Steps:
- Wasabi Ginger Sauce: in a separate bowl, mix together the fresh jalapenos, wasabi, horseradish, and powdered ginger.
- Use a small amount of water if necessary.
- This will make your"Wasabi Ginger" sauce.
- Take 3 tablespoons of this sauce.
- Cook Ziti Al dente, drain and Reserve.
- Drain peppers place in food processor until almost liquid.
- Pour into large bowl.
- Add Wasabi Ginger Sauce and Olives.
- Slowly mix in Olive oil.
- Now add pasta and Cheese mix well and Serve.
- Enjoy.

- Mix the peas with the potatoes, salami, cheese and gherkins.
- Toss with the French dressing.
- Pile on a platter lined with salad greens.
- Decorate with the anchovy fillets, eggs and tomato slices.
GYPSY PEPPER & ONION SALAD
Steps:
- Sweet, thin-fleshed peppers, such as Gypsy, Lipstick, and other mild peppers, are delicious sliced thin and dressed as a raw salad. Choose a mixture of yellow, orange, and red peppers. Cut them in half lengthwise and remove the stems, membranes, and seeds. Cut the peppers lengthwise into very thin slices. Peel a red onion, cut in half lengthwise, and slice very thin (there should be about half as many onions as peppers). Combine the peppers and onion, and dress with salt, a splash of red wine vinegar, and olive oil. Peel and finely chop a garlic clove, or pound it to a paste in a mortar, and add it to the peppers and onion. Let the salad marinate a bit to soften, add some chopped herbs, if you like, and serve.
GYPSY SOUP
This is a total vegetarian soup - you can add subtract to the ingredients and I can't imagine you can change the flavors to much - enjoy with a nice big slice of bread - or a simple salad.

Steps:
- Place the barley into small pot along with 1 1/2 of water and 1/2 tsp of the salt.
- Bring to a boil and reduce over low heat for approx 40 minutes or until most of the water is absorbed - set aside.
- Heat the olive oil over medium heat, add onion, garlic and cook for approx 3 minutes sprinkle with flour and continue to cook for approx 6 minutes until you get a nice tan color add 4 cups of water, wine, soy sauce and add all your spices - add the remainder of all the vegetables and cook over low heat for 45 - 60 minutes adding chicken stock occasionally so the soup doesn't become to thick.

- Start by first removing the thick skin from your salt pork, then place in a small pot, cover with cold water and bring to a low boil.
- Reduce heat and maintain a low simmer until a froth begins to form on the top. Gently remove the foam with a slotted spoon and rinse to remove the film in cold water. Continue to simmer and skim for about twenty minutes. Then salt pork from water, reserve to cool and discard water etc.
- While salt pork cools, make your vinaigrette: In a medium bowl add diced shallots, red wine vinegar, Dijon mustard, salt, and pepper. Add about ¼ cup of your oil, and whisk lightly. Then continue whisking, while slowly drizzling the remaining oil into your base until creamy and well mixed.
- If you find it a bit thick add a little water, a teaspoon at a time, and whisk until you get the consistency you’re looking for. Pour into a glass jar or bottle, toss on the cap, and store in the fridge until needed.

- Cut mango, cucumber, green onions, red pepper, and snow peas into julienne. Reserve in large bowl.
- 2. Mince garlic, and ginger. In a small bowl or jar combine garlic, ginger, sesame oil, lime juice, fish sauce, sugar, rice vinegar, and chili flakes (if using) stir to combine and melt the sugar. Dress fruit and vegetables with a little over half the vinaigrette, toss and reserve cold.
- 3. While salad chills, boil a small pot of water. Drop deveined, cleaned, and peeled shrimp straight into boiling water and remove immediately from the heat. Wait one minute while shrimp colour to a bright, opaque pink. Drain shrimp. Immediately chill in ice water bath. Let shrimp stand in ice water for 3 – 5 minutes. Drain, dry, and add shrimp into a small bowl. Dress with two tablespoons vinaigrette, toss and reserve cold until serving (1 hour is good, but overnight it even better).
- . To serve: remove mango vegetable mix and shrimp from the fridge. Let stand at room temperature for about ten minutes. Drain extra vinaigrette, leaving about half in the bottom of the bowl. Toss salad with fresh herbs. I list the herbs in 1/4 cups, but the amount is personal, to your taste. Plate salad mix, heaping it high. Top with chilled marinated shrimp, finish with chopped peanuts or cashews. And… enjoy!
