Steps:
- In a large bowl, dissolve yeast in warm water. Using a rubber spatula, stir in 3-1/2 cups flour and salt to form a soft, sticky dough. Do not knead. Cover and let rise at room temperature 1 hour., Stir down dough (dough will be sticky). Turn onto a floured surface; with floured hands pat into a 9-in. square. Fold square into thirds, forming a 9x3-in. rectangle. Fold rectangle into thirds, forming a 3-in. square. Place in a large greased bowl, turning once to grease the top. Cover and let rise at room temperature until almost doubled, about 1 hour., Punch down dough and repeat folding process. Return dough to bowl; refrigerate, covered, overnight., Grease the bottom of a disposable foil roasting pan with sides at least 4 in. high; dust pan with cornmeal. Turn dough onto a floured surface. Knead gently 6-8 times; shape into a 6-in. round loaf. Place into prepared pan; dust top with remaining 1 tablespoon flour. Cover pan and let rise at room temperature until dough expands to a 7-1/2-in. loaf, about 1-1/4 hours. , Preheat oven to 500°. Using a sharp knife, make a slash (1/4 in. deep) across top of loaf. Cover pan tightly with foil. Bake on lowest oven rack 25 minutes., Reduce oven setting to 450°. Remove foil; bake bread until deep golden brown, 25-30 minutes. Remove loaf to a wire rack to cool.

NO-KNEAD CRUSTY ARTISAN BREAD

Steps:
- In a large bowl, stir together the flour, salt and yeast. Stir in water using a wooden spoon until the mixture forms a shaggy but cohesive dough. Do not over-work the dough. The less you "work" it, the more soft, fluffy air pockets will form.
- Cover bowl tightly with plastic wrap. Let dough sit at room temperature for 8-24 hours*. Dough will bubble up and rise.
- After dough is ready, preheat oven to 450 degrees F. Place your Dutch oven, uncovered, into the preheated oven for 30 minutes.
- While your Dutch oven preheats, turn dough onto a well-floured surface. With floured hands, form the dough into a ball. Cover dough loosely with plastic wrap and let rest.
- After the 30 minutes are up, carefully remove Dutch oven. With floured hands, place the bread dough into it. (You can put a piece of parchment under the dough if your Dutch oven isn't enamel coated.)
- Replace cover and bake for 30 minutes covered. Carefully remove cover and bake for 7-15 minutes* more, uncovered.
- Carefully remove bread to a cutting board and slice with a bread knife.
- Enjoy!
- Uncovered baking time depends on your oven. In my oven, the bread only needs 7 minutes uncovered until crusty and golden brown, but this can vary. Just keep an eye on it!
- Preheating your Dutch oven to 450 degrees F will not damage it, or the knob on top.
- I've let this dough rise anywhere between 8-24 hours and it has baked up beautifully. Just make sure it has risen and appears to "bubble" to the surface.
- There's no need to grease the Dutch oven/baking dish/pot
- . My bread has never stuck to the pot. If you are concerned though, put a piece of parchment paper under your dough before placing into your pot.
- I do not recommend using whole wheat flour or white whole wheat flour in this recipe. The resulting bread will be very dense, and not as fluffy and delicious.
- I used a 5.5 quart enameled cast iron Le Creuset pot, but you can use any large oven-safe dish and cover. All of these also work: a baking dish covered with aluminum foil, crockpot insert, stainless steel pot with a lid, pizza stone with an oven-safe bowl to cover the bread, and old cast iron Dutch oven.
- Add any mix-ins you like - herbs, spices, dried fruit, chopped nuts and cheese all work well. I recommend adding them into the initial flour-yeast mixture to avoid over-working the mix-ins into the dough. The less you "work" it, the more you're encouraging soft, fluffy air pockets to form!

Steps:
- In a large bowl put the hot water and yeast. Stir to mix and let set for 5 minutes.
- Add flour one cup at a time along with the salt.
- Stir to combine. Dough will be shaggy and messy.
- Cover with plastic wrap and let set for 12 - 18 hours.
- DO NOT REFRIGERATE.
- To bake: Preheat oven to 450 degrees.

- Right after the pan is placed in the oven, dump your dough onto a heavily floured surface.
- Flour your hands and shape the dough into a ball.
- Cover with plastic wrap from your bowl and let rest for the 30 minutes it takes to heat the pot.
- After 30 minutes, remove the pot from the oven and carefully place the dough inside. Remember it is VERY hot.
- Cover and bake for 25 minutes.
- Remove lid and bake for 10 minutes more.
- After removing from oven lift bread out of the pan.
- Place on rack and cool completely.
- Don't forget to pat yourself on the back for producing a perfect loaf of bread!

- After 1 hour preheat your oven to 400 F and line a round baking dish* with parchment paper
- Rub some flour between your hands and transfer your dough to the round baking dish. Shake the dish so the dough settles into the space of the dish evenly, or pat it gently with your hands to fill it
- Let the dough rest for another 30 minutes
- Score the dough with a knife (criss-cross shape in center) and sprinkle it with your toppings (rolled oats, salt, etc.)
- Bake for 35-40 minutes or until the crust is a deep golden brown

Steps:
- Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
- In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
- Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
- Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
- Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

