firm and dry on the outside (about a day).

Steps:
- -Pecan Pralines-.
- Melt butter over medium heat in a saucepan.
- Add sugar to the saucepan and stir frequently (do NOT use a plastic spoon, use a wire whisk). Stir until completely melted and resembles an amber color.
- Add in pecans and continue to stir mixture until the sugar is hot and bubbly (do NOT use a whisk for this part, use a metal spoon).
- On parchment paper, spread out the pecan mixture and let cool completely.
- Break pecans into pieces and place into a food processor. Process until it resembles brown sugar (slightly moist, but not pasty).
- -Butter Cream Icing-.
- Add a dash of salt to the egg whites and beat for 30 seconds.
- Place the whites over a double broiler and add sugar 1/2 cup at a time.
- Gently whip the mixture with a whisk until the egg whites no longer feel grainy when rubbed between your fingertips.
- Whip mixture on medium high until bowl is cool to the touch.
- Cut up the cold, but not hard, butter, and slowly add it to the meringue.
- Mix butter into meringue on medium-high with cake mixer. Keep mixing until you hear a "slapping" sound. This is when the butter cream is ready.
- Add vanilla.

- Place a medium saucepan with a candy thermometer over medium heat. Make sure the thermometer is not touching the bottom of the pan. Add everything except the pecans and vanilla extract. Bring the mixture to a boil, stirring constantly. When the mixture reaches 238 to 240 degrees, or the "soft ball" stage, remove the pan from the heat.
- Add in the pecans and vanilla, stirring for about a minute or until the mixture cools just enough to spoon onto the prepared pans. Working quickly, using a tablespoon to generously spoon pralines onto the prepared pans. Ideally, the pecans will be piled on top of one another and the sugar will spread slightly. (If you allow your mixture to cool too much before portioning out, your candies will not spread as much, if at all, though they will still taste the same - they just might not look as pretty.)
- Allow candies to cool and harden at room temperature for at least 30 minutes before removing from pan. Pralines will keep, in an airtight container, for up to a week.