Steps:
- Preheat the oven to 375 degrees F.
- Add the flour, salt, and powdered sugar to a food processor and pulse to combine. Add in the vanilla, the butter and the 1 teaspoon of water. Pulse together just until a dough is formed. Put the dough on a sheet of plastic wrap and roll into a log, about 2 1/2 inches in diameter and 5 inches long. Tightly twist each end of the wrap in opposite directions. Chill the dough in the refrigerator for at least 30 minutes.
- Slice the log into 1/3-inch thick disks. Arrange on nonstick cookie sheets, parchment lined or silpat lined baking sheets, 2 inches apart. Bake until the edges are just light brown, about 12 to 14 minutes, rotating the pans half way through the baking process. Remove from the oven and let cool on the cookie sheets for 5 minutes. Transfer to wire racks and cool until room temperature. Enjoy!
- Variations:
- Pulse together the tea with the flour and salt in a food processor just until the tea is in small pieces evenly distributed throughout the flour. Then add the powdered sugar, vanilla, the butter and the 1 teaspoon of water. Continue as instructed above.
- Pulse the toasted and chopped pecans into the dough and then shape into a flattened round disk. Wrap in plastic wrap and refrigerate for 1 hour. On a flour dusted surface, roll the dough out to approximately 1/3-inch thick. (If the dough is too hard to roll or begins to crack, let it rest at room temperature for a few minutes until pliable.) With a sharp knife, cut the dough into rectangle shapes about 1 by 3-inches. Arrange on the prepared baking sheets and follow the cooking instructions as above. Dust slightly cooled cookies with powdered sugar through a fine mesh strainer.

- In a large mixing bowl, stir together the flour, salt, and dry yeast until well combined. (If you are measuring with cups instead of by weight, make sure you lightly spoon the flour into your measuring cups without packing it down at all and then level it off. This will insure you won't end up with too much flour in your dough.)
- Add the warm water into the mixing bowl and stir until all of the ingredients come together into a thick dough that is shaggy and sticky. There should be no pockets of dry flour left, but it will be quite lumpy.
- Cover the bowl with a towel or loose plastic wrap and let it sit in a warm spot in the kitchen to rise until double in size. This will take about 45 minutes if you used quick rise yeast and 75 minutes if you used active dry yeast.
- Generously sprinkle flour over top of risen dough and cover hands with flour. Gently pull the dough away from the sides of the bowl and gather it all up in your hands. Start pulling down on all of the sides of the dough to form into a smooth ball (you can watch the video tutorial in the post to see a demonstration of this). Transfer to dough onto a piece of parchment paper if you will be baking it in a dutch oven or alternatively you can place it right into a greased cast iron skillet or a parchment lined baking sheet.

- Whisk the flour, salt and yeast in a medium bowl. While stirring with a wooded spoon, gradually add the water, stir until incorporated. Mix the dough gently and form into a rough ball.
- Transfer to a large clean (ungreased) bowl. Cover with plastic wrap and let dough rise in a draft-free area at room temperature until surface of dough is covered with tiny bubbles and the dough has more than doubled in size (This usually takes about 18 hours or so, however, it still turns out great with just 12 hours of rise time).
- When the dough is ready, place a Dutch oven into the oven and turn it on to 450 degrees. Allow it to heat in the oven for 30 minutes.
- Meanwhile, transfer the dough to a well-floured surface. Take the corners and fold under, creating a ball. Place on a large square of parchment paper (big enough to cover the bottom of your Dutch oven). Dust dough with flour, cover it with plastic wrap and allow it to rest for 15 minutes. Using a sharp knife, at a 90 degree angle, score an X in the top of the loaf. Each score mark should be about 2 1/2 inches long and about 1/4" deep. Using a mister, spray bottle, clean toothbrush or pastry brush, lightly mist (or brush) the top of the bread with water.

9 MAIN INGREDIENTS USED IN MAKING BREAD - YOUR ARTICLE LIBRARY
From yourarticlelibrary.com
Estimated Reading Time 7 mins
- Flour: It is the main ingredient used in making breads. Usually strong flours are used in bread making. Wholewheat flours have lesser concentration of gluten as the bran content is increased.
- Water: ADVERTISEMENTS: Water is the most commonly used liquid in bread making. It moistens the flour and helps in forming the dough. It also aids in the baking process.
- Yeast: Yeast is a single cell microorganism which causes the leavening in the dough. It converts the natural sugar in the flour into tiny bubbles of carbon dioxide that are trapped in the dough.
- Salt: ADVERTISEMENTS: The main function of salt is to control the action of yeast as it slows down the fermentation process. It should be mixed with flour for best results.
- Sugar: The main function of sugar is to act as food for yeast. It helps in developing flavour and colour. Sugar is the primary food that the yeast feeds on to produce alcohol and carbon dioxide.
- Milk: It makes the bread whiter and softer, and provides moisture and a distinct flavour. Milk also has a physical effect on bread in the form of the tightening effect of gluten by the action of ‘casein’ or the milk protein.
- Egg: Eggs are used for richness and to give lightness and colour. Eggs are again rich in protein and hence will tighten the gluten strands, but this effect gets balanced, as the fat in a yolk helps to soften the gluten as well.
- Oil/Fat: It is used to provide flavour and softness to the texture. Different kinds of fats are used for different breads such as olive oil for focacia (Italian bread).
- Bread Improvers: Flour is of variable quality and hence it becomes necessary at times to add bread improvers to the dough to bring the final product to a set standard.

- In a medium bowl, stir together all four ingredients. Mixture will look shaggy and a bit dry. If it seems wet, add a little more flour.
- Cover bowl with plastic wrap and leave at room temperature to rest for anywhere between 8 and 24 hours. Dough will get much wetter and will be full of small bubbles.
- Generously flour a cutting board. Gently tip the dough onto the cutting board, using a spatula to scrape it all out of the bowl.
- Dough will be very soft and wet. Using floured hands, quickly grab the top and bottom edges of the dough and pinch them together in the middle, forming a loaf shape. You can see how to do this in the instructional video.
